    M Wolverine's Favorite Recipes

    I'll open this with the recipe that seemed to go over quite well with many of you even though the name leaves something to be desired.

    Garbage

    10-12 med potatoes, thin sliced
    1 lb lean ground beef
    1 med. onion chopped
    1 tsp garlic powder
    1 tsp chili powder
    black pepper
    2 (15.5 oz.) cans chili beans w/sauce
    2 (10.5 oz.) cans cream of mushroom soup
    ½ cup milk
    2 Tbs oleo or butter

    Preheat oven to 350°.
    Grease or spray a 9x13 baking pan.
    Slice potatoes and place them in a bowl of cold water.
    In a skillet brown ground beef half way, drain.
    Add onion, garlic powder and chili powder, finish browning meat.
    Stir in beans, soup and milk. Continue heating and stirring until
    hot all the way through.
    Place a layer of potatoes in baking pan, season lightly with pepper,
    then cover with a layer of meat and bean mixture.
    Alternate layers until the pan is full, ending with a layer of potatoes.
    Dot with oleo or butter. Cover with foil, place on a cookie sheet in oven
    And bake for two hours or until potatoes are tender all through the dish.
    Serves 6-8.

    Dodge Hash

    1/2 cup diced cooked ham
    1/2 cup diced chopped green pepper
    1/2 cup chopped onion
    4 cups frozen shredded hash browns

    Mix all the ingredients together and grill in the George until the potatoes are tender and the veggies are crisp tender.
    This goes great in the morning with fried or poached eggs and toast.

    John, when I was a child (way back when), my girlfriends mom made a dish such as yours. They called it Mess.

    Might as well put one of my favorites down here too. It's called Shrimp Florentine. Even folks who don't like spinach love this dish.

    Shrimp Florentine

    1-pound large shrimp - shelled, cleaned and rinsed
    1 (10 ounce) package frozen leaf spinach
    6 Tablespoons butter
    2 Tablespoons flour
    1 pint heavy cream (or 2 cups milk if you prefer)
    4 large egg yolks, slightly beaten
    1/4 - 1/2 cup parmesan cheese - grated (depending upon how much you like parmesan cheese)
    Salt and Pepper to taste
    1. Preheat oven to 400º
    2. In a small pan, cook the spinach as per packaged directions and drain it thoroughly
    3. In a medium sized skillet or pot, sauté the cleaned shrimp in 4 Tablespoons butter till they turn pink, about 3-5 minutes. Remove shrimp
    4. In the same skillet or pot, melt the remaining 2 Tablespoons butter and stir in the flour to make a smooth paste (roux).
    5. Gradually add the cream to the pot and continue stirring until the sauce thickens
    6. Add the slightly beaten egg yolks and heat the mixture but do not let it boil
    7. Season with salt and pepper to taste
    8. Butter a 3 quart casserole dish and place the cooked, drained spinach in bottom of casserole
    9. Layer the cooked shrimp over the spinach
    10. Pour the sauce over top and then sprinkle with the parmesan cheese
    11. Cover and bake at 400º for about 15 minutes
    12. Remove the cover and place under the broiler for 5 minutes to melt the cheese

    your dodge hash brings back great memories for me! My grandpa would make me "western breakfast" when I was a little girl, and it was mixture of scrambled eggs, ham, green peppers and pre cooked potatoes from the previous night's dinner. it was my absolute favorite and reminds me how much I miss him. I think I am going to have to make a batch of that for my family this weekend. thanks for sharing..and the memory!
