&lt;p&gt;I love Granny Smith apples for baking. Well, for eating too. I tried the ones that were all the rage last year, the Honey Crisp, and while they were good, I prefer a tarter apple, so I went back to the Grannies. &lt;/p&gt;

Coconut is one of those things that people feel passionately about...I am passionate for it, but I know many people cannot stand it, so it&amp;#39;s better to be safe than sorry if you don&amp;#39;t know. But I LOVE the idea of a version with coconut in it and am definitely saving it. Thank you so much!&lt;/p&gt;

Apples were throughout the cake) This is a real keeper and I am going to make this cake again and again and this fall it is getting made, without the topping, and I am going to freeze and vac pack and ship to Iraq, I think it will do great, but will make those in loaves. &lt;p class="MsoNormal" style="MARGIN:0in 0in 10pt;"&gt;&lt;font face="Calibri" size="3"&gt;1 cup firmly packed brown sugar&lt;/font&gt;&lt;/p&gt;

&lt;p class="MsoNormal" style="MARGIN:0in 0in 10pt;"&gt;&lt;font face="Calibri" size="3"&gt;1 tsp vanilla&lt;/font&gt;&lt;/p&gt;&lt;font face="Calibri" size="3"&gt;&amp;nbsp;&lt;/font&gt; 
&lt;p class="MsoNormal" style="MARGIN:0in 0in 10pt;"&gt;&lt;font face="Calibri" size="3"&gt;Preheat oven to 350. Grease a 9 inch tube pan or a Bundt pan, set aside.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;In a large bowl, beat eggs with an electric mixer, mixing well. Add vanilla and sugar, beating well. In another bowl sift together 2+3/4 cups flour, baking soda, salt cinnamon and nutmeg. Add to egg mixture. Combine remaining ¼ cup flour with apples, nuts and coconut. Fold fruit mixture into bake batter, pour into prepared pan. Bake for approximately 1 hour and 10 mins. Remove from oven and let sit for 5 mins. Remove cake from pan. Meanwhile, combine topping ingredients in a saucepan and bring to a boil. Boil for 2-3 mins. Pour hot topping over warm cake. &lt;/font&gt;&lt;/p&gt;

But I have raved and raved about that darned cake, and Kerry was here to enjoy it before he deployed and he took leftovers to work, still raving about it. That cake is such a keeper, I am going to check your Momma&amp;#39;s favorite out here as well, but I saw the name and thought I would share on the South recipe that I posted too. &lt;p&gt;&lt;br /&gt;This was my mother&amp;#39;s favorite cake to bake particularly in the fall to carry to church dinners.&amp;nbsp; &lt;/p&gt;
&lt;p&gt;&lt;br /&gt;Apple Dapple Cake&amp;nbsp; &lt;br /&gt;&amp;nbsp;&lt;br /&gt;&amp;nbsp;&lt;br /&gt;An apple lover&amp;#39;s cake for sure!! Very moist with a carmel-like frosting. Great for serving guests and for family celebrations. This recipe has been used frequently by my relatives. &lt;/p&gt;
&lt;p&gt;&lt;br /&gt;SERVES 14 &lt;/p&gt;
&lt;p&gt;3 eggs &lt;br /&gt;1 1/4 cups vegetable oil &lt;br /&gt;1 2/3 cups sugar &lt;br /&gt;1 1/2 cups pecans, chopped &lt;br /&gt;3 cups tart apples, chopped &lt;br /&gt;3 cups plain flour &lt;br /&gt;1 teaspoon salt &lt;br /&gt;1 teaspoon baking soda &lt;br /&gt;1 teaspoon vanilla &lt;br /&gt;Frosting &lt;br /&gt;1 cup brown sugar &lt;br /&gt;4 tab lespoons butter &lt;br /&gt;1/4 cup milk &lt;/p&gt;
&lt;p&gt;&lt;br /&gt;Beat eggs and mix with sugar, oil and vanilla. &lt;/p&gt;
&lt;p&gt;&lt;br /&gt;Combine flour, salt and baking soda and add to egg mixture. &lt;/p&gt;
&lt;p&gt;&lt;br /&gt;Fold in apples and pecans. Pour into greased and floured tube cake pan. &lt;/p&gt;
&lt;p&gt;&lt;br /&gt;Bake at 350 degrees for 1 hour. &lt;/p&gt;
&lt;p&gt;&lt;br /&gt;For Frosting: &lt;/p&gt;
&lt;p&gt;Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Cool and spread on cake.&lt;/p&gt;
&lt;p&gt;&lt;br /&gt;I added finely chopped nuts to the frosting for added delight! &lt;/p&gt;
