    Attn: My Euro Friends...

    I would love to have your one favorite dish (recipe) to make from your homeland. It could be the most simple to complex. But I would love to know what you love to eat! My family is Irish and Austrian/Hungarian and I guess my favorite dish from A/H descent would be sausages with peppers, onions and mushrooms. My Gramma cooked this often and the smell of it brings a tear sometimes because it reminds me of her home. It's not my favorite dish ever, to eat but it's up there. I don't have a recipe either because it's just simply cooked with salt, pepper and sometimes beer.

     

    Would you share your favorite recipe and story?

     

    Here is my favorite meal to eat!! (It's Italian but I have no Italian blood in me Stick out tongue)

     

     

    Cheese-a-holic Lasagna

     

    This makes a huge pan of lasagna....you'll want to cut it down for less people.

    8-12 Cups Homemade Spaghetti Sauce (not marinara, you’ll want a good meaty sauce)

    1 - 8oz pkg. Cream Cheese softened

    1 – 8oz pkg. Ricotta Cheese

    1 - 8oz container Sour Cream

    2 Eggs

    ¼ - ½ Cup Milk

    3-4 Garlic Cloves minced

    ½ tsp Italian Seasoning Mix

    A Few Cranks of Fresh Ground Pepper

    12-15 lasagna noodles (boiled in salted garlic water)

    2 Cups each shredded Provolone, Mozzarella and Monterey Jack cheese

    1/2 Cup Grated Parmesan cheese

    Cook lasagna noodles till al dente. Rinse with cold water and set aside. Heat spaghetti sauce in the microwave until very warm so that it spreads easily. Mix the softened cream cheese, ricotta and sour cream together until completely blended. Beat in eggs, one at a time. Add enough milk to make the mixture slightly pourable. (You don’t want it to be too runny or too thick). Mix in garlic, Italian seasonings and pepper. Spray the bottom and side of a 9x13 pan. I use a stoneware pan so that nothing burns. Layer first with noodles followed by warm spaghetti sauce, then the cream cheese mixture and about 2 cups of the cheese. Continue layering ending with shredded cheese. Sprinkle top with the grated parmesan. Cover with foil and bake at 350 for 30 minutes. Uncover and bake for another 30 minutes or until cheese is golden and bubbly around the edges. Allow to sit for 10-15 minutes before cutting and serving.

    Alternatives:

    Add a layer of pepperoni on top of each shredded cheese mixture (including the top layer)

    Add a layer of sliced onions on top of each cheese layer

    Cover the top layer of cheese with thinly shaved garlic cloves and sprinkle lightly with olive oil and fresh ground pepper.

    My mother never cooked anything "ethnic".  She was first generation American and did not care to cook anything her mother cooked.  She did on occasion mention a stuffing that her mother made.  Although she never made it herself I remember her talking about it with her sister.  I found a recipe online that sounds like the recipe she mentioned.  It is something I would like to try out one day.

    MEAT STUFFING FOR 12 TO 15 POUNDS OF
    TURKEY
     
    2 lbs. hamburger
    1 pkg. pork sausage
    1 1/2 c. onion, chopped
    1 3/4 tsp. salt
    1/2 tsp. sage
    1/2 tsp. thyme
    1 1/2 c. celery, chopped
    1/2 tsp. pepper
    Mashed potatoes or instant potatoes (12 servings)
    In a 5 quart pot, mix all ingredients except mashed potatoes. Cook until brown and onions and celery are soft. Pour off a little more than half of the liquids. Return to heat for about 5 to 7 minutes. Remove from heat and add potatoes. Mix well. Stuff turkey.

    MAY USE AS POT PIE:

    Mix same as stuffing but add some carrots. Make pie crust for 2 layers. Cook at 425 degrees for 30 minutes until crust is brown.

    Shannon,I will find some Hungarian recipes for you.I forgot about this thread. It is a little bit confusing,where to post.I am very busy at the moment and DD is coming Thursday.We have company from Denver.Cook off today.
