    Attention ANNRMS re Egg Pods

    Ann, I saw your tip about egg pods and how easy they are to use to make boiled eggs, and I looked for them but couldn't find them in person.  What I did find, though, was silicone cupcake holders (they look like rubber cupcake papers) at a price of $9.99 per dozen.  They were at Michael's Craft Store.  I bought them to try, and your method worked like a charm!

     

    For those who didn't read Ann's post, this is how to make peel-less hard boiled eggs:   Spray Pam on the inside of the silicone holders and crack one egg into each one.  Put about an inch or so of water in a large frying pan with a cover.  Float the silicone holders in the water.  Bring the water to a simmering boil, put the cover on the pan, and cook 10 minutes.

     

    After 10 minutes, use a tongs and take the silicone holders with the (now) hard-boiled eggs in them and place them on a paper plate or hot pad to cool.  Once they're cool enough to handle, just pop them out of the holder.  You can put them in a zip-top bag to store in the fridge.  They look like little hard-boiled hockey pucks with a little ruffle around the outside from the cupcake holder pleats.

     

    I made some and my husband ate them with salt and pepper.  He loved that he didn't have to peel them.  Now he's wanting me to use these kind of hard-boiled eggs to make deviled eggs.  You're right - you wouldn't cut the eggs in half, just take the yolk out and mash it with the other ingredients.  The nice part about using the silicone cupcake holders is that the eggs wouldn't move or tip over because they're flat on the bottom.  And the yolk centers itself on the top of the egg while it's cooking.

    Hi - Sorry it took so long to read your post.  I find it difficult to check on stuff I've sent; posts seem to get lost.  Maybe I haven't learned how to navigate yet!!  Glad to read that you found the cupcake holders.  I've used those also, and I have used mini silicone muffin pans to make little quiches using "egg beaters" or regular beaten egg.  I've added cheese, finely chopped ham, dehydrated spinach & leek (from San Francisco Herb Company).  I found a recipe on TOH for Bacon and Egg Lasagna that I may try.  It has bacon, onion, HB eggs, Swiss cheese, white sauce and lasagna noodles.  If I try it, I think I'll put a "green" layer in there - frozen chopped spinach.  Too hot to worry about it now, though.  Glad you liked my tip.

    That's a great idea about adding bacon, cheese, etc., with the eggs.  I'll definitely try that - I have a very small loaf pan made out of silicone too, and I was thinking about making an easy omelet in that.  It would be bigger than the cupcake cups so it would be big enough to add more ingredients.

     

    I made a dozen boiled eggs yesterday again using your method.  It rocks!

    Hi gals.What a great idea.
     Do you think this "pan" would work?It`s a shallow tartlet pan that I got at a yard sale and am looking for recipes and  ways to use it.

    Yes, I think it would, Rosie.  You just have to find a pan that's big enough that you can float your pan in it.  You might have to use smaller eggs, though, since it's a tartlet pan.  Bigger eggs might overflow the cup.
