I am looking forward to this dip when we have family over on Sunday for a cookout. It is on the back of the Athenos Feta Cheese package. It is sooo good and easy. And made the day ahead it really soaks up the garlic and cheese flavor.
Hot Feta Artichoke Dip
1 14oz can artichoke hearts, drained and chopped (non marinated ones - just in water)
8 oz. crumbled Feta Cheese (I use store brand)
1 c. mayo (Hellman's of course)
1/2 c. shredded parmesan cheese (I use 4C brand in a jar)
1 2oz. jar diced pimentos, drained (I leave out - not a fan)
1-2 cloves garlic, minced
Mix all ingredients together - spoon into a 2 or 3 cup shallow baking dish or pie plate. Bake at 350º for 20 minutes or until lightly browned. I have microwaved this and it is just as good as heating up the oven to bake it. Serve with Tortilla chips.
