Coconut Flour. Does Anyone Use It?

    Coconut Flour. Does Anyone Use It?

     I was just given a container of coconut flour by my nutritionist, who I do cooking classes for. She told me to have fun experimenting. I've made a number of things but have been disappointed by the eggy flavor in the baked goods. 

    Does anyone use coconut flour? Do you have any baking recipes that don't leave an eggy aftertaste because of the large number of eggs needed when baking with this flour?

    You have to use a lot less coconut flour in recipes compared to other GF flours,because it absorbs liquids more.It has a slight coconut taste but has a lot of health benefits.Epicurious has a coconut GF cake recipe on it's site.

    I've have used coconut flour with other GF flours and then did not need to use so many eggs.It can be very dense and filling because of the high fiber content.
