We cooked up a big kettle of fresh green beans, 1 small vadalia onion, new potatoes and instead of ham we used smoked sausage and it was delicious!
2 lbs of fresh green beans, washed and snapped
1/2 vadalia onion
2 lbs of small red potatoes cut in half or a ring pealed around the out side if they are very small.
2 lbs of precooked smoked sausage
2 pinches of sea salt
pepper to taste
2 chicken bullion cubes.
Place the beans, sausage, potatoes and onion in a large kettle and jusst barely cover with water. Bring to a boil,cut back your heat to a low simmer and cook about 3 hours ( you can not hardly over cook them) add the potatoes and continue to simmer until the potatoes are fork tender. For a richer broth add 2T butter and to kick it up a notch add 2 T horseradish. This makes enough for 8. Cut this recipe in half for a smaller amount.
Mr. Molly and I ate this 3 times...we love it and the more you heat it up the better it gets! Good served with a crusty bread.
