I made that soup, and it was very good. Usually, I retype good recipes and file them on a disk. This is the one I have.
Potato Soup
6 cups diced, peeled potatoes
5 cups water
2 cups diced onions
1/2 cup diced celery
1/2 cup chopped carrots
1/4 cup margarine, or butter
4 tsp. chicken bouillon granules (I use 3 1/4 cups water and 1 can vegetable broth)
1 tsp salt or to taste
1/2 tsp white pepper
12-oz evaporated milk
3 Tbsp chopped fresh parsley (I have used frozen chopped spinach instead of parsley)
8 oz. cheddar cheese, shredded
Combine all ingredients except milk, parsley, and cheese in slow cooker.
Cover. Cook on high 7 - 8 hours or until vegetables are done. Stirm in milk and parsley. Stir in cheese until it melts. Top individual servings with chopped chives. I have also pureed the vegetables then added the other ingredients - good.
