    Coleslaw

    I need help with my coleslaw. I love to cook, yet coleslaw is one item I really have a hard time with. there is something wrong with the sauce i use. I follow the instructions, but continue to do something wrong, I just cant figure out what it is! My coleslaw always becomes mushy-like, it never stays crisp. HELP! any ideas??? i've even tried using less mayonaise.

    How are you doing your cabbage?

    I like to slice mine on the mandolin, we like it in long thin slices not chopped fine.

    It could be your chopping your cabbage to finely.

    Yep, chopping too fine will do it. If you are not hand chopping it and are using the food processor, you should use the slicer and not the grater!

    Hi! From what the others are saying, I think they mean to not be 'rough' on the cabbage--if you damage the cabbage's cell walls, they will break down and your cabbage won't be crunchy.

    I thought about it--another thing might be water--you want the cabbage VERY dry. I only wash the head before chopping (although I must admit I usually buy the preshredded, as it don't feel THAT poor, but it IS more expensive!) but if you need to wash the inner leaves I'd wash them whole and then dry well before chopping.

    If you can't get anything to work, perhaps it's the ingredients in your dressing and you could try another recipe.

    I have sliced cabbage for my mexican dishes, but sheepishly must admit to using packaged cabbage(presliced) for my coleslaw. I have carpal tunnel and it really saves my body. i will remember about the water issue and the slicing, will definately try it when i make my eggrolls. i'm sure there will be a big difference! thanx!

    After reading other folks' reply, I want to add another option. If you are using a food processor to shred your cabbage, the Pulse option works great with my KitchenAid processor. Makes short work of the job. Also, I quit looking for other recipes after my nephew secured KFC recipe for me.
    8 cups finely chopped cabbage
    1/4 cup carrot, shredded
    1/3 cup sugar
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 cup milk
    1/2 cup mayonnaise
    1/4 cup buttermilk
    1 1/2 tbsp. vinegar
    2 1/2 tbsp. lemon juice
    Mix dressing until smooth. Combine with shredded vegetables. Cover and refrigerate.

    Too much dressing or putting on the dressing too far ahead makes it mushy. I usually make the dressing but don't put it on the cabbage until time to eat. Also a simple dressing that everyone raves about is:
    1 small can pineapple tidbits in juice
    (well drained)
    4 Tbsp mayo
    2 Tbsp white vinegar
    1 Tbsp white sugar
    Salt & Pepper to taste.
    If you don't like pineapple, just leave it out.
    Just remember twice as much mayo as vinegar and twice as much vinegar as sugar, then you can adjust to how much slaw you're making.

    I have been using this cold slaw dressing for years. We think it is excellent and many people have asked me for the recipe.

    1 cup Kraft Real Mayonnaise
    1/4 cup Heinz Chili sauce
    3 tablespoon finely grated onion
    1 1/2 tablespoon Worchestershire sauce
    1 1/2 tablespoon sugar
    1/2 teaspoon black pepper
    1/2 tablespoon garlic powder

    Put everything in a mixing bowl and mix well using an electric mixer.

    I usually post on the recipe board but lately it has gotten too decorative for me. I came over here this morning and lo and behold, that KFC coleslaw recipe is what I have been wanting for years!! Thank you for sharing this today.
