    Yes [Y] REC REV: Margarita Grilled Corn

    Be sure to put this on your summer menus! Yes It goes great with chicken, burgers or steak.

     I have now made this a few times and no matter how you grill it, steam it, or decide grilling is better...All I can say is that this is REALLY REALLY GOOD! Linda

    Margarita Grilled Corn
    Makes: 8 servings
    Prep: 25 min.
    Grill: 25 min.
    Ingredients
    8 ears fresh corn in husks
    4 tsp. finely shredded lime peel (peel from 2 to 3 limes)
    2 tsp. kosher salt or sea salt
    1/3 cup butter, melted
    1 tsp. chili powder
    Small Limes (optional)
    Directions
    1. Carefully peel back corn husks, but do not remove. Scrub ears with stiff brush to remove silks. Rinse ears. Pull husks back up around corn. Place in large pot; cover with water. Soak 2 to 4 hours; drain well. Peel back husks and pat corn dry with paper towels.
    2. For lime salt, in small bowl stir together lime peel and salt. Brush some of the butter on corn. Sprinkle lightly with lime salt and chili powder. Fold husks back around ears. Tie husk tops with strips of corn husk or 100% cotton kitchen string.
    3. For charcoal grill, grill corn on rack of uncovered grill directly over medium coals for 25 to 30 minutes or until tender, turning and rearranging occasionally. (For gas grill, preheat grill. Reduce heat to medium. Place corn on grill rack over heat. Cover; grill as above.)
    4. To serve, remove ties from corn; peel back husks. Pass remaining butter, lime salt, chili powder, and limes for squeezing.

    This sounds so good.  Grilled corn on the cob is the only way to go in my book.  Thanks for the recipe & picture.  Saving this one for sure.   Smile

    Good Morning, Ladies!

    This is just such a nice side for just about anything~

    Janie, we could use some of that sun, too. All we have is Storm everyday and some really strong winds and storms! It is sure getting old. I still have a flat of annuals to plant under the fountain~low ground and nothing but mud!

    I hear you missy~  Got 2 flats in yesterday and the ground is so wet I can't even get some high areas cut !~  Its very discouraging ~ Got a load of mulch yesterday so today we will be busy again ~ I love the yard work but,  Its  just not the same without some sunshine ~ Its damp and dreary ~

     

    This unseasonal weather seems  to  be all over the US ~ Just read Cheflys post and she is from WI and it's been  raining  there as well ~  Tongue Tied

     

    Going to get started on a Blueberrry Cream Cheese Coffe  Cake Real soon ~

    Next time I cook corn I'll try it this way, it sounds very good and different.

    It has been a very odd year for weather hasn't it.

    I didn't respond, but the fig toast recipe sounds great to me.
