is from the new one that my revised version of albondigas soup is in. I
have been drooling over the picture (LOL). THis is from the new book
101 Christmas Recipes.&lt;/p&gt;
&lt;p&gt;Its very good. Its a bit drier than my lasagna recipe and I miss the
sausage being in there. The spinach is a nice addition. It is actually
very similar to my lasagna recipe but it uses more cheese. This would
be a pretty thing to have around Christmas because of the red and
green.&amp;nbsp;I would say it is good enough to serve company. I think I still
prefer mine, but there is&amp;nbsp; nothing whatsoever wrong with this recipe.

&lt;p&gt;Lasagna Florentine (Gooseberry Patch 101 Christmas Recipes)&lt;/p&gt;

&lt;td colspan="3"&gt;&lt;font size="2"&gt;1 lb ground beef&lt;br /&gt;1/2 c. onion, chopped&lt;br /&gt;2-3 cloves garlic, minced&lt;br /&gt;26 oz jar spaghetti sauce&lt;br /&gt;16 oz container cottage cheese (I used ricotta cheese, low fat)&lt;br /&gt;10 oz pkg frozen spinach thawed and drained&lt;br /&gt;12 oz pkg shredded mozzarella cheese, divided&lt;br /&gt;1/2 c. grated Parmesan cheese, divided&lt;br /&gt;2 eggs, beaten&lt;br /&gt;9 lasagna noodles, cooked (I used 9 no bake lasagna noodles and did not cook them)&lt;br /&gt;&lt;br /&gt;Preheat
oven to 350. Brown ground beef with onion and garlic. Drain. Stir in
spaghetti sauce; set aside. In large bowl combine eggs, ricotta, 2 cups
of mozzarella, 1/4 c. Parmesan, and spinach. In greased 9 x 13 pan
layer 1/3 of sauce mixture, 3 noodles, and half of the cheese/spinach
mixture. Repeat layers. Top with remaining 3 lasagna noodles, then
remaining 1/3 of sauce. Sprinkle with remaining mozzarella cheese and
remaining Parmesan cheese. Bake at 350 for 45 minutes. You can cover
with foil for the first half hour if desired (I did not). Let stand 10
minutes before serving. large skillet, stirring until sausage crumbles and is no longer pink;
drain. Add spaghetti sauce, wine or broth, parsley and salt, stirring
well. Cover and simmer 10 minutes, stirring occasionally. Remove from
heat and set aside.&lt;/font&gt;&lt;br /&gt;&lt;br /&gt;&lt;font face="Arial" size="2"&gt;Combine
ricotta cheese and next 5 ingredients, stirring well. Spread ricotta
mixture evenly over lasagna noodles. Roll up jelly-roll fashion,
starting at narrow end. Place lasagna rolls, seam-side down, in a
lightly greased 13&amp;quot;x9&amp;quot; baking dish. Pour meat sauce over rolls and

fresh Basil. Serves 6-8~~ Hmmm?&lt;br /&gt;&lt;br /&gt;Small Tarts&lt;br /&gt;Use a saucer as a
guide and cut out desired amounts of tarts( 1 frozen pie crust will
yield 3) I used shredded 6 Italian cheese blend in this recipe and I
placed about 2 Tbs per tart,scattered each tart with chopped tomato( 1
tomato)used 1 Tbs of chopped basil per tart and a scatted the minced
garlic over the basil. Used less than a 1/4 cup of mayo and 1 Tbs each
more cheese blend and 1 Tbs of parm cheese. Did not use all of this
mixture on top. I also added some additional chopped tomatoes on top.
Baked at 375 for about 17 minutes, check after 15. I also sprinkled
some truffle oil on top as well. Great little savory pie~~ Just build
