    Does anyone have a good recipe for banana bread?

    I have a friend that double-triple dog dared me to ask this question here.  How could I resist?

    Wish I could help, Chef, but I hate Banana Bread.

     

    Don't get me wrong...I adore Bananas.

    I think this is the best banana bread I ever made.Making it in a bundt cake pan gives a great crust and it taste more like a cake. I am reposting the recipe.

    Sugar-Cinnamon Sour Cream Banana Bread - Fabulous!
    I used 1 bundt pan at 350 and it took about

    1 1/2 hours, covered with foil to not over brown.Renate Brown Sugar-Cinnamo Sour Cream Banana Bread

    Preheat oven to 325 degrees

    3 cups flour
    1 cup white sugar
    ½ cup light brown sugar
    1 tsp. cinnamon
    ¾ tsp. salt
    1 ½ tsp. baking powder
    1 ½ tsp. baking soda
    3 Tbsp. vegetable oil
    3 eggs
    2 tsp. vanilla
    ¾ cup orange juice
    4 HEAPING TBSP. (1/2 cup) sour cream I
    3-4 very ripe bananas
    1 ½ cups chopped nuts (optional)

    Combine dry ingredients. In another bowl, combine
    beaten eggs, oil, vanilla, orange juice and sour
    cream. Make a well in center of dry ingredients
    and
    mix in liquid ingredients. In small bowl, mash
    bananas with fork. Continue with hand mixer until pureed and as smooth as possible. Add to batter. Stir in nuts, if desired.

    Grease two 9”x5” loaf pans with cooking spray.
    Divide batter evenly. Pans will be about ¾ full. Bake for 45-50 minutes, checking after 35 minutes with wooden pick. Bread is done when pick comes out slightly wet, not too dry! Do not overbake! Cool in pans for 15minutes.

    I have never made banana bread in a bundt pan but methinks that warrants a try!  Looks delish!  Thanks for the recipes.  I actually AM going to make banana bread in a day or two when the bananas get good and brown.  That is if my DS's girlfriend doesn't eat them first.  She LOVES bananas when they're really ripe.  I may have to hid them from her lol.

     When I make banana bread I like to coat the pan with sugar and sprinkle sugar on top of the batter in the pan. Gives it a nice crunch!

    This is my favorite recipe.  It's a bit different because of the oatmeal in the recipe.  I am an Episcopalian and I make this fairly often when it's my turn for coffee hour after church.  The name makes everyone laugh!

     

    Episcopalian Banana Bread

    1 1/2 C flour
    3 tsp baking powder
    1/3 C oil
    2 tsp cinnamon
    1/2 C sugar
    2 eggs, well beaten
    1/4 C brown sugar
    3/4 C oatmeal
    1/2 tsp baking soda
    1/4 C milk
    2 C mashed bananas

    Mix everything in one bowl and stir it up. Pour into a greased and floured bread pan. Bake at 350° for 50-60 minutes. Sometimes I will add 1/2 C nuts to the mixture.

    I got this recipe here several years ago, and I've never made any other kind since. The recipe came from Starshineeliz.

     

    Cream Cheese Banana Bread

    1 cup granulated sugar
    1 package (8 ounces) cream cheese, room temperature
    2 ripe bananas, mashed (about 1 cup mashed)
    2 eggs
    1 teaspoon vanilla extract
    2 cups biscuit mix (Bisquick, Pioneer, etc.)
    1/2 cup chopped pecans or walnuts

    In a large mixing bowl, cream sugar and cream cheese until light and fluffy. Beat in mashed bananas, the eggs, and vanilla. Stir in biscuit mix and pecans just until ingredients are moistened. Pour into a greased 9x5x3-inch loaf pan. Bake banana bread at 350° for 1 hour, or until wooden pick comes out clean when inserted in center. Cover with foil the last 15 minutes of baking if too brown. Cool banana bread before slicing

    NOTES from Dottie:
    (1) I used three mini pans and baking time was only 35 minutes. Moved bottom oven rack up one level.
    (2) Increased sugar to 1 1/4 cups.
    (3) Added 1 Tbsp. fresh orange zest.
    (4) Sprinkled each loaf with cinnamon/sugar mixture before baking.

     Thanks for the tip Adria!

     I think I need to go buy a lot more bananas!  I've got a lot of recipes to try.  My DD absolutely loves banana bread so I think I'll show these to her and let her pick which one she wants me to make.  I have a tried and true but I want to do something different this time.

    Well, that is old age for you. You can't hear sounds that everyone else can hear and you can hear sounds that no one else can hear. Not really a bit problem until you begin to hear voices that no one else hears.

    Things are much better than they were.  This has been the year of health problems but hopefully that is all behind me! I too enjoyed our meeting.  Next time I hope we have a little longer to linger over a cup of coffee or tea!

    I love this recipe; it's nice and spicy.  Cajunlady gave it to me a long time ago.

    Banana Nut Spice Bread

    6 very ripe bananas
    1/2 c. vegetable oil
    1 stick butter
    2 c. sugar
    4 eggs
    3 c. flour
    2 tsp. baking soda
    2 1/2 tsp. ground cinnamon
    1 1/2 tsp. cloves (optional)
    1/2 tsp salt
    1 1/2 c. raisins
    1 1/2 c. chopped pecans

    Mash bananas, pour oil over and let stand while mixing bread. Cream butter and sugar; add eggs, one at a time, beating well after each. Stir in banana mixture and mix well. Combine dry ingredients and add in. Stir in raisins and pecans and mix thoroughly. Spoon mixture into 3 greased loaf pans and bake at 250° F. for 1 1/2 hours. Can be glazed, but not needed.


    I used half brown sugar and half white sugar and 1 1/4 t. cloves, and 1/4 t. nutmeg. I also omitted the raisins and nuts, as my family doesn't like them in baked goods, usually. It's goot!!
