    One recipe we now have every Thanksgiving is Star's sweet potato casserole. Everyone loves it.(Review by Chinarose)

     

     Best Sweet Potatoes with Candy Crunch Topping   Starshineeliz

     

     

     3 cups mashed cooked sweet potatoes (I bake mine)

     

     

    1 c. sugar

     

     

    ½ c. melted butter

     

     

    2 eggs, well beaten

     

     

    1 tsp. Vanilla

     

     

    1/3 c. milk (used condensed milk)

     

     

    ¼ tsp. Nutmeg

     

     

     

    ¼ tsp. Cinnamon (I use 1/2 tsp. as we all really like cinnamon)

     

    Combine all ingredients and spoon into 9 X 13 pan. Coverwith topping. Bake 30 min. at 400.

     

     

     Topping2 cups Rice Krispies

    1 c. chopped pecans

    1 c. brown sugar

    1 stick butter, melted

    Mix all ingredients and spoon over casserole

                               Asian Chicken Bites

      4                     boneless skinless chicken breasts -- pounded thin and cut into chunks
                            salt and pepper to taste
         1/2           cup  buttermilk
         3/4           cup  flour -- self rising
                            oil for frying
                            Soak chicken in buttermilk. Season and shake in flour. Deep fry and drain on paper towels.

    Sauce:

    1/2 cup teriyaki sauce

    1/3 cup of barbecue sauce

    2 tblsps. brown sugar, dark or light

    1/4 cup of honey

    1/4 cup of soy sauce

    4 scallions, white and green parts, sliced thin

    2 cloves garlic, minced

    2 tablespoons of finely chopped fresh gingerroot

    Combine sauce ingredients and simmer until slightly thickened. Dip chicken in sauce and place on a platter . Sprinkle with sesame seeds.

    3 tablespoons of toasted sesame seeds

                           Chicken Scampi with Linguine

      2                lbs  boneless skinless chicken breasts
      1                     egg beaten
         3/4             c  italian bread crumbs
         1/4             c  parmesan cheese
         1/2           tsp  salt
         1/4           tsp  black pepper
         1/2             c  vegetable oil
      1                 lb  linguine
         1/2             c  butter
      4             cloves  garlic -- minced
      1               tbsp  lemon juice
         1/2           tsp  salt
         1/4           tsp  black pepper
      2               tbsp  butter
         1/4             c  chopped fresh parsley
                            lemon wedges

    Cut the chicken into bite size pieces. Dip the chicken in the beaten egg, then into the bread crumbs, which have been mixed with the grated cheese, 1/2 tsp salt and 1/4 tsp pepper. Spread the coated chicken pieces on a rack or platter.

    Heat 1/2 c oil in a large skillet. Add 1/3 of the chicken pieces; saute until golden brown. Remove chicken with a slotted spoon, and repeat with the remaining chichen pieces. Discard oil in teh skillet, and wipe out.

    Cook pasta. While pasta is cooking, melt 1/2 c butter in the skillet. Add garlis and cook 1 min. Add cooked chicken, lemon juice, salt and pepper. Toss to coat the chicken with the sauce. Do not allow chicken to cook further.

    Drain pasta, and toss with the remaining 2 tbsp butter and spoon onto a heated platter. Spoon chicken and sauce over. Sprinkle with parsley and serve with the lemon wedges. 8 servings

                               Green Beans Caesar!

         1/2            lb  fresh green beans (or frozen)
      2        tablespoons  salad oil
      1         tablespoon  vinegar
      1         tablespoon  instant minced onion
         1/4      teaspoon  salt
      1              clove  garlic -- crushed
         1/8      teaspoon  pepper
      2        tablespoons  dry breadcrumbs
      2        tablespoons  grated parmesan cheese
      1         tablespoon  melted butter

    Prepare and cook green beans until tender (10-15 mins) If using frozen, follow cooking directions.

    Toss green beans with all ingredients except bread crumbs, cheese and butter.

    Put in 1 1/2 qt ungreased casserole dish.

    Mix bread crumbs, butter and cheese.

    Sprinkle over green bean mixture.

    Sprinkle with paprika.

    Bake uncovered at 350 degrees for 15-20 minutes or until heated through.

                                Lemon Truffle Pie

      9                  "  pie crust -- baked and cooled
      1                cup  sugar
      2              Tbsp.  cornstarch
      2              Tbsp.  flour
      1                cup  water
      2                     egg yolks
      1              Tbsp.  butter
         1/3           cup  lemon juice
      1 1/2           cups  white chocolate chips
      1               pkg.  cream cheese -- (8 oz.) softened

    Beat egg yolks in a small bowl. Combine sugar, cornstarch and flour in a heavy saucepan. Using a wire whisk, stir in water until smooth. Cook this mixture over medium heat until boiling, stirring constantly.

    Cook and stir for 2 minutes. Stir about 1/4 cup of cooked mixture into egg yolks and blend. Return egg yolk mixture to saucepan and cook 2 more minutes, stirring constantly. Remove from heat and stir in butter and lemon juice.

    Transfer 1/2 cup of the cooked lemon filling to a small bowl with the white chocolate chips. Set rest of lemon filling aside. Microwave the chip mixture on low 1-2 minutes or until chips are melted, stirring until smooth. Beat cream cheese and add vanilla chip-lemon filling mixture and beat well. Spread over cooled crust. Spoon lemon mixture over the cream cheese layer. Refrigerate 4 hours to set. 8 servings

                                  PRETZEL ROLLS

      1 1/4            tsp  dry yeast
      1 1/4             C.  warm water
      3 1/4             C.  flour
      2                tsp  salt
         1/4            C.  butter-softened
         1/8            C.  baking soda
      2                TBS  sugar
      1                     egg white -- well beaten, set aside
                            course pretzel salt or "crazy mixed up salt"

    mix yeast in ¼ c. warm water and set aside.

    Put flour, salt, butter, water, and yeast mixture

    in mixing bowl, using dough hook, knead well.

    Grease a baking sheet (I like airbake for these)

    Divide dough and roll into balls (we like smaller

    rolls, so we made 16 balls) Place on baking sheet.

    Flatten each slightly and using a serrated knife, cut

    criss-cross on top of each one. (I used kitchen

    shears and snipped the cross on top). Cover with

    damp towel and set aside to rise double (about ½ hr).

    Preheat oven to 375.

    Put 4 cups water, 2 TBS sugar and 1/8 C. baking soda

    in an alum. skillet with deep sides. Bring to a boil. Boil

    about 4 at a time for 30 seconds per side, using a slotted

    spoon to remove and place back on the baking sheet. Brush

    each one with the egg white and sprinkle with course salt or

    crazy mixed up salt. Bake approx 15 min for small rolls (16

    of them) or 25 min for the larger ones (8 of them)

                                Crumb Coffee Cake

      3 3/4           cups  flour
      1 3/4           cups  sugar
         1/4         pound  butter (l stick) -- softened
      3          teaspoons  baking powder
         1/2      teaspoon  salt
      2                     eggs
         2/3           cup  milk
                            Topping:
         1/4         pound  butter -- (1 stick)
         1/4           cup  brown sugar
      2          teaspoons  cinnamon
      1              pinch  salt
                            confectioner's sugar (for dusting)

    1) Mix together in a large bowl flour, sugar, baking powder, salt; and set aside 2 cups of this mixture for the topping.

    (2) Add butter, eggs and milk to flour mixture in large bowl and mix well.

    (3) Grease and flour a 13-inch rectangle baking pan. (I used PAM spray w/flour)

    (4) Spread batter in prepared pan.

    (5) Preheat oven to 350 degrees.

    (6) For Topping: Take the 2 cups of reserved flour mixture and add to the butter, brown sugar, cinnamon and salt. Mix together with your fingers until blended and lumps begin to form when you squeeze the mixture making small pea-sized crumbs.

    (7) Cover the entire cake with the crumbly mixture.

    (8) Bake for 30 minutes.

    (9) When cooled, dust with confectioner's sugar
