    A new twist on green beans and new potatoes...just wanted to share!

    We cooked up a big kettle of fresh green beans, 1 small vadalia onion, new potatoes and instead of ham we used smoked sausage and it was delicious!

    2 lbs of fresh green beans, washed and snapped

    1/2 vadalia onion

    2 lbs of small red potatoes cut in half or a ring pealed around the out side if they are  very small.

    2 lbs of precooked smoked sausage

    2 pinches of sea salt

    pepper to taste

    2 chicken bullion cubes.

    Place the beans, sausage, potatoes and onion in a large kettle and jusst barely cover with water.  Bring to a boil,cut back your heat to a  low simmer and cook about 3 hours ( you can not hardly over cook them) add the potatoes and continue to simmer until the potatoes are fork tender. For a richer broth add 2T butter and to kick it up a notch add 2 T horseradish.  This makes enough for 8.  Cut this recipe in half for a smaller amount.

    Mr. Molly and I ate this 3 times...we love it and the more you heat it up the better it gets! Good served with a crusty bread.

    Molly sounds good, I do this with polish or portuguese sausage but I don't cook it as long as 3 hours. Oh, I also throw a bay leaf in the pot and some lemon thyme. The lemon thyme is great with green beans.

    Healing is taking a long time. Starting therapy this afternoon but no weight bearing still on left ankle/leg. Frustrating to say the least! Seen weeks of dragging this leg around,hot and heavy.

    molly, that is my favorite way to fix garden fresh green beans. I usually boil the green beans to get the stiffness out and then put them in the crockpot all day with smoked sausage/onions/potatoes------great supper and the smell all day long is fantastic!!

    I can't imagine your original being any better, Molly! I'll try this though! Thanks for sharing. I tried the dish with ham last year and it was so good!!

    Thanks for sharing Molly!  My little guy loves smoked sausage.  This looks like a dish my entire family will enjoy!

    Thanks. My grandmother used to cook something very similar. She also did it with spinach instead of green beans.

    You know what else I like to do with this...its bad lol. After it is on my plate I like to mix a little sour cream with it all....so good lol

    When we have family get togethers,  my family want their asparagus, green beans, etc just barely cooked.  I can eat then this way, but really like my green beans cooked much longer.  Polly's restaurant  has the greatest green beans.

    Molly- I plan to make this Wednesday for dinner or part of dinner. I am off then so can concentrate on a good dinner and it is DD's first day of 11 grade.
