Thank you for that tip, it's time for me to start cooking lighter, even though it has only been in the 50's here in Milwaukee. For Pete's sake I made meatloaf this week! I'm going to try the ranch chicken salad for my family, it sounds great.

This was wonderful! I just cannot say enough good things about this recipe. Everyone (even my pickiest eater) gobbled this up and then asked for more.

The chicken was so very moist and delicious. I am thinking that this chicken would be wonderful on it's own even.

I did save myself some time and bought a bag of salad mix that already had the carrots shredded up in it. I left out the celery as we are not big celery fans around here. But I loved the salad with the apples in it. My children loved that little bit of sweet mixed in too.

This has been added to the menu for next month already! It has also been added to the "company's coming for dinner" list. I have never had a salad make that list before so I am very excited as we have some friends that love to eat healthy. So now I know I have a wonderful meal that they will enjoy and not feel quilty about later.
