    Artichoke Dip:
    8oz.cream cheese,softened
    1/2cup mayonaise
    1cup fresh grated parmesan cheese
    1tsp. dill weed 1(14oz.)can artichokes in water,chopped
    1/2tsp. garlic powder
    Preheat oven to 350F.Combine crean cheese and mayonaise with mixer.Add parmesan cheese.dill weed and garlic powder.Mix until blended.Stir in artichokes and place in a loaf pan or pie plate & cook until bubbly(20 to 30 min)Serve warm.

    Jalapeno Cheese Squares
    1lb.Longhorn cheese
    1lb. Monteray Jack cheese
    4oz. jalapeno peppers(or more)
    2 eggs
    1cup evaporated milk
    1/2cup flour
    Grate cheese.Layer cheese and peppers in a 9in. pan.Mix milk,eggs and flour.Pour over top.Bake for 45 minutes.Cool;cut into squares.

    Corn Dip
    3 cans Mexicorn,well drained
    1lb.shredded sharp cheddar cheese(not pre-shredded)
    1 bunch green onions,chopped well
    1/4 to 1/2 cup chopped cilantro
    juice of 1/2 lime
    chili powder to taste
    cayenne pepper to taste
    Mix all ingredients well.Set several hours or overnight before serving.

    Mexican Corn Dip
    36oz.frozen corn,thawed
    1 can green chiles
    2 jalapenos,seeded and chopped
    1/2cup green pepper,chopped
    1/2cup red pepper,chopped
    6 green onions,chopped
    Cook corn 5 min;drain and cool.Add the remaining ingredients and mix well.
    Add:
    10 oz.sharp cheddar cheese,grated
    1cup sour cream
    3/4cup mayonaise(no sub.)
    Mix all together,taste for salt and pepper seasoning.

    Tortilla Rolls
    8oz. sour cream
    4oz. picante sauce
    8oz. cream cheese
    4oz. chopped black olives
    8oz. grated cheddar cheese
    1 bunch green onions,sliced thin
    1/4cup cilantro,chopped
    Blend sour cream,picante sauce and cream cheese thoroughly.Add remaining ingredients and mix well.Spread mixture evenly on a flour tortilla.Roll up and place in a airtight cotainer.Refrigerate overnight.Slice and serve with picante sauce and guacomole.

    Whiskey Balls
    2cups vanilla wafer crumbs
    1 1/4cups confectioners sugar,sifted(divided use)
    1cup chopped pecans
    6Tbsp. Whiskey(or MORE)
    1 1/2Tbsp. cocoa
    Mix crumbs,1cup confectioners sugar,pecans,cocoa and whiskey together.Form into walnut sized balls and roll in additional sugar.Chill until ready to serve.Makes about 40.

    Bourbon Balls
    2Tbsp.cocoa
    1 1/2cups confectioners sugar(divided use)
    1/4cup bourbon
    2tbsp. corn syrup(light)
    2 1/2cups crushed vanilla wafers
    1cup chopped pecans
    Sift cocoa and 1cup confectioners sugar together.Combine bourbon and corn syrup and blend into cocoa mixture.Add vanilla wafers and pecans and mix well.Pinch off enough to make small balls.Roll in remaining sugar.

    I made this up a couple of years ago and we love it.The recipe is per 2 servings so adjust accordingly.
    Southwestern Shrimp Cocktail:
    6 large shrimp,cooked,cooled and cut into 3 pieces each.
    1 avocado,pitted and cut into same size pieces as shrimp
    1/2 jalapeno,seeded and minced
    juice of 1/2 lime
    2Tbsp. cilantro,chopped
    Cocktail sauce
    Mix all of the ingredients except cocktail sauce.Add enough cocktail sauce to cover and mix.Serve in fluted wine glasses.

    Onion strings:
    1/2cup milk
    1/2cup flour
    1/2tsp.sugar
    1/2tsp.salt
    1/2tsp.pepper
    1/2tsp.cayenne pepper
    1/2tsp.garlic powder

    1/2cup flour
    1/2cup corn meal
    1tsp garlic powder

    1 large onion,cut into thin rings and the rings cut in half to form the "strings"
    Mix first group of ingredients into a medium thick batter.Put the onions in the batter,stir well to cover,and let the onions sit for about half an hour
    Mix remaining flour,corn meal and garlic powder.remove strings from batter,keeping a small amount of batter on strings,dredge in the flour-corn meal mixture and fry about 5 minutes until crisp.Serve with honey,catsup or a mixture of mayo,sour cream and cayenne pepper to taste.

    Mom's Beef Stew:
    My Mom taught me to make her stew when I was about 9yrs.old.Haven't changed it much since then.Just that good.
    2lbs. chuck roast,cut into small pieces,browned,drained.
    1lb. carrots,peeled and sliced
    1med. onion,chopped
    1lb. green beans,snapped into pieces
    2 baking potatoes,peeled and chopped
    1 can whole kernel corn,drained
    1 can chopped tomatoes,undrained
    1(8oz.) can tomato sauce
    2 clove garlic,minced
    1Tbsp. chili powder
    salt and pepper to taste
    Put all into a dutch oven,cover with chicken stock,cover pot,bring to a boil then simmer for 2 hrs.(can sub canned carrots and green beans)

    Depo's Cola Roast:
    1tsp. salt
    1/2tsp. pepper
    4lb chuck roast
    3Tbsp. vegetable oil
    !/4cup Coca Cola
    12oz.Chili sauce
    2Tbsp. Worcestershire sauce
    2Tbsp.hot pepper sauce
    1/2tsp. garlic powder
    Preheat oven to 325F.In a small bowl mix the salt, pepper and garlic powder;rub over roast.In a roasting pan,heat the oil to hot and brown the roast on all sides.Combine all the rest of the ingredients;pour over roast.Cover and roast for 2 1/2 to 3 hrs.

    Coca COla Pork Chops:
    6-8 pork chops
    12 to 16oz. Coca Cola
    3Tbsp. prepared mustard
    6Tbsp. ketchup
    dash of pepper 1 can sliced mushrooms(or fresh)
    dash of garlic powder
    Brown pork chops on both sides.Remove.Slice onions and stir fry.Remove.Add all other ingredients then put pork chops and onions back into the skillet.Cover and simmer for 45 min.Serve over rice if desired.

    Creole Shrimp:
    3Tbsp. flour
    3Tbsp.bacon fat
    1 can tomatoes
    6Tbsp.onion,chopped
    6Tbsp.bell pepper,chopped
    1 1/2Tbsp. parsley,chopped
    1 clove garlic,crushed
    1 1/2cups water
    2tsp. salt
    1/2tsp. pepper
    1 lb lge. shrimp
    Make a roux with the flour and bacon fat(I cook mine slowly till it reaches a color between tan and brown)Add all the rest of the ingredients except the shrimp,bring to a boil then simmer 20 min.Add the shrimp and cook 10 min.Serve over rice and with some garlic french toast.
