    ISO gluten free recipe

    At one time I had a recipe that was published in Country Woman. It was a great bread machine recipe to make gluten free bread. I know the recipe called for many types of gluten-free flours. I would appreciate any help, as my niece has Celiac disease.

    Click on the START Tab on a top row and look for "The Best of Mireille". She has listed many personal recipes including bread. There is a wealth of information at this site and you can "enter" as a Guest. Your niece may like to check it out herself.

    Also, check your public library. Good authors are: Bette Hagman, Carol Fenster, Connie Sarros, Rebecca Reilly, Roben Ryberg, and Danna Korn.

    Hi polish princess,

    We have lots of food allergies in our family.

    One of our children cannot have wheat or eggs. Is oat or corn allowed in a gluten-free diet? I can't remember.

    I'd be happy to post some of my recipes here if you want. (I don't have very many, sorry).

    Angie: To answer your question, oats are not allowed mainly because of cross-contamination with wheat in the fields. There is a USA company growing oats that have no cc issues and I think they may be coming to market soon but I don't have an exact date or name--sorry.

    Corn is allowed in a gf diet provided the individual does not have any health issues with it.

    GLUTEN-FREE MOCK RYE BREAD (FOR BREAD MACHINE

    1 1/2 c Brown rice flour
    1/2 c Rice bran
    1/2 c Tapioca flour
    1/2 c Potato starch flour
    1 tb Xanthan (or guar) gum
    1 tb Caraway seeds
    1/2 ts Salt
    1/2 c Dry milk (non-instant)
    1 tb Cocoa powder
    1 t Grated orange peel
    2 ts Yeast
    2 Eggs
    3 tb Oil
    1 tb Fruit sweet
    2 tb Molasses
    1 1/2 c Water
    2 tb Water
    1 t Vinegar

    Follow directions for your particular bread machine.
    Use single rise setting.

    I wrap the bread in a towel for about 4 hours after it
    is done baking and then slice it thinly with an
    electric knife. It freezes well. I take individual
    slices of bread out the the freezer and then microwave
    about 30 seconds per slice.

    This bread is wonderful! Many of my non-celiac guests
    request this over homemade whole wheat bread.

    Here are some tips for making these recipes:
    1. All ingredients should be at room temperature (yeast can be cold though).
    2. Blend all wet ingredients together before adding to bread pan.
    3. Blend all dry ingredients together before adding on top of the wet ingredients.
    4. The consistency of the dough for gluten free breads is similar to that of quick breads. A finished loaf generally appears flat across the top.

    Gluten Free White Bread
    3 eggs
    1 2/3 C water
    3 T canola oil
    1 t cider vinegar
    1 pkg yeast (2 1/4 t)
    3 1/4 C white rice flour
    2 1/2 t xanthan gum
    1 1/2 t salt
    1/2 C dry milk powder
    3 T sugar

    Bake on the Whole Wheat Setting. Do not use a Timer setting. The Whole Wheat Setting provides more rising time than the normal setting.

    auburnhair -- Do you have any more info about the Country Woman magazine (an approximate year, e.g.?). I have all of the old magazines and can look back through them for you.

    I also cook and bake gluten free, and I must admit that I don't remember seeing any recipe in CW.
