    CP Orange Chicken

    6 boneless, skinless chicken breasts
    1/4 cup molasses
    2 Tbsp cider vinegar
    2 Tbsp orange juice
    2 Tbsp worcestershire sauce
    2 tsp dijon mustard
    1/4 tsp hot pepper sauce

    Place chicken in greased crock pot. COmbine remaining ingredients in bowl.
    Pour over top of chicken. Cover and cook on high for 3-4 hours or low for
    7-9 hours. Serve over rice.

    Made this for supper tonight. We had the chicken on a salad. The chicken is very good. Be fore warned though. I thought the sauce was very, very bitter. Also be fore warned--the chicken is really dark after cooking in that sauce. I liked this chicken. It's a different flavor. Something different for a change. Beside that the recipe is very simple! Thanks Star for posting the recipe.

    We had this on a salad made of Red Romaine, Green Romaine, and Iceburg lettuces. Also added were Vidalia onions and tomatoes. I used the dressing from September Morn's Nappa Cabbage Salad. I added a few drops of Sesame Oil to the dressing. Carol

    I thought I would share a recipe with you. It is tried and tested!! It's one of my English Mom's recipes.
    CHOCOLATE COVERED TOFFEE SHORTBREAD
    Shortbread Base
    1 1/2 sticks butter or margarine
    1 1/4 C flour
    1/4 C sugar
    Rub butter and sugar together. Add flour 1/2 C at a time and rub into butter sugar mixture. Press into a small jelly roll pan or cookie sheet. Bake at 350° for 10-15 mins. or until golden brown.

    Toffee Filling
    1/2 C Eagle Brand condensed milk
    1 stick butter or margarine
    2 Tbps Lyles Golden Syrup or 2 Tbps Karo + 1/4 C sugar
    Mix all ingredients together in a sauce pan. Bring to a boil stirring constantly. Boil for 10 mins. Remove from heat and beat 3-4 mins. Spread over baked shortbread. Let cool.

    Topping
    Frost with milk cooking chocolate (which according to Mom is not available in the US). So---Mix 1 C powdered sugar with 1 Tbsp chocolate syrup and enough boiling water to make a stiff but spreadable frosting. Frost. Let dry in frig. Cut into bars. Will keep well in a covered plastic container. (In the frig if it's hot out)

    I made this for supper tonight. Boy is it good. I got the recipe out of Kraft Food & Family winter edition.

    Citrus & Beet Spinach Salad

    1 pkg (10 oz) baby spinach leaves
    1 can (14 1/2 oz) beets, drained, chopped
    2 seedless oranges, peeled, sectioned
    1 small red onion thinly sliced
    1/3 C Planters Walnut Pieces, toasted
    1/2 C Kraft Light Done Right! Raspberry Vinaigrette Reduced Fat Dressing

    Toss all ingredients except dressing in large bowl. Add dressing; mix lightly. Serve immediately. Makes 4 (2 cup) servings.

    I didn't have red onion so I used some sliced sweet salad onion. I didn't toast the walnuts either.

    This is good on a cold winter night.

    Yorkshire Hotpot

    1 1/2 lb stew beef (cut the cubes in half)
    7 or 8 large potatoes peelded and sliced very thin
    1 large onion peeled and sliced very thin
    2 beef bullion cubes crumbled
    salt and pepper to taste.

    In a large oven proof dish layer stew beef. Cover with a layer of potatoes;then a layer of onions. Repeat until all are used. Sprinkle with salt and pepper and the crumbled beef bullion. Add enough water to cover. Bake at 375° for at least 1 1/2 hours. Serves about 6 with big appetites. The broth is good for dunking bread while you are eating the hotpot.

    This is an old recipe that's good for potlucks.

    BBQ Bean Bake
    1 lb ground beef browned and drained
    1 lb chopped bacon cooked and drained
    1 onion chopped
    1/2 C barbecue sauce
    1 tsp salt
    3/4 tsp pepper
    4 Tbsp mustard
    4 Tbsp molasses
    1 Tbsp chili powder
    2-16 oz kidney beans drained
    2-16 oz pork & beans drained
    2-16 oz butter beans drained.

    Combine everything and put into crockpot. Cook on low for 8 hours.

    Maggie B's Sausage Soup

    1 onion chopped
    1 Tbsp oil
    1 lb smoked sausage thinly sliced
    1-8 oz tonato sauce
    3 carrots and celery stalks sliced
    1 potato diced
    1-28 oz can tomatoes
    2 Tbsp uncooked rice
    1 bay leaf
    1 tsp salt
    1-2 chicken bullion cubes
    3 C water

    Heat oil in a large pan. Add onion and cook until golden and tender. Add remaining ingredients. Bring to a boil and cover and simmer 30 minutes stirring occasionally. Adjust liquid and season to taste.

    Both Maggie B & I use 28 oz of stewed tomatoes instead of plain tomatoes when making this. I also add a clove of minced garlic. Sometimes I use barley instead of the rice.

    This is quick and easy

    Macaroni Salad
    1-16 oz box of macaroni cooked and drained
    1 C light Miracle Whip
    1 C chopped red bell pepper
    1/2 C chopped green onion
    1 cucumber seeded and chopped
    1-8 oz Cheddar cheese cubed
    salt to taste
    1/2 Tbsp fresh coarsely ground pepper

    Mix all together. Chill well before serving.

    When I make this I use Hellman's Just 2 Good!. I use red or green pepper whichever I have and I use red or salad onion if I don't have green onions. And 1 more change. I'm lazy so I use shredded Cheddar cheese.

    If the salad seems dry add alittle more Miracle Whip or Hellman's. I've also added some prepared Ranch Dressing.

    To make it into a main dish I add some cooked cubed ham

    Chocolate Chip Rollo Cookies
    1-18 oz package rerigerated chocolate chip cookie dough
    36 Rollo candies

    Place 36 miniature paper baking cups in a miniature muffin tin.

    Place spoonfuls of dough in baking cups. Bake at 350° for 9 to 14 minutes until light golden brown.

    Immediately press one Rollo candy into each cookie. Cool for 10 minutes. Remove from pan. Makes 36 cookies.

    I like these alot. Just wish the Rollo had melted a bit more. They are really quick and easy. I will definately make them again. Carol

    Hawaiian Pineapple Crumble Bars
    Crust ingredients
    1 1/2 C all purpose flour
    3/4 C butter
    1/2 C sugar
    Filling ingredients
    1/2 C white sugar
    1/4 C corn starch
    20 oz crushed pineapple, drained
    2 tsp lemon juice
    1/3 C sliced almonds

    Preheat oven to 350°. Combine all crust ingredients in medium mixing bowl. Beat at low speed, scraping bowl often until mixture is crumbly. Reserve one cup and set aside. Press remaining crumb mixture onto bottom of greased 9x13 baking pan. Bake for 10 minutes. Meanwhile, stir together sugar and cornstarch in 2 qt. saucepan. Add pineapple and lemon juice. Mix well. Cook over medium heat, stirring constantly until mixture is thickened. Mixture will be very thick, be patient. Spoon filling over hot, partially baked crust. Sprinkle with reserved crumbs. Top with almonds. Continue baking 15-20 minutes or until lightly browned. Cool completely. Cut into bars. Makes 36 bars.

    The only change I made was to not drain the pineapple (didn't see that until I was keying this) and it worked fine. This is very easy and tastes very good. I'll be making this again. Carol

    I received my February 2004 Southern Living today. Lots of good recipes in this edition. I made this one tonight.

    Creamy Cauliflower Salad
    Seperate 1 head of cauliflower into forets, and coarsely chop. Combine with 4 sliced green onions, 2 diced celery ribs, 1 C (4 oz) shredded sharp Cheddar cheese, 1 C Ranch style dressing, and 3 Tbsp chopped fresh parsley. Toss with cooked and crumbled bacon, if desired. Note: to lighten, use 2% reduced fat Cheddar cheese and low fat dressing, and omit bacon.

    The only changes I made were to use a Colby-Monterey cheese (that's what I had) and a sweet salad onion (again what I had) and no parsley.

    This was really good and it would be better with the sharp Cheddar. I will make this again. Carol

    Cuban Pork Roast
    1 C lime juice
    1 C orange juice
    10 garlic cloves minced
    4 tsp ground cumin
    2 Tbsp minced fresh thyme or 2 tsp dried
    2 Tbsp fresh cilantro or parsley
    4 bay leaves
    1 boneless pork top loin roast (3 lbs)
    1/2 tsp salt
    1/4 tsp pepper

    In bowl combine the first seven ingredients; mix well. Pour half of the marinade into a large resealable plastic bag; add the pork roast. Seal bag and turn to coat; refrigerate for 2 hours. Refrigerate remaining marinade.
    Drain and discard marinade in bag. Place roast in 9x13 baking dish. Pour reserved marinade over roast. sprinkle with salt and pepper. Cover and bake at 350° for 1 hour. Uncover; baste with pan drippings. Bake 15 minutes longer or until meat thermometer reads 160°. Discard bay leaves. Let roast stand for 15 minutes before carving. Yield 12 servings.

    I used lemon juice (no lime juice and to yucky here to go out) with about 3 Tbls lime zest that I had in the freezer. I also used 2 tsp dried cilantro instead of the fresh. This is a very good roast. I felt it was a little overpowered with all of that garlic. When I make it again I'll cut it back abit. I'm using the leftovers to make the Cuban Sandwich recipe that Rachael IN posted recently. Carol

    Easy Taco Casserole
    1 lb ground beef
    1 C salsa
    1/2 C mayonaise
    2 tsp chili powder
    2 C crushed tortilla chips
    1 C (4 oz) shrdded Colby cheese
    1 C (4 oz) shredded Monterey Jack cheese
    1 med tomato, chopped
    2 C shredded lettuce

    In a saucepan, brown beef; drain and return to pan. Add salsa, mayonaise, and chili powder; mix well. In an ungreased 2 qt. baking dish, layer half of the meat mixture, chips, and cheeses. Repeat layers. Bake, uncovered for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce. Yield: 6 servings.

    This was easy and very good. I will be making it again. I think I'll play with it next time. I thought I would add either some Mexican corn or black beans into the ground beef mixture. I served it with a broccoli-cauliflower salad. Carol

    Grilled Cheese Sandwich Pie
    This is as close to a grilled cheese sandwich (minus the bread) as you can get. Recipe is from "Food for Thought".

    1 C milk (NOT skim milk)
    1 large egg, beaten
    3/4 C all purpose flour
    dash cayenne pepper (to taste, I use 2 or 3 dashes)
    1 C sharp Cheddar cheese, grated

    Preheat oven to 400°. Grease a pie plate with nonstick cooking spray. Measure milk and pour into a 1 quart pitcher. Add egg and whisk to blend. Add sifted flour, salt, and cayenne and whisk well. Stir in half of the cheese. Pour into the prepared pie plate. Bake until puffed and golden brown, about 30 minutes. Sprinkle on remaining cheese and return to oven and bake until cheese is melted, about 2 minutes. Cool slightly, cut into wedges and serve immediately. Serves 4.

    This is very good and so easy. I had 2 pieces of cooked bacon in the frig. I crumbled them and added when I added the cheese on top. When I make this again I'm going to try it with pepper jack cheese and omit the cayenne. I served this with a tossed salad and a fresh fruit salad. Carol

    1 C warm water (110°)
    1 tsp salt

    (per original recipe--I have substituted the 4 Tbsp of honey with maple syrup and the 4 Tbsp of sugar with brown sugar...either way it works out great)

    1 Put ingredients into bread machine in the order suggested by manufacturer

    2 Process for 2 lb loaf, fruit and nut setting, light crust

    3 Add raisins to the pan when machine beeps or 5 minutes before kneading is complete

    4 Note that this dough has a sticky consistency, and may rise significantly during baking

    I made the original recipe with the exception of using regular raisins and adding 1 Tbsp wheat gluten. This is the second time I've tried this bread. The first one didn't raise but I think my yeast was old. This time it made a very nice loaf. The bread has a great flavor and I will bake it again. Carol

    Banana Butter
    4 lg bananas; ripe and sliced
    3 Tbsp lemon juice
    1 1/2 C sugar
    1 tsp pumpkin pie spice

    Process bananas and lemon juice until smooth; transfer to a saucepan. Stir in sugar and spice; bring to a boil. Reduce heat and simmer, stirring, 15 minutes. Serve on toast, french toast, pancakes,etc. Store in refrigerator.

    John thanks so much for sharing this recipe. As I said before it is wonderful. Since I'm a diabetic I'm going to try making it again with 1/2 sugar and 1/2 sweetner so that I can eat some of it rather then just tasting it. Carol
