    Molasses Recipes

    Ginger and Molasses Cookies

    3/4 cup soft shortening
    1 cup brown sugar (packed)
    1 egg
    1/4 cup molasses
    2 1/4 cups all-purpose flour (if using self-rising flour, omit salt
    and reduce soda to 1 tsp.)
    2 tsp baking soda
    1/4 tsp salt
    1/2 tsp ground cloves
    1 tsp ground cinnamon
    1 tsp ground ginger
    granulated sugar

    Mix shortening, brown sugar, egg, and molasses thoroughly. Measure flour
    by dipping method or by sifting. Blend all dry ingredients; stir into
    molasses mixture. Chill.

    Heat oven to 375 F. Roll dough in 1 1/4 inch balls. Dip tops in sugar.
    Place balls, sugared side up, 3 inches apart on greased baking sheet. Sprinkle
    Each with 2 or 3 drops of water. Bake 10 to 12 minutes, or just until set but not hard.

    Makes 4 dozen.

    Molasses Barbecue Beans

    2 cups dried navy beans
    2 cloves garlic
    1 cup chopped onion
    1/2 cup barbecue sauce
    1/4 cup mustard
    1/4 cup molasses
    1 tablespoon cider vinegar
    salt and pepper to taste

    Soak the beans overnight. Combine the soaked beans with the garlic and onions in a large pot. Cover with water one inch above the beans and bring to a rapid boil. Lower the heat, cover and simmer for about 90 minutes until the beans are tender. Drain the beans and stir in the barbecue sauce, mustard, molasses, maple syrup and vinegar. Add salt and pepper to taste. Simmer the beans for about 30 minutes on the stove set at low heat. Serve hot.

    Magnificent Molasses Taffy

    This is a very fun thing to make with a bunch of friends. Hold a taffy pull and call all your friends over!

    Ingredients:

    1 cups sugar

    3 TB margarine
    1/4 tsp salt
    1/2 cup molasses (honey can be used instead for honey taffy)
    1/2 cup water
    2 tsp plain vinegar
    Directions:

    Combine all ingredients in a large, heavy saucepan. Heat, stirring constantly, until sugar dissolves, then cook rapidly, without stirring, till syrup forms a hard ball in ice water. Remove from heat. Pour onto large buttered platter and cool until easy to handle. Immediately after emptying pan, fill with HOT tap water and allow to sit until taffy dissolves. Otherwise you will NEVER get it off. Not in a million years. Butter hands, pick up the candy one half at a time, and pull back and forth until the taffy is golden and holds its shape. (While working one half, place remaining taffy in a 200-degree oven to keep soft). Twist each half into a rope of 1" in diameter. Snip ropes into pieces 1" in length with buttered kitchen scissors. Let stand on wax paper until firm, then wrap pieces with wax paper or plastic wrap.

    WARNING: If your fillings are loose or your jaws are weak, taffy is not for you.

    Molasses Cookies

    1 cup packed brown sugar
    1/2 cup butter
    1/4 cup shortening
    1/4 cup molasses
    1 egg
    2 cups flour
    2 teas.baking soda1 teas.cinnamon
    1 teas.ground ginger
    1/2 teas.cloves
    1/4 teas.salt
    sugar to roll the cookies in

    Mix brown sugar,butter,shortening,molasses and egg in a bowl.Stir in remaining ingredients except sugar to roll the cookies in.Cover and refrigerate 1 hour and no longer than 24 hours.Shape into balls and roll in sugar.Place on cookie sheet.Bake at 375* for 10-11 minutes.

    Molasses Gingersnaps

    Ingredients:
    2 cups sugar
    1 cup shortening
    2 eggs, beaten
    ½ cup molasses
    3 ½ cups flour
    2 tsp baking soda
    2 tsp ginger
    1 tsp ground cloves
    1 ¼ tsp cinnamon

    Instructions:

    Cream sugar and shortening until light and fluffy. Add eggs and molasses and beat well. Stir dry ingredients and add to creamed mixture a small amount at a time. Beat well. Form 1-inch balls, roll in sugar, place on un-greased cookie sheet 2 inches apart and bake in 350° oven 12-15 minutes.

    Grammy's Dark Rolls (Holiday Rolls with Oatmeal and Molasses )

    12 rolls
    1/2 cup
    (40 g) oatmeal (rolled oats)

    1/2 cup
    (50 g) whole wheat flour

    1/8 tsp
    (1 ml) salt

    1/4 cup
    (50 g) shortening

    2 Tbsp
    (30 ml) molasses

    2 Tbsp
    (30 ml) honey

    1 cup
    (250 ml) boiling water

    1/2 oz
    (15 g) active dry yeast (2 packages). Do not use quick-rising yeast.

    1/2 cup
    (100 ml) warm water

    1 tsp
    (5 ml) honey

    1 egg

    2 1/2-3 1/2 cups
    (250-350 g) unbleached flour

    Combine oatmeal, whole-wheat flour, salt, shortening, molasses, and honey. Pour boiling water over all. Mix and let cool.

    While cooling, dissolve yeast in warm water with the honey. Add egg to cooled batter, then mix in dissolved yeast.

    Add flour until dough is just soft enough to knead. Knead lightly.

    Place dough in a greased bowl; cover with a damp cloth. Let rise in warm place until doubled in bulk; about one hour.

    Punch down dough and cut into 12 equal pieces. Shape each piece into a ball in put into a greased 9-inch (25-cm) pan.

    Let rise again for 45 minutes.

    Bake in a preheated oven at 350F or 175C for 40 minutes.
    Note: These rolls are reaally wonderful, but they need time to rise. start them as early in the day as possible. Don't even think about using the quick-rise yeasts.

    Difficulty: easy to moderate.
    Time: several hours preparation, 1 hour baking and cooling.
    Precision: measure the ingredients.

    Pecan Pie with Cane Syrup & Molasses

    Ready in: 30-60 minutes

    1/4 cup butter
    1/4 teaspoon salt
    1 tablespoon all-purpose flour
    1 tablespoon cornstarch
    1 1/2 cup Pure Georgia Cane Syrup
    1/4 cup Dark Molasses
    1/4 cup sugar
    2 eggs
    1 cup Stuart or Schley pecans
    1 teaspoon PURE vanilla extract
    1 Unbaked pastry for 1 medium sized pie


    In heavy saucepan, melt butter, add salt. Add flour and cornstarch, and stir until smooth. Add cane syrup, molasses and sugar. Boil for 3 minutes, then cool. Add beaten eggs, pecan nuts and vanilla, blending well. Pour into pan lined with unbaked pastry. Bake in hot oven at 450 degrees for 10 minutes. Reduce heat to 350 degrees, and bake 30 to 35 minutes.

    1 ga Cider vinegar
    1/2 c Salt
    2 tb Red pepper
    3 tb Red pepper flakes
    1/2 c Molasses

    Molasses Blueberry Cake

    1 cup sugar
    1/2 teaspoon ground cloves
    1/2 teaspoon cinnamon
    1/2 teaspoon ginger
    1 teaspoon salt
    1 heaping teaspoon baking soda
    2-1/2 cups sifted flour
    1/2 cup molasses
    2 eggs
    1/2 cup oil
    1 cup hot tea
    1 cup blueberries

    Mix dry ingredients. Add wet ingredients (add hot tea last). Fold in berries. Sprinkle with 3 to 4 Tablespoons sugar. Use 9 x 13-inch greased pan. Bake at 350 degrees for 35 to 40 minutes.

    Molasses Gingerbread Recipe

    2 3/4 cups white flour


    1/2 teaspoon salt


    2 teaspoons ginger


    1/4 cup melted butter


    1 cup molasses


    1 3/4 teaspoons soda


    1 cup milk


    Sift together the white flour, salt and ginger. Add soda to the molasses. Combine mixtures, add butter and milk and beat vigorously. Pour into greased pan and bake in moderate oven for about 35 minutes.

    4 cups all-purpose flour
    1-1/2 tsp. ground ginger
    1/2 tsp. ground cloves
    1/2 tsp. ground nutmeg
    1/4 tsp. ground allspice
    1-1/2 tsp. salt
    2 Tbsp. rum
    1/3 cup water
    1 cup dark molasses
    1 tsp. baking soda
    1 cup sugar
    1/2 cup (1 stick) butter


    Stir together flour and seasonings. Mix rum with water. Combine molasses and soda. Cream sugar and butter. Add half the dry
    ingredients and half the water mixture then half the molasses mixture, blending well after each addition. Repeat. Chill dough for several hours or overnight. On well-floured surface, roll dough 1/4-inch thick. Cut with a 4-inch cutter or 1 lb. coffee can. Bake on greased
    cookie sheet at 375º F. for 10 to 12
    minutes. (Watch carefully so cookies don't burn.) Let stand a few minutes. Cool on wire rack.

    Makes 18 (enormous!) cookies.

    Oatmeal Molasses Bread (Bread Machine)

    1 1/2 LB loaf

    1 cup + 2 tbs. water
    2 tbs. molasses
    1 tbs. butter
    1 tsp. salt
    2 cups whole wheat flour
    1 cup bread flour
    1/3 cup rolled oats toasted*
    3 tbs. notfat dry milk powder
    2 tsp. yeast
    Follow order for yeast on your own bread machine (mine says to add first).

    * to toast oats spread a thin layer in a shallow baking pan. Bake at 350 degrees F for 10 to 15 mins. or until light golden brown, stirring often

    Old Fashioned Molasses Cake

    1 cup sugar
    1 cup dark molasses
    6 tablespoons butter
    1 cup boiling water
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon cinnamon
    1 teaspoon ginger
    1/4 teaspoon salt
    3/4 cup raisins
    1 egg (beaten)
    flour

    Preheat oven to 350º. Blend sugar, molasses and butter. Add baking soda to boiling water and pour over mixture, stir. Add enough four and remaining ingredients to make thick batter. Blend thoroughly. Pour into buttered and lightly floured cake pan. Bake for about 40 minutes.

    Molasses Candy

    One cup molasses
    2 cups sugar,
    1 tablespoon vinegar,
    a little butter and vanilla,

    boil 10 minutes,
    then cool it enough to pull.

    Note: Please remember that these are old recipes. The measurements they used may not have been the same as we use today!

    Molasses Rice Pudding
    Yield: 4 Servings

    2 eggs; beaten
    1 1/2 c milk
    1 1/4 c rice; cooked
    1 c raisins
    1/4 c molasses
    1 tsp salt
    1 tsp vanilla
    1/4 tsp cinnamon
    1/2 tsp nutmeg

    Preheat oven to 350 degrees. In a medium bowl, add milk and eggs and mix well. Add all the other
    ingredients, mix well. Place in a medium baking dish. Cover and bake for 1 hour or until the mixture is firm. Serve warm or chilled, topped with whipped cream if desired.
