    non dairy condensed milk

    I need to use condensed milk for many recipes. I cannot tolerate anything with milk.

    Is there a non dairy recipe for condensed milk. I want to make it myself.

     I would appreciate any feedback on this question.

    Soy milk powder and make a thick concentrate with it. Call a healthfood store, they should have soy milk powder.

    Condensed milk is super sweet--so you'd probably also need to incorporate sugar.  There is a recipe for making your own sweetened condensed milk using dry milk--so perhaps you could use that with the soy milk powder?  However, I will say this--I've done the fake condensed milk (with dry milk) and it tasted nothing like the real thing, and didn't cook the same.  So as you experiment, I'd recommend reducing your recipes to small amounts until you see how they work out.

     

    Are you lactose intolerante?  Have you tried the lactaid tablets?  They work wonderfully for me--if that's the problem you're dealing with, perhaps that would be easier than trying to find a viable sub for the sweetened condensed milk.

    There is sweetened and unsweetened condensed milk in almost all stores.

    Not where I live.  There is sweetened condensed milk and evaporated milk.  I'm a home ec teacher and food writer and have never, in my 50 years of cooking ever run across unsweetened condensed milk.  It may be out there, perhaps it's a regional thing? but not in the various areas of the country where I've shopped.

    Evaporated milk IS unsweetened condensed milk...

     

    In the US it's called evaporated milk, elsewhere in the world (like Canada), it's called unsweetened condensed milk.    My Grandmother was from Quebec and she called them sweetened and unsweetened condensed milks.

     

    I have to pay attention to recipes I get from other countries or else I end up with a very odd recipe final product lol

     

     

    to the OP - I've never tried to make a non-dairy version of condensed milk.  If you try it with the soy milk - could you let us know how it turned out?

    Callie, like you said it may be a regional thing but I have bought unsweetened condensed milk (I DO know thw difference between condensed and evaporated even though I am not a home ec. teacher or food writer). IT could also be they discontinued the unsweetend  because it was not a big seller. In my 82 yrs I have been around and bought products in quite a few states, only can't remember in which state(s)  it was that I bought it. They also stopped making the chocolate flavored condensed milk some years ago. 

     All that is really besodes the point since the lady wants NON DAIRY condensed milk and the only alternative I can think of is soy, that is why I suggested a healthfood store.

    At first I thought, I wondered if using the non-dairy powdered coffee creamers and adding just enough water to make them the proper consistency would help, but I realized that the chemical reactions in the recipes would probably be negated by doing this.  

    I sympathize with those cooks who have to constantly modify recipes for health reasons, and I don't have any answers for this lady other than to suggest that she should probably look for compatible recipes to those she wants to prepare.  Let's face it.  If she's allergic to milk products, she is NOT going to replicate granny's pumpkin pie.  It's just not gonna happen.  That doesn't mean she has to give up pumpkin pie!  There are non-dairy versions available, just as there are non-dairy versions of many things.  But not all things.  

    My suggstion to the lady is to stop trying to replicate recipes using substitutes and start looking for tried and true recipes that she CAN eat.  It's one thing to say, "I need a substitute for this ingredient that I cannot find."  It's a whole other ballgame when someone says, "I need a substitute for this ingredient that will make me sick."   

    I don't trust anyone who needs a recipe to make tossed salad.
