    (o: Secret Sister Swap #2 Summertime Favorites (July '06 - Dec. '06) :o)

    Here we go again! As I did for the very first Secret Sister Swap, I collected recipes from the participants of the second Secret Sister Swap to compile into yet another cookbook of treasured T & T Faves!!!! I begged! I nagged! I begged and nagged some more, and a majority of those wonderful Sisters came through for me yet again with a veritable plethora of awesome recipes! This second cookbook actually has 6 separate sections with well over 500 recipes collected! My initial foray into the archives to collect hidden treasures like I did for the first SS cookbook proved to be far too difficult a task, as we all know how well the infamous 'search feature' has been working these past months!! ! :o) NOT!! Anyway...... here again, is the end result of all my persistent nagging! Were it not for the generosity of all those awesome ladies, this cookbook would never have come to be! If you saw the first one I did, either by requesting a copy of it or on the 'Favorite' thread I posted here on Recipes, you'll find this second one to be quite different! AND, dare I hope, just a bit more FUN because of all the extras I included!!

    Again, special thanks to ALL the SS's who contributed recipes!! As in the first, there were several ladies I dubbed as 'Honorary Sisters' because they were not actually a part of the swap, but DID share a few of their Faves!!

    Extra special Thanks to two fantastic moderators HDMac (Marcia) and cllw (Linda), who did a really bang up job with this second group!! As great a job as you did on the first swap, you did an even more awesome job on the second one!! You know, you two could make this your full time jobs!! Oh!! Sorry!! You already HAVE!! :O) Seriously, you two are the bestest!!!

     This cookbook project definitely will take a few days to complete. Because there are well over 500 recipes total, I think I'll post each section separately to make it easier to find specific recipes!! Each thread will start out the same as this one to tie them all together! Each thread will be categorized and the recipes and their contributors listed alphabetically at the beginning of each thread. At the very end, I will, as is becoming my habit with these rather lengthy threads, make a page by page index of all the recipes in THAT particular thread. Perhaps you may want to print a copy of it to make it easier to find a particular recipe or two!! Just a thought! :O)

    Asian Honey BBQ Chicken Drummettes

    Recipe Rating: Prep Time: 10 min Total Time: 25 min

    1 cup KRAFT Honey Barbecue Sauce
    4-1/2 tsp. soy sauce
    1/2 tsp. ground ginger
    1/4 tsp. garlic powder
    16 chicken drummettes (about 1-1/2 Ib.)
    PREHEAT greased grill to medium heat. Mix barbecue sauce, soy sauce, ginger and garlic powder.
    GRILL chicken 15 min. or until cooked through, turning and brushing occasionally with the barbecue sauce mixture. Serve with additional barbecue sauce, if desired.

    Makes: 8 servings, about 2 drummettes each

    KRAFT KITCHENS TIPS -
    Safe Food Handling:
    When brushing poultry with a sauce during grilling, discard any remaining sauce. Serve grilled foods with fresh sauce to ensure no bacteria from the raw meat contaminates the cooked meat.

    Burger-Bites

     (Source: Kraft Foods)
    Prep Time: 5 min Total Time: 20 min

    1/2 cup KRAFT Honey Barbecue Sauce or BULL'S-EYE Original Barbecue Sauce
    1/4 cup grape jelly
    1 Ib. pkg. (24) small prepared frozen meatballs
    1 can (8 02.) pineapple chunks, drained
    1 large red pepper, cut into cubes

    MIX barbecue sauce and jelly in large skillet. Cook and stir on medium heat 2 min. or until jelly melts. ADD meatballs to skillet; cook 10 min. or until heated through.
    SKEWER each meatball alternately on long wooden skewer or toothpick with pineapple chunk and red pepper.

    Substitute seasonal fresh vegetables for the red pepper.
    Substitute fresh pineapple chunks for the canned pineapple.

    Makes: 24 servings, 1 skewer each

    spanishteacher (Micki) says, "I'm taking this to Bunco on Monday. - When I bring this, I usually pass out the recipe several times. Most of the time, people just stand around the bowl with chips in hand. This can be easily made in large quantities"

    Gazpacho Dip

    2 cans diced tomatoes (NOT drained)
    1 can diced black olives
    1 minced garlic clove
    1 bunch green olives, chopped (use white and most of green, too)
    3 Tbsp. olive oil*
    3 Tbsp. vinegar* (I use apple vinegar lately and I like the taste)
    salt and pepper to taste.

     Mix all ingredients in large bowl and refrigerate, stirring occasionally. Serve with tortilla chips.

    *You can add more or less oil and vinegar to taste. I don't usually measure this part, but that gives you a starting point.

    Red Neck Salsa

    Fresh yellow, red, orange, and green peppers, chopped
    can of black eyed peas
    can of black bean
    can of corn
    1 sm. jalapeno pepper- chopped
    Italian dressing

     Drain the canned veg. Mix everything up-add Italian dressing to taste. Some like a lot, some don't, so whatever looks good. I don't measure this recipe. It's best to make ahead of time and let sit overnight or at least a few hours.

    Taco Dip

    Taco Dip (Aunt Jeannie's way!)

    1 ripe avocado, processed in food processor
    Add:
    3 oz. cream cheese
    4 oz. sour cream
    Process 'til well blended and mix in 1/2 pkg. taco seasoning mix. Spread on plate. Sprinkle over top:
    very small head shredded lettuce
    chopped tomato
    chopped onion
    shredded cheddar cheese
    ripe olives, chopped
    chopped green pepper

     Serve with assorted crackers, chips and deli dippers.

    KC10 (Kay) says, "We make this by the gallon during the hot summer months and leave it in the fridge. It's a wonderfully refreshing treat!!!"

    Pineapple/Ginger-ale Punch

    1 liter ginger ale
    1 qt. pineapple juice

     Chill both ingredients. Pour into punch bowl. Add ice ring made with lemonade and fresh fruit. Voila.

    2 Lg. cans pineapple juice
    1 Lg. can grapefruit juice
    3 (20 oz) cans crushed pineapples
    1 lg. box lime jell-o
    1 cup sugar (or to your taste)
    2 bottles Ginger Ale

     Mix all ingredients except one bottle of Ginger Ale. Freeze-take out a little while before ready to serve-pour half of the bottle of Ginger Ale over the punch. Serves a lot.

    Strawberry Punch

    6 packages Strawberry Kool-Aid®
    1/2 of the water used to make Kool-Aid®
    46 oz Pineapple Juice
    3 cups more water
    4-5 cups sugar
    1 Qt. Strawberries

     Mix all together and freeze in baggies. Thaw slightly before serving. Serve slushy.

    Blackberry Cake

    nlf_PA (Nancy) says, "This is a great late summer recipe!"

    Blackberry Cake

    3 eggs
    1 c. butter, softened
    2-1/2 c. sugar
    3 c. flour
    1/2 tsp. salt
    3 tsp. baking powder
    1 tsp. cloves
    1 tsp. nutmeg
    1 tsp. Saigon cinnamon
    2 c. fresh blackberries

     Preheat oven to 350°. Grease 13 x 9 pan.
     Cream together eggs, butter and sugar. Add flour, salt, baking powder, cloves, nutmeg and cinnamon. Mix well. Stir in blackberries. Pour into prepared pan. Bake for 40 minutes or until cake tests done in center.
     Frost with desired frosting.

    Serves 12.

    Blueberry Crisp

    4 cups blueberries
    1 teaspoon grated lemon rind
    3/4 cup firmly packed brown sugar
    1/2 cup all-purpose flour
    1/4 teaspoon ground cinnamon
    1/4 cup butter -- softened

     Put berries in shallow baking dish or deep 9-inch pie pan. Sprinkle with lemon rind. Blend remaining ingredients and sprinkle on berries. Bake in preheated moderate oven (375F) about 25 minutes. Serve warm.

    Serving Size : 6
