    Zucchini Pie

    My zucchini pie is not a dessert. I got the recipe about 20 years ago while attending a family reunion in Kentucky with a friend. This sweet old lady gave it to me and called it zucchine pie. I have enjoyed it ever since.

    ZUCCHINI PIE

    Mix together:
    l cup Bisquick
    1/2 cup oil
    1/2 t salt
    2 eggs beaten
    1/2 cup parmasean cheese
    1/2 cup onion - finely chopped

    Add:
    3 cups zucchini squash -finely sliced
    mix well

    Bake uncovered for 1 hour at 350 or until top is browned.
    I use a 1 1/2 quart oblong baking dish.
    I cut this out in squares to serve.

    This sounds really great, does this freeze well? I am going to try this as a side dish to my fish dinner tomarrow night!!

    I love to make that in the summer with a small salad for a light dinner. I also have made it with yellow squash and cheddar cheese
