    Pizza Thread

    I did a search to see if anyone had started a pizza thread. I got a timeout expired.

    If there is no pizza thread, can we start one?

    Pizza is the one thing I would love to learn to make at home. I have used the bag crust mixes but I know there is better flavor out there.

    I would love to try deep fried pizza (how much more fattening can you get?)

    One of my pizza secrets is I use Ragu Super Chunky Mushroom for my sauce. It is yummy, if you like your sauce a little sweeter.

    Please post your recipes or hints for pizza.

    This is a great idea!
    When I cheat I use Trader Giottos Pizza Sauce.
    I really need to get some shut eye!
    I'll post what I have!
    If you have any banana recipes please post them on the thread I started entitled "Going Bananas..."

    Great thread idea! We eat homemade pizza once in awhile, but like you I know there are better recipes out there then what I use. Would love to hear some recipe ideas!!!

    I make homemade pizza all of the time since I got my Kitchenaid mixer. The mixer mixes the dough beautifully. Will post my dough recipe when I get home - I am at work now. I use it on my oven stone and it turns out great.

    The recipe I use is actually two blended from this site. One each from queenietwo & ShelleyjCA.
    It's easy, quick, & teenage approved many times over.

    About 1 hr. from start to finish.

    2 tsps. Instant Rapid Active Dry Yeast
    2 TB melted margarine
    3/4c. warm water (105-115ºF)
    2 c. flour
    1/2 tsp salt
    1/8 tsp oregano
    1/8 tsp basil
    1/8 tsp marjoram
    1 small can pizza sauce (I use 2/3rds of a can.)
    grated mozz. cheese (1 c. approx.)
    opt. small amount of grated cheddar cheese
    ham or pepperoni
    pineapple tidbits, opt.

    Stir yeast, water & margarine together in a large bowl until yeast is dissolved.

    Add dry ingredients.

    Mix & knead dough in bowl for 2-3 min. until well mixed.

    Cover & set dough aside for 10 min.

    Roll out to fit pan, stretching the dough slightly if needed.

    Spread pizza sauce evenly on dough.

    Sprinkle grated mozz. cheese over & then light dusting of grated cheddar.

    Add ham pieces & pineapple OR sausage sliced med/thin.

    Bake 425ºF 25 min. on middle rack. (Till crust edge is golden brown in color & cheese melted.)

    My pan does better with a light greasing. Looks funny with all the holes in the bottom but makes a great crispy crust.

    Oh, & the one hour start to finish means you WILL be eating hot pizza in one hour or less!

    I made this in my KA, so I didn't need the full cup of water. I used about 3/4 cup. The dough was great to work with and I just pressed it onto the pizza pans. I did use all whole wheat flour and it was still tender and delicious.

    Whole Wheat Pizza Dough

    If you use all whole wheat, as this recipe suggests, you will have a hearty whole wheat flavor. You may substitute part white flour if you prefer a lighter whole wheat flavor.
    This recipe will make:
    2 thin crust pizzas, 12" each
    2 stuffed pizza pockets
    1 thick crust pizza, 14"
    1 Chicago-style deep dish pizza, 13" to 14"
    6 individual pizzas, 6" each
    25 individual calzones

    4 cups whole wheat flour
    1 tsp. salt
    1/4 cup (4 tbsp.) safflower oil
    2 pkgs. dry yeast
    2 tsp. honey
    1 1/2 cups warm water

    Dissolve the yeast in 1/2 cup warm (not hot) water and add 2 tsp. of honey. Set aside for at least 5 minutes. Meanwhile, sift the flour and salt into a bowl. Make a depression in the center of the flour and add 3 tbsp. of the oil, the other cup of warm water and the yeast mixture; mix the ingredients with your hands (or beat in a KA with a dough hook on "2" until well blended. Gather the dough together and place it on a floured board. Knead the dough, adding more flour if necessary. Knead for 8 to 10 minutes (or knead in the KA for 2 minutes on "2". The dough should be elastic and cohesive.
    Place the dough in a clean bowl that has been rubbed with oil. Brush the top of the dough with the remaining oil. Cover the bowl with a clean towel and put it in a warm, draft-free place for 1 1/2 hours.

    Pizza Bread
    1/2 lb. lean ground beef
    1 clove garlic, minced
    1/8 tsp. red pepper flakes
    14-1/2 oz. can Del Monte Italian Style stewed tomatoes
    8-3/4 oz. can whole kernel golden sweet corn, drained
    1 loaf unsliced Fresh bread or 4 French rolls, cut in half lengthwise

    In skillet, brown meat with garlic and red pepper. Salt and pepper to
    taste; drain. Add tomatoes; cook, uncovered over medium-high heat about 6 minutes
    or until thickened. Stir in corn. Spread over bread; top with cheese,
    olives and green onions. Bake for 8-10 minutes.

    Pizza Casserole
    Ingredients
    • 1 medium onion; chopped
    • 1 pound medium ground beef
    • 1 green pepper; diced
    • 1 cup wagon wheels macaroni
    • 1 package pepperoni sausages
    • 1 tin mushroom pieces
    • 2 (8 oz) cans pizza sauce
    • 1/2 pound shredded mozzarella cheese
    • 1 pound bacon
    Method
    In a frying pan, brown onion, pepper and beef. Cook macaroni according to directions. Drain both meat and macaroni. In a large bowl, combine the meat, macaroni, pepperoni, mushrooms, pizza sauce and half of the mozzarella cheese. Cook the bacon until crisp, then drain and break into pieces. Add to the casserole and stir. Top with remaining mozzarella cheese and sprinkle with parmesan cheese. Bake for 1 hour at 350°F
    Yields: 6 servings

    Pizza Dip

    Ingredients
    1 (8 ounce) package cream cheese, softened
    1 (14 ounce) can pizza sauce
    1/4 pound pepperoni sausage, diced
    1 onion, chopped
    1 (6 ounce) can black olives, chopped
    2 cups shredded mozzarella cheese

    Directions

    1 Preheat oven to 400 degrees F (200 degrees C). Spray a 9-inch pie pan with non-stick cooking spray.
    2 Spread cream cheese on the bottom of the pie pan. Pour pizza sauce over the cream cheese, and spread it so that there is an even layer of sauce. Sprinkle with pepperoni, onion, and olives. Top with mozzarella cheese.
    3 Bake at 400 degrees F (200 degrees C) for 20 to 25 minutes.

    Pizza Dough

    Makes 4 Medium or 8 Individual Pizzas
    (which gives everyone their own choice of toppings.)


    This pizza dough is quick to assemble and freezes well. Make it ahead , all you need to do is defrost it the day you plan to make pizza. Make 8 individuals balls of dough which gives everyone their own choice of toppings.

    2 Pkgs. Dry-Active Yeast

    2 Cups Warm Water - Body Temperature

    7 Cups Flour, All-Purpose

    1 Teaspoon Salt

    Stir yeast into 1/2 warm water, mixing completely. Blend in 1 cup of flour, mixing well. Cover bowl and let rise in warm place for half an hour or so or till the starter is full of bubbles. Stir the salt into the remaining flour, mix well, and add to the starter. Pour in all but 1/4 cup of the water, and start beating by machine at slow speed and gradually increase to medium. Knead for a good 5 minutes, adding additional drops of water till as needed till the dough is smooth.

    When it forms a smooth ball that includes all the flour from the sides of the bowl, transfer to a floured board and knead several times till smooth and elastic, and holds it's shape when bent back and forth between your hands. Form dough into a ball, dust with flour, and place in a lightly floured bowl. Cut a cross in the top, cover and let rise till doubled, about 2 hours. To finish the dough, Turn out onto a floured surface and knead for 2 minutes. You may now use it by either forming into 8 individual pizzas, or divide it into 4 pieces, making one pizza for two and freezing the rest into 3 remaining balls, well wrapped.

    Note: The dough may be kept in the refrigerator over night, in a well oiled pan, brushed with oil, and covered with plastic wrap. To use, remove and let warm to room temperature, and then form into pizzas as desired.

    Special Tip: To quickly warm refrigerated dough; place in a microwave-proof bowl, cover with plastic wrap with several holes poked in, and microwave on "defrost" for two minutes. To defrost a ball of frozen dough; Microwave on "defrost" one to two minutes, let rest five minutes, then defrost for another minute. Let rest another five minutes then knead and squeeze to soften any lumps; let rest to come to room temperature.

    Pizza Hut Cavatini

    1 large green pepper, diced
    1 large onion, diced
    2 oz. (1/2 stick) margarine
    1 teas. garlic powder
    1 lb. assorted pasta (wheels, shells, spirals, ziti)
    1/2 lb. pepperoni - sliced thin - then cut in half
    8 oz. mozarella cheese (shredded)
    1/2 lb. hamburger (browned)
    1/2 lb. italian sausage (browned)
    1 - 16 oz. jar meat flavored Prego sauce

    Melt margarine over medium high heat in a skillet. Add onions, peppers,
    and garlic powder. Saute for about 4 minutes. Meanwhile, cook pasta
    according to box directions. Heat sauce and combine with cooked
    hamburger and cooked sausage. Use cooking spray to lightly grease
    an 11 X 13 casserole dish. Place 1/2 of the cooked pasta in the dish,
    followed by 1/2 the vegetables, 1/2 of the pepperoni, and 1/2 sauce.
    Repeat another layer. Spread mozzarella cheese over top.
    Bake at 350 degrees for about 45 minutes or until cheese is melted.
