    Evening everyone!

     

    Just baking off the last of the gingerbread for the day. I have a bit of construction to do yet tonight and then figure out whats next.

     

    Making Alfredo & Garlic shrimp for supper, Crazy Crust pizza for DS.

     

    Hi Nancy!  Ouch to your DH, I am still sore but I do not think they are broken. They sure were hurting this morning. Hope your DH feels better soon.

     

    Hi Leat, I have never had chicken lasagna before, sounds great!

    Off to co-op this morning. The boys made a HUGE salt-dough map of Texas, Oklahoma, New Mexico and Arizona for class today.  We are serving samples of Texas chili too, so a busy one!

    Good morning friends. Getting ready to go vote, we have a Governors Election today. I'm glad when this will be over with as I'm tired of the phone calls from politicians (recordings) and real people telling me who to vote for. 

     

    Redawana & Leat your dinners last night sounded so good.

     

    We lost power yesterday for over an hour. Of course these things happen when it's getting dark.

     

    It's a beautiful day outside, just finished raking leaves and the baby and I just came in for a water break. Time to take our walk and go vote.

    Good Morning everyone,

     

    Well the time change has caught up to me. Was exhausted last night and I can feel it this morning.

     

    DH has headed out on the road, might be home tomorrow night. So that means next 2 no cooking and marathon gingerbread work. Got some of the more delicate construction done yesterday.

     

    Looks like it will be a nice sunny day!

     

    Ellie, have fun today, sounds like you will be very busy.

    Nancy, I hate those calls too. Have a nice walk to the polls.

    I have two kids just starting to sniffle and sneeze. Hoping to stop  colds in their tracks. so just having an easy,restful day today,with lots of echinecea and garlic comsumption.

    DH is at a conference today,but it is just down town. He was cranky this am,so planning a dinner of his favorites. Grilled hamburger steak,baked sweet potatoes,and peas.

    The chicken lasagna turned out better than usual, I'll post the recipe next and my changes.

     Chicken Lasagna

    8 oz lasagna noodles (I use oven ready)

    1/2 cup chopped onion 

    1/2 cup chopped green pepper

    3 tablespoons butter

    1 can condensed cream of chicken soup ( I used crm of mushroom)

    1 6 oz can sliced mushrooms,drained (I omit)

    1/2 cup chopped pimiento,drained (I omit)

    1/3 cup milk

    1/2 teaspoon dried basil,crushed (I was out)

    1 1/2 cup cream style cottage cheese (I just use a whole 16oz carton)

    2 cups diced cooked chicken

    2 cups shredded american cheese (I use sharp cheddar)

    1/2 cup grated parmesean cheese

    Cook noodles in boiling salted water according to pkg directions;drain.

    Cook onion and pepper in butter till tender;stir in soup,mushrooms,milk,pimiento,and basil.

    Lay half the noodlesin a 9x13 inch baking dish

    Top with half the sauce;half cottage cheese,half chicken,and half cheeses.

    Repeat layers except for last two cheeses.

    Bake in a 350 oven 45 minutes

    Top with cheeses bake 2 minutes more.

    Makes 8-10 servings

    I serve this with french bread and a tossed salad

    Leat, thanks for the recipes. That lasagna sounds yummy and is a great way for me to use leftover chicken.

     Picking up the house today and getting ready to study for a spanish test that I have tomorrow.

    Nancy, thats great that you got in and out of the voting booth. I've got to go vote too. Not sure what is on our ballot as we do not get the paper any more. The paper raised their prices and now deliveries a very thin paper on sundays.

    Redawna, how are the toes? My dad broke his while putting up his vampire decorations last week. He didn't show me until the other day.

    Leat: That chicken lasagna looks yummy. I would probably make some of the same changes you suggested! Can't wait to try it.

    I just made a delicious appetizer for my column. I don't want to share it until after it's published next week. Just feel funny about doing that. Anyway...maybe Redawna will do an appetizer thread sometime before the holidays (hint, hint)! LOL

    DH had a great meeting in Houston...hope it all works out. Would really be good for us. I'm saying my prayers.

    Got some invoices to do for the rental and finish another appetizer. Got to get on that so I can take a picture before the sun goes down! I have to think about that now! UGH!

    Just got home from community nursing. Huge line for the flu shot. I decided to let the kids get their H1N1 today. But it wasn't the inhaled one. I do not feel comfortable giving them the live virus. Still working on review for spanish test. I'll post some recipes when I get done. I love stuffing during the holidays.

    Finished the second appetizer. Yummy is all I can say! Both were made with one of my favorite things...puff pastry! Didn't get a great photo, don't know if they can use it. It was cloudy here all day...very grey...hope the sun comes out tomorrow. (Feel like breaking into song!) Anyway...

    Rachelle - I agree about the live virus. Not keen on that either. I'm surprised they give that to children. I can't get the boys the regular flu shot yet. I had an appt for them but then they got sick so they couldn't get it and now the office is out, temporarily. I call every week. What they have they are only giving to infants.

    Redawna - glad the toes are healing!

     

    DS2 came home with a magazine yesterday for kids and it says that Sesame Street is 40 this month. I am older than Sesame Street! What a day spoiler! I thought that had been around forever!

    DH just called from New Orleans. I asked him to bring me crawfish but they are not in season. Bummer. He's bringing a praline though! I'd love beignets but they are not good cold. I kind of hope he's not hungry because I'm stuffed from eating those delicious appetizers! Plus I'm tired of cooking and cleaning up today! The chicken for dinner is already cooked but I just don't feel like finishing it. If we don't have it tonight, I'll make chicken salad tomorrow. That would be good.

    The boys are crabby and going to bed at 6:30 tonight. They need a good nights rest. I watch who gets eliminated on DWTS. Hope it's not the guy from Iron Chef.

    Pumpkin Mousse Cheesecake Recipe

    Ingredients

    • 1 cup graham cracker crumbs (about 16 squares)
    • 3 tablespoons sugar
    • 1/4 cup butter, melted
    • FILLING:
    • 3 packages (8 ounces each) cream cheese, softened
    • 1 cup sugar
    • 1 cup canned pumpkin
    • 3 tablespoons all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 4 eggs, lightly beaten
    • GLAZE:
    • 1/2 cup vanilla or white chips
    • 1 tablespoon shortening

    Directions

    • In a small bowl, combine cracker crumbs and sugar; stir in butter. Press into a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack.
    • Meanwhile, in a large bowl, beat cream cheese and sugar until smooth. Add the pumpkin, flour, cinnamon and nutmeg. Add eggs; beat on low speed just until combined. Pour into crust. Return to baking sheet.
    • Bake at 325° 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.
    • Remove sides of pan. For glaze, melt chips and shortening in a small heavy saucepan or microwave; stir until smooth. Drizzle over cheesecake. Refrigerate until firm, about 30 minutes. Refrigerate leftovers. Yield: 12-14 servings.

    Ahhhh, just sitting for a few minutes. I always have to learn the hard way.......I forgot to put my runners on and me feet are telling me so.  I should remember to leave them in my kitchen, 10 hour standing makes for sore feet. My gingerbread is on the counter so sitting to work on it is not an option.

     

    Anyway, DS is off sledding at the school. It is gorgeous outside! I really should be BBQing.

     

    As for the H1N1 shot......they have stopped all the clinics here. Only pregnant women and children under 5 are getting the rest of the shots. A few things I hear on last nights news. If you get the flu, chances are it is H1N1. They also said immunizing people at this time is pointless.

     

    Ellie, can't wait to see your recipes!!!!!! I will post a few pictures of what I do for low light conditions.
