    This is my Mom's favorite banana bread.


    Mom's BANANA NUT BREAD by dutchmom4mi

    1-3/4 cups flour
    1 teaspoon soda
    1/2 teaspoon salt
    1 cup chopped nuts (walnuts OR pecans)
    1/2 cup shortening
    3/4 cup sugar
    2 eggs
    1 cup mashed bananas (about 3 bananas)

    -- Preheat oven to 350 degrees. Grease a 8 1/2" x 4-1/2" x 2-1/2 loaf pan.
    -- Stir together: flour soda, salt, and nuts. Set aside.
    -- Blend shortening and sugar until creamy. Mix in eggs. Add mashed bananas and dry ingredients. Blend well.
    -- Bake at 350 degrees for 50 to 60 minutes, or until toothpick comes out clean.

    I don't think I've seen one with my mom's "secret ingredient" (orange juice). EVERY time I make this people ask for the recipe. Not that you can go wrong with any kind of banana bread! It is extremely moist and yummy! Kim

    MOM’S BANANA BREAD by casslepier

    1 cup sugar
    2 tbsp. liquid shortening
    1 egg
    1 tsp. vanilla
    1/2 tsp. salt
    2 cups flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 cup orange juice
    2 large bananas
    1/2 cup nuts (optional)

    Mash bananas with fork. Pour in all other ingredients and mix. Grease and flour pans. Bake at 325 degrees for one hour. Makes 1 standard size loaves.

    Brown Sugar-Cinnamon Sour Cream Banana Bread by DivaSharon

    Preheat oven to 325 degrees

    3 cups flour
    1 cup white sugar
    ½ cup light brown sugar
    1 tsp. cinnamon
    ¾ tsp. salt
    1 ½ tsp. baking powder
    1 ½ tsp. baking soda
    3 Tbsp. vegetable oil
    3 eggs
    2 tsp. vanilla
    ¾ cup orange juice
    4 HEAPING TBSP. (1/2 cup) sour cream
    3-4 very ripe bananas
    1 ½ cups chopped nuts (optional)

    Combine dry ingredients. In another bowl, combine beaten eggs, oil, vanilla, orange juice and sour cream. Make a well in center of dry ingredients and mix in liquid ingredients. In small bowl, mash bananas with fork. Continue with hand mixer until pureed and as smooth as possible. Add to batter. Stir in nuts, if desired.

    Grease two 9”x5” loaf pans with cooking spray. Divide batter evenly. Pans will be about ¾ full. Bake for 45-50 minutes, checking after 35 minutes with wooden pick. Bread is done when pick comes out slightly wet, not too dry! Do not overbake! Cool in pans for 15 minutes, remove to wire rack and continue to cool. Wrap in plastic when almost cool. Bread will be moister the next day and be shiny/sticky on top.

    This recipe is  a favorite wherever I bring it. I thought I posted it, but I can't find it. I'll post it again. My apologies if it is repeated.

     My Favorite Banana Bread

    Ingredients:

    • 2 eggs
    • ½ C vegetable oil
    • 4 bananas over ripe is the best flavor
    • 1 ½ C sugar
    • 1 ¾ C flour
    • 1 tsp. baking soda
    • ½ tsp. salt
    • ½ C chopped pecans
    • 1 10 oz. package of chocolate chips
    • Vanilla

    Directions:

    Pre heat oven to 325. Spray a 10 inch springform pan with a nonstick cooking spray. Cream bananas and sugar. Add vanilla. Add eggs. Add oil. Add flour, soda and salt. Add nuts and chips and pour into pan. Bake 1 hour and 20 minutes or until toothpick comes out clean. Yield: serves 12

    Notes: 

    You can omit the nuts and chocolate chips, but why?? I add at least 1 1/2 tsp. vanilla. That's why I don't put an amount. Put as much or little as you like.
