The recipe says it makes 6 muffins but there are 8 bananas and 5 cups of &amp;quot;flour&amp;quot; like ingredients. Something isn&amp;#39;t right here. lol!&lt;/p&gt;&lt;p&gt;I am going to make these but will make half the recipe the first time. It doesn&amp;#39;t have much leavening either so I might experiment and increase the leavening too. I&amp;#39;ll report back after I bake them.&lt;/p&gt;&lt;p&gt;chefly &lt;br /&gt;&lt;/p&gt;&lt;p&gt;Powerhouse Muffins&lt;br /&gt;
&lt;br /&gt;
8&amp;nbsp; large bananas&lt;br /&gt;
3&amp;nbsp; egg whites&lt;br /&gt;
1 1/2&amp;nbsp; cups wheat flour&lt;br /&gt;
1 1/2&amp;nbsp; cups oat bran&lt;br /&gt;
2&amp;nbsp; tsp baking powder&lt;br /&gt;
2&amp;nbsp; cups oatmeal&lt;br /&gt;
1&amp;nbsp; cup skim milk&lt;br /&gt;
1&amp;nbsp; tsp cinnamon&lt;br /&gt;
1/2&amp;nbsp; tsp cloves&lt;br /&gt;
1/4&amp;nbsp; tsp nutmeg&lt;br /&gt;
1/2&amp;nbsp; cup raisins&lt;br /&gt;
cooking spray&lt;br /&gt;
&lt;br /&gt;
1. In a large bowl, mash bananas and egg whites together.&lt;br /&gt;
Mix in remaining ingredients.&lt;br /&gt;
2. Spray a large muffin tin with cooking spray. Pour in batter.&lt;br /&gt;
3. Bake at 400°F for 25-30 minutes.&lt;br /&gt;
&lt;br /&gt;
Yield: 6 muffins. Analysis per muffin: 460 calories, 16g protein,&lt;br /&gt;
4g fat, 14g fiber, 85g carbohydrates&lt;br /&gt;
&lt;br /&gt;
