Here's a recipe that I found which makes great use of pineapple juice. (we eat a lot of canned pineapple at our house and I always threw out the juice but no more!)

    Pineapple Frappe

    1 can of pineapple juice
    1 cup ice
    pineapple slices if desired

In a blender, combine the juice and ice. Blend. To make it chunkier add a few pineapple slices while blending. Enjoy!!

I posted this recipe a few weeks ago after finding it on another website and really liking it. You really do need to try this one out. It's so simple and very delicious.

    Kim (foxxyroxie_mi)

    HOT VANILLA
    1 cup 2% milk
    2 teaspoons white sugar
    2 teaspoons vanilla extract
sprinkle of cinnamon (or up to 1 teaspoon)
Pour the milk into a microwave-safe mug. Add sugar and vanilla. Place mug in the microwave and heat for 2 minutes, or longer for a warmer drink. Add cinnamon and stir well before drinking. Makes 1 serving.

Some people call this Milk Tea because it doesn't have the cardomom in it but this is my altered version of "chai".

    Kim (foxxyroxie_mi)

    KIM'S CHAI (or Milk Tea)
    6 cups water
    6 tea bags
    1/4 c sugar
    2 t vanilla
    2 t cinnamon
    1 t ground cloves
    1 t ground ginger
    1/2 t black pepper
    6 cups 2% milk
Bring water to boil. Add tea bags and boil for 10 minutes. Remove tea bags. Stir in sugar, vanilla, cinnamon, cloves, ginger and black pepper. Stir to dissolve sugar. Add 6 cups milk and stir. Heat but do not boil. Serve hot.
** I like to bring to room temperature and pour into covered pitcher and keep in refrigerator. It will keep only a couple of days though. The milk may form a filmy layer on top, just remove before pouring into large glass over ice or pouring into mug to reheat in microwave.
