    GROUND BEEF - GROUND BEEF - NOW WHAT?

    Hey folks,

    Doess anyone out there have some fabulous use for ground beef? My DH is going to commit some horrible crime if I feed him baked spaghetti or anything simailar one more time.

    Any and all help would be appreciated.

    My family loves this- I've made twice in 2 weeks!

    Enchilda Bake
    1 c. salsa
    1 can enchilda-mild red sauce
    1 can cream of mushroom soup
    1 can black beans,drained
    1 lb. hamburger meat,cooked-rinsed
    flour tortillas
    shredded cheese
    Mix salsa,enchilda sauce and soup;set aside. Mix the hamburger and beans. In a greased 9x13 pan spread some sauce mixture. cover bottom with tortillas-tear some to fit. sprinke meat mixture. Repeat with tortilla,meat,torilla end with sauce on top and sides. Bake 350* until hot and bubbly. Sprinkle with cheese and let sit for 5 minutes.

    Taste great microwaved the next day. Freezes great too.

    Holly, I just wish that ground beef was health food because I could eat it cooked one way or another just about every day. Try this.

    Meatballs in Mushroom Sauce

    2lbs lean ground beef
    2 slices of dry bread, crumbled
    1 small onion, diced fine
    1/4 c milk
    2 eggs
    garlic powder, salt & pepper to taste.

    Mix together well and make meatballs. Broil on drip pan until browned. Drain on paper towels.

    Sauce
    1 can cream of mushroom soup
    1 can golden mushroom soup
    1 soup can water
    1/4 c dry red wine
    1 small can sliced mushrooms, drained

    Combine sauce ingredients in saucepan, heat to boiling and simmer 15 mins.

    Place browned, drained meatballs in large casserole dish. Pour sauce over all and bake at 325 for 45 mins. Serve with mashed potatoes or noodles.

    Note: you can also make them small and serve as an appetizer. I love them with mashed potatoes

    ROSE'S MEATBALL SANDWICHES WITH LUCINDA - MSL

    For a treat as delicious as this one, the technique is surprisingly simple: Small meatballs are placed between two slices of buttered bread and baked for forty minutes. Food editor Lucinda Scala Quinn provided this recipe, which her mother Rose prepared each Christmas.


    RECIPE
    Rose’s Mini Meatball Sandwiches
    Makes 56

    1 loaf Pepperidge Farm thin-sliced white bread
    1 pound ground pork
    1 large egg
    1/2 cup grated Romano cheese
    1/4 cup finely chopped fresh flat-leaf parsley
    1 clove garlic, very finely chopped
    1 teaspoon Italian herbs
    Pinch of coarse salt
    Pinch of freshly ground pepper
    8 tablespoons (1 stick) unsalted butter, room temperature

    1. Preheat oven to 325°. In the bowl of a food processor, process the heels of the bread to fine bread crumbs. Measure 1/2 cup, and set aside.

    2. In a large bowl, combine pork, egg, cheese, parsley, reserved bread crumbs, garlic, herbs, salt, and pepper. Mix well to combine.

    3. Line a baking sheet with parchment paper. Roll meat mixture into 1-inch balls, and place on prepared baking sheet. Lay two slices bread on work surface. Butter one side of each piece. Place four meatballs on the buttered surface of one slice of bread. Top with a second slice of bread, buttered side down. Press firmly to adhere. Use a serrated knife to cut crusts from bread. Cut sandwich into four equal squares. Transfer to a baking sheet. Repeat with remaining meatballs and bread. (This process can be done assembly-line style, lining up slices of buttered bread and assembling a number of them at a time.)

    4. Bake sandwiches until the meatballs are cooked through, 30 to 40 minutes. Cool briefly before serving.

    RUNZA (Meat Pies)

    4 ½ cups flour, divided
    ½ cup sugar
    2 pkgs dry yeast
    1 t. salt
    ¾ c. milk
    ½ c. water
    ½ c. shortening
    2 eggs

    FILLING:
    1 lb. Lean ground meat
    2 small onions, chopped
    4 cups chopped cabbage
    1 t. salt
    ½ t. pepper

    In a large bowl, place 1 ¾ cups flour, sugar, yeast and salt. Heat milk, water and shortening to 120 degrees. Pour over flour mixture; add the eggs. Beat with an electric mixer on low until blended. Beat 3 additional minutes on high. Stir in the remaining flour; knead until smooth and elastic. Place dough in a greased bowl and let rise in a warm place until doubled, about 1 hour. Meanwhile, brown beef and onions in a skillet. Add the cabbage, salt and pepper; cook until cabbage is wilted. Punch dough down; roll into 12 6 inch squares. Top each square with 1/3 c. meat mixture. Fold into triangles. Pinch edges tightly to seal and place on greased baking sheets. Bake at 350 degrees for 20 minutes or until golden brown. Serve hot. Yield: 12 servings.

    I have to admit that I've been "cheating" and using Rhodes frozen rolls, thawed and rolled out for the pockets. Saves a lot of time and I think it's very good. Enjoy!

    This recipe is simple...and delicious. I make it often, and everyone always enjoys it.

    Chunky Tomato Pasta Bake

    -8 ounces uncooked tube pasta
    -1 pound lean ground beef
    -1 small onion, chopped
    -dash of garlic powder, salt and pepper to taste
    -1 can Diced Tomatoes seasoned with Green Pepper and Onion (Del Monte brand)
    -1 can Cream of Mushroom soup
    -1 1/2 cups shredded Mozzarella cheese

    Cook and drain pasta. Brown ground beef and onion in a large skillet, and add garlic, salt and pepper. Combine browned meat with pasta, tomatoes and cream of mushroom soup in and 11x9 baking disk. Cover and bake at 350 for 25 minutes. Uncover and top with shredded Mozzarella cheese. Bake about 3 or 4 minutes or until the cheese melts.

    I modified this from a couple of recipes a while back, and it is so tasty.

    I use to make Salisbury steak for my DH. It's so easy and good.
    1 lb. hamburger
    2 T minced onion
    2 T minced bell pepper (red or green)
    1 T minced celery
    1/4 c bread crumbs (plain)
    1 egg (beaten)
    1/2 t garlic pdr.
    1/4 t pepper
    1/2 t salt
    Mix altogether and form into 6 oz. meatloaf shaped patties. Brown in skillete on both sides, in little oil. Then add 1 to 2 cups water, cover and let cook on low till done. I then add 6 oz. sliced mushrooms. Then I make a rue or use cornstarch and water to thicken. Makes great gravy. Serve with mashed pot and a veggie and you have a great dinner.

    How about one of these?

    Hamburger Casserold

    1 lb. ground beef
    1 cup chopped onion
    2 71/2 oz. cans tomato sauce
    1 cup sour cream
    1 cup mozzerella cheese (shredded)
    1 T. oil
    1/2 tsp. garlic powder
    salt and pepper to taste
    1 cup cottage cheese
    Cook 2 cups egg noodles.Drain and put in greased casserole dish.Brown meat and discard fat.Add onion, garlic, and tomato sauce,salt and pepper to meat.Simmer gently for 15 min.Pour over egg noodles in cassweold.Spread sour cream over meat.Spoon cottage cheese over top layer and cover completely with mozzarella cheese.Bake 350 for approx. 1/2 hour in 9x13 pan or till bubbly and cheese is melted.

    Sloppy Joes
    1/2 cup chopped onion
    2 tbsp. oil
    3/4 cup ground beef
    1/4 cup water
    1 T. flour
    1 can tomato sauce
    1 can tomato soup
    1 T. brown sugar
    1 T. vinegar
    3 T. soya sauce
    6 hamburger buns, toasted
    Cook onion in oil till tender.Drain on paper towel and return to pan.Add ground beef.Brown beef, cooking in some water.Remove ground beef and drain.Add flour and tomato sauce in pan;mix.Add ground beef and remaining ingredients.Put on buns and serve.

    how about some sweet &sour meatballs..
    These are delicious and make the house smell soooo good while they bake!
    Here is the recipie for the saucejust use your favorite meatball recipie the sauce will go great with any meatballs.
    Here goes:
    1/2cup brown sugar
    1/4 cup vineger
    3/4 water
    1/2tbspdry mustard
    1 cup ketchup
    Bring all these ingrediants to a boil on stove.
    Transfer over cooked meatballs in a casserole dish.
    Bake covered for about 60 min at 350.
    Check and stir half way through .
    Goes great with a side dish of white rice!
    Enjoy your hubby will love this!

    My husband and son in law do NOT like meat loaf...you'd never know it when I set this on the table! this is wonderful. I double the sauce...I like to put half of the meat mixture in..sauce and cheese then top it w/the rest of the meat cheese and put sauce as directions say.

    Ingredients:

    2 pounds ground beef
    4 slices white bread -- soaked with water, squeezed out and broken into tiny pieces
    3 eggs
    1/2 cup grated Romano cheese (I can't find any grated Romano cheese, so I've only ever made this with Parmesan cheese)
    1 teaspoon dried parsley
    1/4 cup minced onion (I use about 1/2 a cup)
    salt and pepper to taste

    1. In a large bowl, combine the ground beef, bread, eggs, cheese, parsley and onion and season with salt and pepper to taste.

    2. For meatballs: Form mixture into golf size balls and brown in a large skillet over medium heat for 5 to 10 minutes, oruntil well browned. Add to your favorite spaghetti sauce and simmer until meatballs are completely cooked through, about 15 to 20 minutes.

    3. For meatloaf: Preheat oven to 350 degrees F. Add 3 tablespoons ketchup to mixture, mix well, form into a loaf and place in a 9 x 13 inch baking dish. Bake for 75 to 90 minutes.

    4. For burgers: Add 3 to 4 tablespoons steak sauce to mixture, mix well and form into patties. Saute in a large skillet over medium heat for 10 to 15 minutes, or until desired doneness.

    1/2 cup ketchup
    1/3 cup brown sugar
    1 tablepoon lemon juice
    1 teaspoon mustard powder.

    I mix these in a small bowl after I put the meatloaf in the oven, and then 10 minutes before the meatloaf is done, I put the glaze on the meatloaf.......MMMMM, MMMMMMM Good!

    Make some homemade mashed potatoes -- too good!

    This is a recipe that comes from my wife’s side of the family and this is what they named it.
    We’ve been making this for years, and my son in law who’s been with us for 8 years still requests it frequently. It’s simple and easy to throw together and what I consider a comfort food.

    Garbage

    10-12 med potatoes, thin sliced
    1 lb lean ground beef
    1 med. onion chopped
    1 tsp garlic powder
    1 tsp chili powder
    black pepper
    2 (15.5 oz.) cans chili beans w/sauce
    2 (10.5 oz.) cans cream of mushroom soup
    ½ cup milk
    2 Tbs oleo or butter

    Preheat oven to 350°.
    Grease or spray a 9x13 baking pan.
    Slice potatoes and place them in a bowl of cold water.
    In a skillet brown ground beef half way, drain.
    Add onion, garlic powder and chili powder, finish browning meat.
    Stir in beans, soup and milk. Continue heating and stirring until
    hot all the way through.
    Place a layer of potatoes in baking pan, season lightly with pepper,
    then cover with a layer of meat and bean mixture.
    Alternate layers until the pan is full, ending with a layer of potatoes.
    Dot with oleo or butter. Cover with foil, place on a cookie sheet in oven
    And bake for two hours or until potatoes are tender all through the dish.
    Serves 6-8.

    Hamburger fried rice;
    Brown approx 1 pound ground beef with some green onion in a little oil add seasonings such as garlic powder salt and pepper to taste.
    Add chopped green pepper, chopped celery , more onions if desired,1 can mushrooms drained ,3 tablespoons water
    Cook on med heat till vegies are tender then add about 4 cups cooked white rice and then add desired amounts of soya sauce while cooking.
    just cook until the rice is warm and has blended well with the mixture. stir well

    Here are 2 very good ground meat dishes. They are both made with pasta.

    Beef Cabbage Bake

    1-1/2 lbs cabbage, corsley chopped
    1/2 c dry elbow macaroni
    1 lb lean ground beed
    1 c chopped onion
    1/2 tsp salt
    1/4 tsp pepper
    1 can stewed tomatoes
    1 can tomato sauce

    Spray frying pan with non-stick cooking spray. Add beef, onion, salt and pepper. Scrable-fry until brown and onion is soft. Layer in 2 qt casserole as follows:
    1/2 cabbage spread macaroni over top.
    Layer ground meat mixture over top of macaroni, add second layer second layer of cabbage.
    Stir stewed tomatoes and sauce together. Pour over all. Do not stir. Cover. Bake in 350 degree oven for 1-1-1/2 hours until cabbage & macaroni are tender. Makes 6 serving. Serving: 229 cal, 7.6 g fat

    Taco Pasta Casserole(serves 6-8)

    1 lb ground beef
    1 pkt taco seasoning mix
    1 tbsp butter
    1 large onion, chopped
    1 large green pepper, chopped (optional)
    1 large box shell pasta
    2 cans stewed tomatoes
    1 jar chunky salsa
    2 c. cheddar cheese, grated

    In large skillet over med heat, brown meat and drain. Add taco seasoning mix as directed on the pkg., blend and reserve. In same skillet, saute onion and peppers in 1 tbsp butter until tender. Cook pasta as directed on pkg and drain.
    In 9x13" baking pan, spoon stewed tomatoes into the bottom of pan to cover. Layer remaining ingredients in the following order: pasta, meat mixture, salsa, and cheese. Repeat layering until dish is full, making sure to finish the top layer with cheddar cheese.
    Bake in a preheated 400 degree ovcen for 25-30 min. Remove from oven and let stand for 5 min. serve warm. Garnish with lettuce, tomatoes,green onion, and sour cream if desired.
