    ~R&R~ SUSAN'S SPINACH SCRAMBLE- Where are you Jillie??

    Susan's Spinach Scramble

     

    I really enjoy Crustless Spinach Quiche, but on many Mornings my family is too Hungry or we are in too much of a Hurry to wait for it To Bake. I created this dish to Include the Ingredients we like minus the constraing time Factor. This is now a Breakfast Favorite in our Home. ~Susan

     

     

    SERVINGS: 1

    CATEGORY: Breakfast/Brunch

    METHOD: Stove Top

    TIME: Prep: 10 min. Cook: 5 min.

    Ingredients:

    • 1 strip bacon
    • 1 Rounded TBsp Flour
    • 1/4 cup milk
    • 3/4 cup fresh washed Spinach
    • 2 large eggs
    • 1/4 cup Grated Cheddar cheese
    • 1 TBsp Parmesan Cheese.
    • salt to Taste.

    Directions:

    Fry the diced Bacon in a small frying pan. Without draining add the Spinach stir until wilted.(1-2 minutes)
       
       
       Whisk 1 Rounded Tbsp Flour into 1/4 cup milk until smooth. Set aside
       
       
       Add 2 Beaten eggs to the spinach bacon mixture and scramble until still slightly runny . Pour the Flour milk mixture into the scramble until you reach the creamy consistency you prefer.(You may not need all the milk mixture.
       
       Top with 1/4 cup Shredded Cheddar and 1 Tbsp grated Parmesan cheese and fold this into the skillet just until the cheeses melt and blend (less than 1 Minute)
       Salt to taste.
       
       
       Turn eggs unto a pretty plate and serve .
       
       1-2 servings Yield: serves 1

     

    This has been my Great Breakfast 3 days in a row while I tasted and Tweaked it.

    Gm Ms Linda- Happy TGIF.

    One morning I tried it with Medium Salsa . Another Morning with Corn Salsa- IMO Both were a great accompaniment to this Creamy dish.

    I hope someone checks this one out.

     

    It is incredibly quick to make and is  so very reminiscent of Crustless spinach Quiche.

     

    I added a little diced onion to brown with the bacon and that was tasty. I am thinking Red Peppers would be very pretty  and flavorful as well .

    Jillie- It is your fault I keep making this one . That Crustless Spinach quiche you posted is so good IMO.

    This opens up lots of great tweaking ideas.   I make these "scrambles" (or small pan omelets) with whatever I have in the vegetable crisper, e.g. mushrooms, spinach, red, green, and yellow peppers, onions - broccoli, zucchini - whatever - tastes great!

     

    Thanks for the "tweaks" and "trials" - and the post!
