Broccoli Spaghetti

    Broccoli Spaghetti

    16 ounce thin spaghetti, broken into thirds
    1 bunch fresh broccoli, cut in 1 inch pieces
    2 cloves of garlic, minced
    1 stick butter or margarine
    Parmesan cheese, freshly grated
    Salt and pepper to taste

    Cook spaghetti in 4 quarts of boiling water with 2 teaspoons of salt for 2 minutes. Add broccoli and cook 8 minutes, just until broccoli is tender.Drain and pour into a large serving dish. Cook garlic in butter just until it begins to brown. Pour over the spaghteei mixture and sprinkle generously with the Parmesan cheese. Season to taste with salt and pepper. Toss lightly to mix. Serve immediately.

    Easy, fast, inexpensive, this looks like a winner. I think I'll give it a try this week.

    Hope you both enjoy this. It used to be an old "stand by" when I would get home late from work to see 3 hungry faces staring at me. Garlic bread and a salad complete a meal. If you have some leftover cooked meat, like a roast, can be sliced and served on the side. Cooked chicken can be heated in the microwave oven and added to the spaghetti at the end with the cheese if your family just has to have meat. When mine were so hungry, they didn't much care as long as food was coming fairly soon.

    Adding the meat would be preferable to my son and exchange student(both teenage boys!), but the rest of us would probably like the veggie version. Might have to try it both ways!

    Hi gaudrey,

    I made this last night, It was very good and easy. My father really enjoyed it. And to my surprise, my 8 year old loved it. I served it with lemon-herb chiken breasts and garlic bread. Thank you for sharing, this one is going into my family favorites file :o)

    Corinna, I'm so glad you liked it. I've been posting some of my old favorites. My children are grown and gone so I don't cook as much as I used to. But I love to read my recipe books and look through my files. When I run across something that was a special favorite, I post it.

    It should work just fine as long as you don't overcook it. Did you know that there is a market and restaurant in a little town in New York called Gemellis? They have the best Marinara sauce. A friend of mine orders from there and it is so good. I have a recipe that is almost as good and cheaper, so I use that. You also can substitute asparagus, Chinese Pea pods, or even French cut or blanched green beans for the broccoli. Anything that cooks in about the same time as the broccoli...7 to 9 minutes.

    This dish was wonderful and everyone loved it. I did use the gamelli and it was perfect with it. I loved the way the galic "toasted" in the butter, giving it a nutty flavor. Even my non-broccoli lovers liked this. I will definitely make it again!

    I don't have any fresh broccoli right now but I have some frozen florettes. Do you think I can substitute? I need to take some more stuff up to my mom's tomorrow; more people are coming over than originally anticipated. Thanks!

    Yes, you can use frozen broccoli. Since there's not as much in a bag of the frozen kind as in a bunch of fresh broccoli, you may need to use 1 1/2 to 2 bags. Or you could add some thinly sliced carrots (about 1 to 1 1/2 cups with 1 bag of broccoli). Just be sure to slice the carrots very thin so they cook in the same time as the broccoli. I also have used 1 to 1 1/2 cups of cauliflower florets when I didn't have enough broccoli. Hope this helps.
