    Unusual Scalloped Potatoes

    Here is a recipe I got from my friend. Her sister Lindsey from Marysville, Ohio makes them and she says they are heavenly...

    Best Scalloped Potatoes
    Bake 5 pounds Yukon Gold potatoes in foil, wrapped individually, 400 for about 45 min. Leave in foil and let cool completely. Cut in Squares

    3# block Velveeta cheese cut in small blocks
    2 Large Vadalia Onions Chopped fine
    1 pound bacon fried and crumbled.
    1 Qt. Hellman's Mayo

    Mix all ingredients together and let set in fridge overnight.
    Bake at 350 until hot and bubbly and cheese is all melted.

    I have my potatoes baked and are cooling in fridge. I'm putting it together Thur eve for our cookout Friday evening. I'll let you know how they turn out.

    Dena - these do look different from the usual scalloped potatoes. How many do you think it will serve - looks like alot- but then I have a large family and they would love this. Let us know how it turns out. CJ

    stupid questions time - what if Hellman's Mayo isn't sold here (or at least I don't think I've seen any) what other Mayo could you use for a substitute??

    Hellman's is also known as Best Foods. You could probably use Kraft also.

    Good grief... this has to be good...VELVEETA, ONIONS & MAYO...

    how could you go wrong???

    I make a recipe very much like this. But the recipe I have says to boil 10 potatoes in their jackets. Cool them and then peel them and continue as your recipe states. The recipe I have also calls for sliced green olives. My hot potato salad bakes in a 9x13 pan. I can't remember for sure but I don't think it calls for as much cheese or mayo. Just looked and can't lay my hands on the recipe. I've posted it here before under EmmaLou's Hot Potato Salad

    Everyone really likes this dish. As you can tell it's really cheesey! Carol

    Of course I don't think any mayo is as good as hellman's , but yes Best Foods or Kraft would be a good substitute.

    My friend says they beg her to make these everytime they have a get together. I can't wait to try them.

    I'll report on how many servings ect. it makes.

    I put these together today and they are in the fridge. I'll bake them Friday Morning and let you know, but I tasted them after putting them together and even cold they taste out of this world. Yummers.
    I think this would serve around 20 people.

    Plus It's a 2 pound block of Velveeta, not 3 pound. Whoops!
