SWEET POTATO CRANBERRY CASSEROLE
5 med. sweet potatoes, cooked, cooled, peeled
4 c. light brown sugar
1 Tbs. grated orange rind
12 Tbs. cornstarch
3 c. fresh orange juice
1 c. cranberries Spray shallow casserole dish (10x6x2-in.) with non-stick cooking spray. Thickly slice cooled sweet potatoes; arrange on bottom of dish. In a medium bowl, combine orange rind, orange juice, sugar and cornstarch; blend well and set aside. In food processor or blender, process cranberries until smooth. Add juice mixture and blend. Pour over sweet potatoes. Bake at 375° until potatoes have a shiny glaze, about 30 minutes. Serve hot.
