    "What Mom made for dinner when we where little"

    Sheila said me if we could do this thread and i think it is a wonderful idea.Please post your recipe so we all can enjoy it too.Thanks

    My was cabbage rolls,Seafoam candy and hamburger's and easy greenbeans,Jello Delite

     

    Easy Greenbeans

    2 Cans of French or cut Greenbeans

    1 Beef Bouillon Cube

    2 Tablespoons of fried Fat Back

    Salt To Taste

     

    Put greenbean in a 2 qt pot and add the rest of ingredients.Bring to a boil.Then turn down to simmer and let cook about 2 hours.Stirring ever once in a while.The bouillon cube give this a wonderful flavor.

     

    Mama's Old-Fashioned Seafoam Candy

    1 Box Light Brown Sugar

    1 Cup Water

    1 Egg White,Beaten with a pinch of Cream A Tar.Until Fluffy

    1 tsp.Vanilla

    Pecans

     

    Add sugar and water to a large saucepan.Boil until a ball forms when dropped into small glass of cold water.Stir ocasionally.Beat egg white and cream of tar until fluffy.Add sugar suagr and water mixture slowly into egg whites.Beating until starts to harden.Add vanilla and nuts.Beat alittle longer.Sppon out on to wax paper and cool.

     

    Easy Hamburger's

    1 to 2 LBS Hamburger

    1 tsp.Salt

    4 Tablespoons Applesauce

    Cooking oil for Pan

     

    Mix hamburger,salt and applesauce together and mix well.Make into patties.Cook over mediuem heat until done.

     

    Family Tradition Jello Delite(I've been making this for 20 years)

    1 Large box cherry jello

    Make my box direction and put in a 9x 13 inch casserole dish.Let set up really good.

    Topping:

    1-Large can crushed pineapple

    1 1/4-Sticks margarine

    1 1/2-Cups sugar

    1-8oz pk walnuts

    3 Eggs beaten

    3-Tablesppons flour

    1 1/2-2 Cup coconut

    Graham crackers

    While jello is setting up make topping.Combine all ingredients excepted graham crackers.and cook until thick.Let cool really good.Then put a layer of graham cracker's on top of jello.Then a layer of topping.Then another layer of graham cracker's ending with topping.Refrigerate.

    Tip:Make sure jello is set up good and topping is completely cool .I get request every hoilday to make this.It is so good.

    Mom's Cabbage Rolls

    Ingredients:

    1 large head of cabbage

    1 to 1/2 pounds lean ground beef

    1/2 cup instant rice or cooked rice

    1/2 teaspoon salt

    1/8 teaspoon ground black pepper

    1 egg, lightly beaten

    1/2 cup finely chopped onion

    1/2 to 1 teaspoon cinnamon, divided (more or less, to taste)

    1 can (10 1/2 ounces) tomato soup, undiluted

    1 can (14.5 ounces) tomatoes

    Directions:

    Tear the leaves off the cabbage and cook in boiling water or steam until wilted enough to be flexible. Cool.

    Mix ground beef, rice, egg, onion, and salt, pepper, and 1/2 teaspoon of cinnamon together.

     Form a few tablespoons of the mixture into a cylinder, then roll up in a cabbage leaf.

    Secure rolls with toothpicks.

     Combine the soup and tomatoes in a Dutch oven.

    Place cabbage rolls in the Dutch oven.

    Sprinkle with about 1/2 teaspoon of cinnamon.

    Cover and simmer for 1 1/2 to 2 hours.
    Serves 6.

    When I was growing up, my mom made the BEST pizza. It is requested by my nephews when they visit as well as by me and my brothers. We have friends that when we talk to them they ask if mom still makes the world's best pizza. So here is my mom's pizza.

     

    Pizza Sauce:

     

    2 8 oz cans tomato sauce

    1/2 Cup water

    2 Tbsp. vegetable oil (olive oil works well)

    2 teasp Italian seasoning

    1/4 teasp garlic powder (OR 2 cloves fresh)

    1/4 teasp black pepper (fresh ground)

    3 Tbsp. Kraft parmesan cheese

    1 teasp sugar

     

    Put all ingredients in blender except parmesan cheese. Blend completely. Set blender on high and slowly add parmesan cheese.

     

    Spray crockpot with cooking spray. Cook on high till sauce starts to bubble. Turn to low and simmer at least 1 hour. My mom typically lets it cook at least 4 hours on low, stirring every 30 minutes or so.

     

    Crust:

     

    Thin Crust:

    1 pkg dry yeast

    1/3 Cup warm water

    1 Cup flour

    1/4 teasp salt

    1/2 Tbsp vegetable oil

     

    Thick Crust:

    1 pkg dry yeast

    1/2 Cup warm water

    1 1/2 Cup flour

    1/2 teasp salt

    1 Tbsp vegetable oil

     

    Stir yeast into water in large bowl. Mix in flour, salt and oil. Kneed mixture on lightly floured surface until it forms a smooth ball. Place dough in greased bowl; turn once to grease surface. Cover and let rise in a warm place about 10 to 15 minutes. Place dough on pan, pressing dough into groove to form ridge. Do not extend dough onto rim of pan. Poke the dough with a fork and let rest in warm place for 15 to 20 minutes.

     

    Spread sauce onto crust and top with desired toppings. Bake 20-35 minutes at 400-450 degrees. Check doneness by lifing edge of crust. Pizza is done when crust is crisp and browned on bottom.

     My mom was the most awesome cook and could at a moment's notice (or so it seemed) whip up a feast. All "down-home" "cooked-from-scratch" comfort food! Back in the day they had large families and since my dad was the pastor, we often had company. Not sure how my mom did it, but never heard her complain. And more often than not people just stopped by, no invites or calls... Here are some of my mom's old recipes. I have her cookbook and treasure it. She was known for her very yummy bread and flaky pie crusts.

     

     Mom's Meatloaf

     

    1 lb ground beef

    1 egg

    1 cup milk

    1/2 cup oats

    1 tsp salt

    1/8 tsp pepper

    2 tbsp finely chopped onion

     

    Mix ingredients. Pack into loaf pan. Bake at 350 for 1 hour.

     

     

     

    Six Layer Dinner

     

    2 cups diced potatoes

    1/2 cup rice

    1 cup diced carrots

    1 cup diced onions

    1 lb ground beef, browned

    1 cup tomato soup

    1 cup water

     

    Place in casserole dish in order given, adding salt and pepper between layers. Bake at 350 for 2 hours.

     

     

     

    Sweet and Sour Sauce

     

    1 cup brown sugar

    4 tbsp flour

    1 cup water

    1/2 cup vinegar

    1/2 cup ketchup

     

    Mix sugar and flour, add remaining  ingredients. Pour over meatballs or other meat. Bake till meat is done. Serve over rice.

     

     

     

    Mom's Chocolate Cake

     

    1 cup butter or margarine

    1 1/2 cups sugar

    1/2 cup cocoa

    1 cup hot water

    2 eggs

    1 cup sour milk

    1 tsp vanilla

    2 1/2 cups flour

    2 tsp baking powder

    1 tsp baking soda

     

    Beat butter and sugar. Mix cocoa and hot water, add to mixture and continue beating. Mix in eggs, milk and vanilla. Stir in dry ingredients. Pour into 9x13-inch pan. Bake at 350 for 35-40 minutes.

    Not for dinner, but sometimes for dessert, here's a yummy cake recipe. My mom would frequently mix this batter up and make cupcakes for in our lunches. Topped with a delicious cocoa frosting, I was the kid everyone wanted to trade desserts with when these came to school.

     

    Peanut Butter Cake

     

    3 cups flour

    2 teasp baking soda

    2 cups sugar

    1/2 cup butter or marg.

    1/2 cup peanut butter

    4 eggs, beaten

    2 cups buttermilk (regular milk works)

     

    Cream sugar butter and peanut butter.

    Add well beaten eggs.

    Sift soda with flour and add alternately with milk. Blend well

    Pour into 3 8-inch cake pans which have been greased and floured. This can be done in a 9X13 or cupcake pans.

     


    Bake at 350 degrees, for 8 inch layers, for 25 to 30 minutes. I am not sure what the time adjustments would be for the other pans, but my mom made them as well.

     

    FROSTING:

     

    Fluffy Cocoa Frosting

     

    2/3     cup Cocoa Powder

    3 1/2   cups powder sugar

    1/3      cup butter or margarine

    1/2     cup milk or evap milk

    1/2     teasp vanilla

     

     

    Combine cocoa and powder sugar.  Cream butter and 1/2 cup of cocoa mixture in large mixer bowl until well-blended.  Gradually add milk or evap milk and vanilla.  Blend in remaining cocoa mixture.  Beat until of spreading consistency.  Yield:  About 2 cups frosting.

    I will add to this but it will take awhile. I still make a lot of my mom's recipes. My mom was an awesome cook until after she had her first stroke. Things went downhill a lot after that. But her hamburger gravy and her vegetable soup and her seven bone roast are among my favorites of them. This is a good idea for a post. I am just going to work my way through my master cookbook until I see them all and hopefully that will be about it. There is also a thread of stuff, because I make some things differently than she did (like spaghetti and meatloaf)

    Beef Vegetable Soup (my mom)--she made hers some different. She did not use the mixed vegetables. She did use great northern beans and diced potatoes

    1 beef roast

    1 large onion, diced

    1 head cabbage, chopped

    1 large can V-8 juice or tomato juice

    32 oz. frozen mixed vegetables or leftover vegetables (any kind)

    1 c. diced celery

    8-10 potatoes, peeled and diced

    10 c. water

    2 t. salt

    ½ t. pepper

    (She also put soup beans in hers, but I don’t)

    Cook roast in crockpot with water until it is tender enough to fall off bones. I usually do this overnight the night before so it will be done by morning. Cut roast into chunks. Put into large soup kettle along with all additional ingredients. Cook on medium for about an hour or until the potatoes and cabbage get tender.

    This I still make all the time. It never fails.

    Mustard Potato Salad (Mom)

    10-12 potatoes, boiled, peeled and diced
    3 diced hard boiled eggs
    1 onion, diced
    1/2 c. relish (either sweet pickle relish or dill pickle relish)
    1 c. mayonnaise
    1/3 c. mustard
    1/4 c. sugar
    2 t. salt
    1/2 t. black or white pepper
    1 t. white vinegar

    Combine potatoes, onion, eggs, and relish in large mixing bowl. In another bowl, combine all remaining ingredients. Blend well. Pour dressing over potatoes. Blend well.
    Chill for at least a couple of hours.

    This is another one I loved.

    Sloppy Enchiladas (my mom) This was one of her concoctions
    1 1/2 lb. ground beef
    1 onion, diced
    28 oz. can enchilada sauce
    1 pkg. flour tortillas (any size)
    2 c. grated cheese (cheddar, longhorn cheddar or Cheddar-Colby mix)
    1 t. ground cumin
    shredded lettuce, diced tomato, sour cream, sliced black olives, salsa (if desired to serve on top of enchiladas)

    Cook beef and onion until done; drain. Return to skillet. Add enchilada sauce. Simmer till boiling. Add pieces of tortilla and stir them into the pan. It generally takes about 2/3 of the package. Stir well. You want the tortillas to soak up the sauce. Simmer about 10 minutes or so. Can add a little water if needed. Sprinkle with cheese. Heat just until cheese melts. Top with shredded lettuce, olives, tomatoes, salsa, and sour cream if desired.

     Refried Beans (Mom)
    1 large can refried beans
    a little water (about 1/4 c.)
    about 2 t. bacon grease
    1 t. chili powder
    1 c. shredded cheese

    Combine beans, water, bacon grease,
    and chili powder in saucepan. Heat until just boiling. Sprinkle cheese over top and heat just until cheese melts.

    Mom's Electric Skillet 7-bone Roast

    1 seven bone roast (not larger than your electric skillet)
    1 onion, cut in half
    water
    1 t. salt
    1/2 t. black pepper
    several potatoes, halved
    several ribs of celery, cut in pieces about 4 inches long
    several baby carrots

    Put roast in electric skillet. Put onion pieces, cut side down, on top of roast. Add about 2 c. water to skillet. Add salt and pepper also. Put lid on skillet and cook at 300. It takes about 3 hours to get really tender. You will have to add water periodically whenever it gets low. The trick is to almost run out of water a couple of times without actually burning it. About 45 minutes
    before roast is done, add potatoes,
    celery, and carrots to skillet. You will have to fill water more frequently as potatoes will soak it up. Once the roast is done, remove it and the vegetables to a platter. Make gravy with the pan drippings. The potatoes are so good. They soak up the flavor from the meat. This was my favorite thing of all the things my mom used to make.

    Here is the correct version of my mom's hamburger gravy recipe

    Mom's Hamburger Gravy
    (this is definitely comfort food)

    1 1/2 lb. hamburger
    1 onion, diced
    4 oz. can mushroom stems and pieces,
    drained (optional)
    2 c. water
    1 1/2 c. milk
    1/3 c. all-purpose flour
    1 t. salt
    1/2 t. black pepper

    Cook hamburger and onion (and mushrooms if using them) together in large skillet until hamburger is done. Drain. Return to skillet. Add water, salt, and pepper. Heat to boiling. In large shaker cup combine milk and flour (and a couple of ice cubes are helpful to reduce lumps).
    Shake well. Add to boiling meat mixture. Stir constantly until thickened. Remove from heat. Serve over mashed potatoes.

    Now I usually make Black Angus Baked Potato Soup as it is so thick and yummy. This one is not thick but it uses simple ingredients and I still like it with lots of crackers crumbled up in it. Its quick and easy.

    Mom's Potato Soup

    6 to 7 potatoes, peeled and sliced
    1 medium onion, diced
    1 stick margarine or butter
    1 t. salt
    about 2-3 c. milk

    Cook potatoes in water until tender. Add all remaining ingredients. Cook until just boiling, stirring constantly. Remove from heat. If you want quick New England clam chowder just add a can or two of drained clams or if you want oyster stew, add a couple cans of drained oysters.
    This is not a thick soup, but it sure is yummy!

    What was really good is when there was leftover macaroni and cheese (which was not often the way my brother eats it) and she fried them in her cast iron skillet until it had a nice brown crust on it. NEver did learn how she did that!

    Mom's Velveeta Macaroni and Cheese

    1 1/2 c. macaroni
    1 1/2 inch thick (or more) block from a 2 lb. block of Velveeta cheese
    (Chop it up to make it melt faster)
    2 t. salt
    1/3 c. milk
    1 T. flour

    Cook macaroni in boiling water according to package directions. Drain. Return macaroni to saucepan.
    Combine milk and flour in shaker cup. Blend well. Add milk mixture, salt, and Velveeta to macaroni in pan. Heat on medium low until cheese is melted and mixture is thick and bubbly. Add pepper as desired.

    Mom's Meatloaf

    (Makes 2, you can freeze one before baking it)

    3 lb hamburger, preferably lean
    2 t. salt
    8 slices bread, made into crumbs
    1/2 t. pepper
    1 onion, diced
    1 c. catsup

    Combine all ingredients. Shape into two loaves. Freeze one. Bake the other one at 350 for 1 3/4 hours. You can also use it to make stuffed peppers with.

    That's pretty much it for main dishes that I have actual written recipes for of my mom's. I do have some of her desserts and candy as well...and I have a few I don't really care for like her fruitcake recipe (just don't like fruitcake--yuck!)
