Here's the crust recipe, MJ.

PAT-IN-THE-PAN PIECRUST
(single crust, 8 or 9 in.)

1½ c. plus 3 Tbspn. all-purpose flour
1½ tsp. sugar
½ tsp. salt
½ c. vegetable oil
3 Tbspn. milk

Place the flour, sugar, and salt in the pie pan and blend with fingers. In a measuring cup, combine the oil and milk and beat until creamy. Pour all at once over the flour mixture. Mix with a fork until the flour mixture is completely moistened. Pat the dough with your fingers, first up the sides and then across the bottom. Flute the edges. Shell is now ready to be filled.

If you are preparing a shell to fill later, or your recipe requires a prebaked crust, preheat the oven to 425º. Prick the surface of the pastry with a fork and bake 15 minutes, checking often, and pricking more if needed.

VARIATION: for a 10 inch shell, use
2 c. flour
2 tspns. sugar
1 tspns. salt
2/3 c. oil
3 Tbspn. milk

For an 8 or 9" fruit pie, mix dough for 10" shell and save 1/3 of the dough (about 2/3 cup) for the top of the pie.
Press remaining dough evenly in pie pan, crimp edges and add fruit filling. Crumble reserved dough over filling to make topping. It does not cover like a regular crust, but does spread out a little as it bakes. Bake as fruit pie directs.

Granny Neighborhood 11-18-09

Good morning Ladies: It's still dark and but seems like it might be a good day.

4 1/2 cups sugar

1 cup cornstarch

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon salt

10 cups water.

3 Tablespoons lemon juice ( I use the bottled kind)

2 to 3 drops yellow food coloring.

5 1/2 to 6 pounds of tart apples peeled and sliced.

In a large saucepan , blend the first five ingredients. Stir in the water. Cook and stir until thickened and bubbly. Add lemon juice and food coloring.

Pack apples into hot jars (large mouth are easier). leaveing one inch of headspace. Fill with hot syrup leaveing 1/2 inch headspace. ( use spatula ) Adjust lids Process in hot water bath Pints 15 minutes Quarts 20 minutes. Makes 6 quarts.

When I first made this I found it very hard to get the syrup to go down into the jars so I mixed the apples into the syrup and then packed the jars. It seemed to work just fine. If you have extra syrup left just make another quart LOL . I did about 12 pounds of apples and made 1 and 1/2 recipe of the syrup and I got 10 quarts. Make sure you leave headspace or they boil over and may not seal. Six of mine did not this time so I reprocessed them the next day adding a little water to replace the syrup that boiled out. One quart makes a good pie and I generally add a little tapioca when I bake the pie just because I like it to be quite firm. I mix the filling in a bowl before putting it in the shell.
