We were talking about summer peaches in another post, so here's an old recipe that I used to enjoy, before I developed a peach allergy! Haven't made it in years & years, but I do remember that it was good.
PEACH (or NECTARINE) QUICK CAKE
1 and 1/2 cups Bisquick
2 Tbsp. sugar
1/2 cup milk
1 egg
1 tsp. grated lemon peel (or 1/2 tsp. lemon juice)
3 med. peaches or nectarines, pitted & sliced into 1/4" slices
2 Tbsp. melted butter
1/2 cup sugar
1/4 cup brown sugar
1/2 tsp. cinnamon
In mixing bowl, combine Bisquick, 2 Tbsp. sugar, milk, egg, and lemon peel (or lemon juice). Beat 30 seconds with mixer. Spread into a greased 9" x 9" pan.
Arrange peach/nectarine slices over batter. Drizzle with melted butter. Combine sugar, brown sugar, and cinnamon in as small bowl. Sprinkle mixture over fruit.
Bake at 400 degrees for 20 - 25 minutes. Cool in pan on rack.
I used to make this in a metal pan. I would watch that oven temp. if using a glass pan, and maybe lower it to 375 - 380.
