To this day..when I go back home for a visit we still have this for one of our meals together.
Easy Shepherd's Pie

½ pound ground beef

1 onion chopped

1 can tomato soup

1 can green beans, drained

1 can whole kernel corn, drained

5 small potatoes boiled and mashed

½ cup cheddar cheese, shredded

Brown meat and onions. Drain well. Add soup to meat mixture. Layer meat and vegetables in a 2-quart casserole dish. Put mashed potatoes on top of the mixture. Sprinkle with cheese. Bake at 350 degrees for 30 minutes.

This recipe will stretch a 1/2 pound of ground beef to feed 6 people. You can use the very cheapest brand of canned vegetables in this recipe. Makes no difference in flavor. A good hearty filling dish.
