I got my new issue of Healthy Cooking in the mail yesterday and just have to comment on how tacky the Holiday Hero section is. It is hard to read and is just overall distracting. I enjoy the magazine because its recipes feel &amp;quot;safe&amp;quot; and yet push me to try new things. And most times, those new things I try are delicious. I hope my ideas and recipes will be of a wanted kind.My inspriration was my husbands love of my soups.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Here is one soup that is low fat and made for such a dietary need during the early stages. &lt;/p&gt;&lt;p&gt;4 cups of &amp;quot;no fat&amp;quot; chicken stock&lt;/p&gt;&lt;p&gt;2 carrots, 3 stalks celery peeled of all strings,1 medium onion, 3 clove garlic,1 cup shredded zucchini-seed area removed, 1 cup diced hubbard squash, 1 cup canned spinach.&lt;/p&gt;&lt;p&gt;2 cups V8 juice.&lt;/p&gt;&lt;p&gt;In olive oil saute garlic &amp;amp; onion, add other veggies, season with (I use season salt) as desired.&lt;/p&gt;&lt;p&gt;V8, and stock. &lt;/p&gt;&lt;p&gt;Cook on medium heat until veggies are very soft. Let cool completly. Its a take on Dr. Oz&amp;#39;s green drink but I packed more into it and give it to my unhealthy hubby about 3 times a day and he enjoys it. His health is so much better&lt;/p&gt;
&lt;p&gt;1 c. spinach, 2 stalks celery deveined, 1/2 inch ginger (or 1/2 tsp), 1 apple with skin on, 1 cucumber with 1/2 skin removed, juice from 1/2 lemon (or 1/2 TBLS), juice from 1 lime or 1 TBLS, 1 or 2 bananas, 1/2 cup parsley, 1 to 1 1/2 cups vanilla yogurt, 1/2 to 1 cup favorite fruit juice.&lt;/p&gt;
&lt;p&gt;Sometimes I throw in&amp;nbsp;about 1/2 bell pepper then I add alittle&amp;nbsp;more fruit&amp;nbsp;juice.&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Put this all in the blender and really mix it up. It makes about 1/2 gallon which I store in fridge and we drink it in about 2 or 3 days. &lt;/p&gt;
