    Bar cookies

    I've been baking all my life, and there is one thing I've never been able to get right. It's bar cookies. I don't mean brownies or others like that. I do just fine with those. The problem is with ones like lemon bars, where you make a crust, bake it for a while, then put another layer on, and bake again. Somehow, the top and bottom never stay together when they're done. Any suggestions?

    Perhaps the crust has cooled too much and is not 'hot out of the oven' when adding the next layer. Or could it be that the crust is baked too long and it is at the 'done' stage.

    Perhaps the problem is that the bottom layer is not "patted" into the baking pan TIGHTLY enough before the middle layer is added? That used to be my problem too, but they seem to be fine if I just take a little more time to press down that very first layer--it just seems to stabilize the middle layer and the crumbly topping, etc.
