    CAULIFLOWER HAM AU GRATIN CASSEROLE


    4 cup. partially cooked cauliflower

    1 1/2 cup fully cooked ham, cubed
    1 (11 oz.) can condensed cheddar cheese soup

    1/4 cup milk
    2/3 cup Bisquick baking mix

     2 tbsp. butter
    2 tbsp. shredded cheddar cheese


    Arrange cauliflower in un-greased rectangular baking dish (11"x7" x 1 1/2"). Sprinkle with ham cubes. Beat soup and milk until smooth, pour over ham. Mix remaining ingredients until crumbly, sprinkle over soup mixture. Sprinkle with paprika. Bake until topping is golden brown, 20 to 25 minutes at 400 degrees.
    Serves 8.

    Coriander Mustard Seed Crusted Salmon

     

    panko bread crumbs
    crushed mustard seeds
    cracked coriander seed
    salt and pepper
    Dijon mustard
    white wine
    whole egg
    1 salmon steak per serving
    olive oil

    Mix bread crumbs, mustard seeds, coriander seeds, salt and pepper. In another bowl, blend mustard, white wine, and egg and chill. Coat a medium sauté pan with olive oil. Heat pan over medium gas heat. Coat salmon with egg wash, then bread coating. Saute salmon on one side until golden brown, turn and brown until golden. Continue cooking until desired doneness.

    Lemon Bar recipe

    Ingredients:

    CRUST:
    1 cup of flour.
    ¼ cup of powdered sugar.
    ½ cup of butter.

    FILLING:
    1 lemon, for juice and rind.
    1 medium egg, beaten.
    1 cup of sugar.
    ¼ cup of flour.
    ½ teaspoon of baking powder.

    Preparation Instructions:

    Preheat your oven to 350°F (175°C).

    Mix together the crust ingredients and form into a pie crust shape in a suitably sized starsol pan.

    Bake for 15 minutes.

    For the filling, beat the egg, and juice and rind the lemon.

    Mix the filling ingredients thoroughly, and pout into the baked pie crust.

    Bake for another 20 minutes.

    Oatmeal Pancake Mix

     

    Mix:

     

    4 cups quick cooking oats

    2 cups all-purpose flour

    2 cups whole wheat flour

    1 cup brown sugar

    1 cup non-fat dry milk

    2 tablespoons cinnamon

    5 teaspoons salt

    3 tablespoons baking powder

    1/2 teaspoon cream of tartar

     

    Mix all ingredients together well. Store in a gallon size plastic storage bag or airtight container. Yields 10 cups of pancake mix.

     

    To make pancakes:

    2 eggs

    1/3 c. canola oil

    2 cups pancake mix

    1 cup water

     

    In a medium mixing bowl, beat 2 eggs. Beat in 1/3 cup of canola oil gradually. Alternately beat in 2 cups pancake mix and 1 cup of water. Blend well. Pour 1/3 c. batter on preheated (350 - 400) griddle. Cook until the tops show broken bubbles, about 2 to 3 minutes. Turn and cook about 2 to 3 minutes more, until golden brown. Makes about 12 5-inch pancakes.

    Easy shrimp dip

    2--8 oz. packages of cream cheese

    1 jar cocktail sauce

    1/2 pound of shrimp, peeled and deveined

    1 lime

    1--16 oz package of Ritz crackers

    Place creamcheese in center of serving platter. Mix together cocktail sauce and shrimp. Pour over the cream cheese.  Slice lime in half, and squeeze one half over cockail sauce. cut other half into thin slices for garnish. Place crackers and lime slices around the edge of the plate to serve.

    Savory Cashew Chicken

    1 -12oz. jar apricot preserves

    1/4 - cup Dijon mustard

    1 - teaspoon curry powder

    1 - cup chopped Cashews

    4 - boneless, skinless chicken breast halves

     

    Preheat oven to 375 degrees. Combine preserves, mustard, & curry powder in a large skillet. Cook over low heat, stirring constantly, until preserves are completely melted. Put cashews in a small bowl. Coat chicken in sauce, then roll in nuts. Bake in a greased 9 x 13-inch baking dish @ 375* for 25 - 30 minutes. Just before serving time, bring remain sauce to a boil, then lower heat & cook for 2 minutes. Serve over baked chicken.

    SPICED HONEY PRETZELS

    4 cups thin pretzel sticks
    3 Tbsp. honey
    2 tsp. butter, melted
    1 tsp. onion powder
    1 tsp. chili powder

    Line a 15x10-inch baking pan with foil; coat the foil with nonstick cooking spray.

    Place pretzels in a large bowl.

    In a small bowl, combine the honey, butter, onion, powder, and chili powder. Pour over pretzels; toss to coat evenly. Spread into prepared pan.

    Bake at 350 for 8 minutes, stirring once.

    Cool on a wire rack, stirring gently several times to separate.

    Honey Mustard Chicken Tenders
    • ¾ cup honey mustard
    • 1 tsp. Fresh chili powder
    • 1/2 tsp. Garlic powder
    • 1 tsp. black pepper
    • 1 1/2 lbs. Chicken tenders
    • 2 cups Pretzels sticks, crushed
    • 1/2 cup Butter, melted
    • Directions
      1. Combine honey mustard, garlic powder and black pepper in shallow bowl. Whisk to combine.
      2. Place crushed pretzels in another shallow bowl. Dip chicken tenders in mustard mixture. Roll in crushed pretzels. Place on greased rimmed baking sheet. Drizzle melted butter over. Bake in preheated 400 degree oven for 12-15 minutes or until chicken is no longer pink in the center.
      3. Place on serving dish. Serve with additional honey mustard if desired.

    Watermelon Cucumber Salad

    6 cups of seeded cubed watermelon

    4 cups of cubed cucumber, seeded

    1 teaspoon salt

    1 tablespoon sugar

    1/2 cup balsamic vinegar

    Place the watermelon and cumcumber in large bow and toss with the salt and sugar. Drizzle with the vinegar and toss to coat. Chill thoroughly. Toss again before serving.

    Sweet Potato Praline Casserole

     

    4 large sweet potatoes,baked

    1 stick of butter

    1/3 cup packed brown sugar

    2 eggs, beaten

    1/2 cup chopped pecans

     

    Peel sweet potatoes while still very warm, almost hot. Mash with butter in large mixing bowl. Add brown sugar & eggs, & mix well. Pour into a greased 2 quart baking dish, & top with pecans. Bake @ 350* for about 30 minutes.

    SPICY GRILLED SHRIMP

    1 1/2 to 2 lb (20 to 30 per pound) peeled, rinsed, drained shrimp
    2 large garlic cloves, minced
    4 tbsp olive oil
    1 tbsp kosher/sea salt
    4 tsp freshly squeezed lemon
    2 tsp paprika
    1 tsp cayenne pepper

    Mix all ingredients together in a ziplock bag. Place in refrigerator to marinate.

    Grill shrimp 2-3 minutes per side, turning once.

    Young Green Onions Fried

     Cut into 1" lengths, young green onions.

    Dip into 1 egg that is diluted with 2 T. of water.

    Roll in seasoned bread crumbs,

    Fry, about a cup at a time.

    Sprinkle with salt.

     

    Simple, but so good.

    Marzipan Bars

     


     

    ½ cup plus 2 tablespoons butter, divided

     

    ½ cup brown sugar

     

    2 teaspoons vanilla, divided

     

    ¼ teaspoon salt

     

    1½ cups flour

     

    ¾ cup raspberry jelly

     

    8-ounce can almond paste

     

    ½ cup sugar

     

    3 eggs

     

    1 teaspoon vanilla

     

    1½ cups powdered sugar

     

    2 tablespoons milk

     

    1 ounce unsweetened chocolate, melted

     

    ¼ cup toasted slivered almonds


     

     

          Cream ½ cup butter and brown sugar.  Add 1 teaspoon vanilla and salt; gradually add flour.  Pat evenly in 9x13 pan; spread with jelly.  Beat almond paste and sugar together until smooth.  Add eggs, one at a time; then add 1 teaspoon vanilla.  Spread over first layer.  Bake at 350º for 20 minutes.  Cool.  Cream 2 tablespoons butter; add powdered sugar, milk, vanilla to taste and cooled chocolate.  Spread over top; sprinkle with almonds.  Store lightly covered.  Freezes well.
