Carol ~ Thank goodness ~ Grass needs cutting and Gs has been working on some additional trimming ~ Even though the landscapers did a very good job there is still much to do.

We too had a quiet day yesterday. Quit working around 2 ~ Then watched the Phillies, nip the Mets ~ Go Philllies ~ Between that and the Golf match it was a sporty afternoon. Made a very good appetizer` Hot crab dip ~ absolutely excellant ~ Had to sit and pick through 3 crabs, but it certainly was worth it ~ The crabs have been huge this year~ a little pricy but none the less very meaty and sweet.

~M~ I know what you mean about the dress wear ~ I never know till I am finally out of time, so I just grab and dress. I can remember in the past where I have changed several times ~ Mr just shakes his head in amazement~ Like whats the problem ~ Boy I'm glad I don't have to make such hard decisions. lol ~

Going to make a burger bundle tonight ~ Took some meat loaf mix out of the freezer. It should be interesting as its a newbie for us ~ You basically make a stuffing mix then spread it over the seasoned meat~ Roll the whole thing up, cut it into portion sized pieces and place in a greased dish. Spread some mushroom soup and bake ~ I have been thinking about the topping and I may go for a brown gravy instead of the mushroom ~ Dava, I've been a good girl and its only a little treat ~ No burgers over the Holiday ~ nor taters, nor chips . So its a little reward ~

I'll check back later on ~ Must heat my confounded coffee ~ Janie

Re: Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

Hi All,

Dava your dinner sounds yummy but I seem to have missed my invitation.

Janie I am seeing brown on my weeds me thinks the stuff is starting to work. Hurray !!!

Margaret would you like me to put you in touch with my fashion maven Michelle? I'm telling you she could lay it all out for you she lives for fashion. Isn't it the style now to go stockingless so get a pedicure and wear stappy sandals and pearls or diamonds are always in for jewelry.

Last nights burgers were stuffed with a slice of raw onion, cheddar cheese and cooked bacon and all but Roger loved them. I told Erica that when she makes them next time that she should caramelize the onion first and let the cheese come to room tempature. I would certainly fix them again. Tonight we are having leftovers I threw some l/c bbq sauce into the extra burger meat to go with the beans and salad. We kind of layed around all day doing nothing which is nice sometimes. The fireworks around here were very quiet last night, I have a hunch someone got caught on Friday night because there were very loud booms and a car went by the house and all of a sudden no more fireworks. I can only hope it will stay quiet.

Carol

Re: Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

Hi-

Dava...glad to see you zipping through! Hope you'll get a chance to visit again soon!

Janie= sounds like a lovely day...we're sunny and mild here...whew! Steve just did a 50 mile bike ride in preparation for his big bike trip at the end of July...I get tired just thinking about it! I have been doing 30 minutes a day on the treadmill- it's not much, but it's something...and it's a start!

Went to Walmarts today for some stuff- did find the Heinz Low Sugar Ketchup ( it used to be called One Carb, I believe) - also, the Mt. Olive No Sugar Sweet Relish...so good! I also notice that Kraft now has a low sugar barbecue sauce- reduced calories, sugar, etc...and very inexpensive!

I'm still agonizing about clothes for this wedding weekend- I have some nice outfits- fortunately, a knock out dress for the wedding- but we also have the rehearsal dinner, etc....shoes, a slip, stockings, jewelry, handbags, etc...so much to coordinate...and this I'm not good at!

Oh, well...it'll be fine!

We're doing something easy tonight- maybe a ham steak or a couple of hotdogs- use up what we have- don't want to load up on stuff before we leave on Wed.

See you later, dear ones!

M.

Re: Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

What a Beautiful Morning it is !~ The sun is Brillant and the wind is gone ~ Thanks goodness, as it kind of put a damper on things yesterday ~ The evening in fact was on the cool side. But today Mother Nature is showing her best ~

Howdy to the flyby ~ lol ~ You certainly do have a heavy work schedule. But its nice that you will be getting a little breather today ~ Ribs sound good and they are so popular ~

Can't decide what we will have for todays treat ~ Maybe I will just wing it ~ lol ~ Must be plum cooked out~

~M ~ Glad you played with the recipe, Its amazing how a few changes can Make or Break a recipe and it usually is the spices ~

Came across a real great sounding Baked Mac and Cheese recipe ~ I think it may be one of Rachel Rays ? I'll scout it down. Been thinking about M&C for a while now. Mr bought some local corn on the cobb ~ Yuck ~ Startchy and gummmy ~ One tough bite was enough for me.~ But one thing that was very good was the Lemon Cheesecake Squares~ very, very light~ I didn't have any grham crackers so I used Lorna Doones ~ (Hope Dava left) The filling was very light and puffy and the cookie base was very good ~ Some of it did crumble slightly but none the less decilious ~ I served ours with some fresh blueberries. Another nice feature is that it is fairly small. It calims to make 16 squares, and that's probably true but they are going to be very small appy sized squares.

Fireworks may have been on hold last night due to the wind as I didn't hear or see a thing ~

Hope you all continue to enjoy the Holiday ~ Janie

Re: Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

Good Morning!!!!!!!!

Yup,another fly thru post from me! I've been working and haven't had time to play much!

I hope everyone had a wonderful 4th! Our cookout will be today! I started BBQ ribs last night and they are still cooking away and almost ready for the sauce to be added. Were gonna have corn on the cob, cake,a veggie tray and lots of other sides. We have the games ready to go and all I really need to do now,is get the house cleaned and shower. All I WANT to do is go back to bed and sleep for a week.

I have to work tomorrow and Tuesday,so maybe I can get here on Wednesday and visit for a bit more and reply to all!

ENJOY the long weekend and I hope to see you all Wednesday.HUGS to Patrice!

Re: Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

Good morning!

I'm out the door in a couple of minutes- yup, at this hour- to check on my brother's dog- take him for a morning walk, feed him, etc.

Here's the recipe I made- thanks, Janie- and some minor changes..

Scalloped Tomatoes

Ingredients

3 slices of bread toasted and buttered

1/2 cup chopped celery

1/2 cup chopped onion

3 medium tomatoes, peeled and cut up or (16-oz) can of tomatoes ( used a can of diced tomatoes, drained)

2 Tbs water- did not use

1 Tbs ap flour- did not use

1 tsp sugar- used Splenda

1/2 tsp dried majoram or basil, crushed ( used Ital seasoning)

Grated parm cheese ( optional) - NOT optional!

Cut the buttered toast into cubes. Cook the celery and onion in 1 Tbs butter till tender.

Add the fresh or canned tomatoes. Bring to a boil. Reduce the heat and simmer covered for 8 minutes.

Combine the water and flour, sugar and majoram, 1/4 tsp salt and 1/8 tsp pepper. Add to the tomatoes. Cook. Stir in 2/3 of the buttered toast cubes. Pour into a 1 Qt casserole and top with remaining bread cubes. If desired sprinkle with some parm cheese. Bake in a 350 oven for 20 minutes.

Because I had drained my tomatoes so well, I was worried that I'd need more liquid- so I did throw in a shot of ketchup. I didn't boil it, due to time contraints, but did heat it all through quite well.

We loved it- I showed Steve a recipe picture of a similar dish that I cut out " to make" probably 15 years ago..

Steve suggested throwing a bit more cheese on top and broiling it a couple of minutes- to tighten it all up and get a crispy top. I think next time I'd use our homemade croutons- which are drier than toast-again, to give it some texture tweaks.

So, a very successful dish! Again, thanks Janie!

Now to try Carol's Red, White and Blue specials!

Have a good day, friends- see you later!

Its not too bad, except for the cookie base and it only has 1/4 cup of sugar for the entire cake ~

Think I'll whip up some Deviled eggs too ~ have not had them in a while ~

You are so right about the Back pain. Rest well Patti and we will meet someday ~

The dough yields plenty of extra cookie "spoons," which can be served with tea or any dessert. If you'd prefer to bake a single batch, use one disk of dough and freeze the rest (up to one month).

Ingredients

Makes 8 sundaes and 60 cookies

FOR THE COOKIES

2 cups sifted all-purpose flour, plus more for surface

1/2 teaspoon baking powder

1/4 teaspoon salt

4 ounces (1 stick) unsalted butter, softened

1 cup sugar

1 large egg

1 teaspoon pure vanilla extract

FOR THE SUNDAES

2 quarts Vanilla Ice Cream, softened

2 quarts Raspberry Sorbet, softened

Blueberries, for garnish

Directions

Make the cookies: Whisk together flour, baking powder, and salt. Cream butter and sugar until pale and fluffy. Mix in egg and vanilla. Gradually add flour mixture, and mix until dough comes together. Shape dough into 2 disks, wrap each in plastic, and refrigerate at least 1 hour (or up to 2 days).

Preheat oven to 325 degrees. Roll out 1 disk of dough to just less than an inch thick on a lightly floured surface. Using a paring knife, cut out spoon shapes, each about 3 inches long. Get the spoon template here.

Transfer to baking sheets. Chill in freezer for 15 minutes. Roll out scraps, and repeat once.

Bake until cookies are golden around the edges, about 12 minutes. Transfer sheets to wire racks to cool. Repeat with remaining dough.

Make the sundaes: In 8 small bowls, layer 1/4 cup ice cream, 1/2 cup sorbet, and another 1/4 cup ice cream. Garnish each sundae with blueberries, and serve with 2 or 3 cookie spoons.

Re: Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

HAPPY 4TH OF JULY !!!!

Janie what a nice tradition of names in your family. Little Miss Ellie has not slept thru the night since her grandmas were there to visit and I was told the doctor said it was our fault. Judy (other GM)held her for three hours I guess and I had had her for about 45 minutes & Erica maybe 30 so our side of the family was not as bad as daddy's. I think they better get use to it because this may not be the GP's fault but just how things will be.

Roger said that it looks like the weeds are enjoying the Roundup he thinks they look healthier. We have very tenatious weeds. I'm sure we have used the white bottle before too and then we got something that they use on the cranberry marsh and we still have mega weeds. If this doesn't work I think I'll try some straight bleach and see what that does along the fence.

Margaret it is such a shame about your friends basement, bad enough to have water but the mud adds insult to injury. I remember it rained so hard the summer after my dad died that our basement in the apartment building flooded and my mothers ringer washer was floating around for days.

Erica and Michelle will be here for supper and I have burger thawed, Erica is bringing deviled eggs and a red white and blue jello, Roger wants beans & brats and maybe I'll make a mac salad too and I want a couple of hot dogs on the grill too.

(((Pattie))) I hope you are not in too much pain I know these back surgeries can be the pits. I wish you a speedy recovery and hope you will be back with us soon.

Alphy it is so nice of you to share your soup when should I expect my bowl to arrive?

Well I was being so smart and opened a second window so I could go back and read the posts but I now know what has been missing since Roger had to change monitors and it is the place at the bottom of the screen that allows me to open those windows. Sometimes I wonder if this new computer will ever have all the bugs worked out.

Enjoy your day.

Hope you all have great plans for the day ~ We will be working a 1/2 a day then its kick back time ~ Our Gs will be down again this weekend and the paintinfg will continue as well as a little more weed wacking ~ Going to hit the weeds again with the Roundup~ Carol our's is in a plastic white bottle. But as long as it says Roundup you have the right stuff~ Love the new Babies name ~ Very cute. We did the same thing with the middle name. Only with the boys ~ 4 generations have the middle name James. Starting with my fil to hubby to our son and to his sons ~ my Grand daughter has my greatgrandmothers name Of Brooke and her Middle name is my Maiden name Hamilton~ Funny how names goes around ~ I have been very fortunate in having my daughter in laws namesake their children after me ~ I also have another Gd that has my middle name which is part of my Fathers first name ~ Carla~ lol~ Just a little more about this old Appy_ Girl

How sad M for all of the damage to your friends basement~ Not only a mess but such a loss. The rain in our area has subsided some and we have actually had to run our sprinklers. There were quite a few bare areas that we reseeded so they need to be kept moist.

Think I'll make some cold Mac Salad today ~ I actually was thinking dare I make Potato Salad, They remembered the Broom is always charged up ~ Dave, can't help to think of Harry Potter ~ Boy did we ever enjoy those movies ~ Great entertainment ~

Last nights treat wes just that a wee treat ~ I made 2 of Bettys Jack Pepper Sticks ~ They are coated with crushed Cornflakes, then fried. Very, very good ~ I had a regular Mozz and Mr had the Hot stuff ~ Extremely crunchy and a little hit of nut/corn ~ very, very nice. I have seen recipes before using that cereal as a coating for foods. Including fish ~ as well as Chicken ~

Sending out well wishes to all ~ I'll see if I can rustle up something good ~ to share ~ Janie

Re: Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

Good morning! Happy Fourth of July!

Well, the day looks a little brighter today- we've had such rain....my friend has 4' of water and mud in her basement- meaning she's lost her furnace, sump pump and anything else she had there. Her property is all underwater, too...they are near a lake, and got 3" of rain in one day- and the troubles got worse from there...

Carol- I loved the story about the middle names for your girls- and that this sweet new baby continues the tradition! I hope you'll have a chance to sit down and rest this weekend!

I think you all saw the notice from Pattie's husband- I know she must have just recently gotten out of school- don't know if this was scheduled surgery or not- poor dear! ((Pattie))

Janie- I read your dip reviews...yum! Thanks for continuing to find, test and review so many recipes that show up on this board!

Ann, Dava, Linda, Renate, Alphy, Mary, Connie, Doris, Barb and be-bopp Barb- hope you all have good plans for the day- and if you swing by this weekend, we'd love to see you!

I'll be back later with a treat!

Have a glorious day!
