    CHICKEN CASSEROLE

    4 to 6 chicken breast, cooked and cut up
    1 can cream chicken soup
    4 boiled eggs, chopped
    1 onion, chopped
    1/4 c. mayonnaise
    1/4 to 1/2 c. celery, chopped
    Crushed cheetos for topping

    Mix above ingredients together and put in long casserole dish. Crush enough cheetos to cover top. Bake in 350 degree oven for 30 minutes.

    Deep Fried Cheese Curds

    5 oz. beer
    5 oz. any pancake mix
    1 egg
    2 1/2 lbs. fresh cheddar cheese curds

    Cheese curds should be at room temperature and fresh.
    Dip in batter and drop one at a time in heated oil, 425 to 450.
    Drain on paper towels.

    *Add your favorite spices/herbs to the batter for your individual taste!

    Beef Brisket on Buns

    1-5 pound fresh beef brisket (not corned beef)

    1/2 tsp. ground ginger

    1/2 tsp. ground mustard

    1 cup ketchup

    1/2 cup Worcestershire sauce

    2 tbs. brown sugar

    1 tsp. chili powder

    2 tsp. liquid smoke (optional)

    2 cups water

    Combine the ginger and mustard, rub over the brisket. Place on a rack in a shallow roasting pan. Bake at 325 degrees for 2 hours. Let stand 30 minutes. Thinly slice the meat across the grain. Place in a foil-lined 13x9x2 baking dish. In a bowl, combine the water, ketchup, Worcestershire sauce, brown sugar, chili powder and liquid smoke. Pour over the meat. Cover tightly with foil. Bake 3 hours at 325 degrees until tender. Serve on buns.

    This makes a lot. For potlucks or parties it can be made a day in advance and then reheated.

     Oh I love to make cornish hens! I don't have an exact recipe, but I will tell you how I make them.

     

    Get 2 cornish hens (or how many you need) and stuff the cavity with lemon wedges (or lime).  Gently run your fingers under the skin of the hens so that you make enough room to slip some butter under there.  I usually put about 1 1/2 T butter under the skin of each cornish hen.  Next you want to sprinkle the hens on both sides very well with lemon pepper seasoning.  Then I sprinkle on a little freshly ground black pepper.  Grill until temperature reads 180 and then carefully remove the lemon wedges from inside with a fork.  Serve!  Delicious!

     

    You can also cook them in the oven at 350-it takes around 50 minutes.

    Spicy Sugared Pecans

    3/4 cup sugar
    1/4 cup water
    1/2 tsp. ground cinnamon
    1/4 tsp. ground allspice
    1/8 tsp. salt
    1 1/2 cups pecan halves

    In med. fry pan combine sugar, water, and spices,
    bring to a full rolling boil. Boil gently for 4 min,
    stirring frequently. Remove from heat. Add pecans, stir
    just till nuts are well coated. Turn mixture out onto
    waxed paper, using forks quickly separate the nuts
    into single or bite size clusters. cool before serving.


    Makes about 3/4 pound.

     

    Spiced Pecans

    2 tbsp. margarine, melted

    1/2 tsp. ground cumin
    1/4 tsp. ground red pepper
    1/4 tsp. garlic powder
    1 ½ cups pecan halves


    Heat oven to 375 degrees. Stir margarine and
    spices until well blended. Pour over nuts; mix well.
    Spoon into 13 x 9 inch pan. Bake 7-10 minutes
    stirring halfway through cooking time.

    Makes 2 ½ cups.

    Fruit & Nut Honey bars

    2 tbs. butter

    1/2 cup honey

    2 eggs

    3/4 cup all purpose flour

    1/2 tsp. baking powder

    pinch of salt

    1/2 cup chopped walnut

    1/2 cup pitted, chopped dates

    1/3 cup confectioner's sugar

    Preheat oven to 350. Butter an 8-inch square cake pan. Melt butter over low heat and poiur into a large mixing bowl. Add the honey and eggs and beat well. Mix in the flour, baking poweder and salt. Add the walnuts and dates. Spread batter in pan. Bake for 25 minutes or until light brown. Let cool for 10 minutes. Cut into bars and roll in confectioner's sugar.  These are tasty treats, especially for the Christmas season. You can use any type of dried fruit in these bars in place of the dates.  You can also use chopped pecans instead of walnuts. I often make these for Christmas gifts using red and green candied cherries and chopped pecans.

    SAVORY GREEN ONION AND CAYENNE SCONES

    2 cups flour
    1 tablespoon sugar
    1/2 teaspoon baking powder
    1 1/2 teaspoons salt
    3/4 teaspoon cayenne pepper, divided use
    3/4 cup heavy (whipping) cream
    1/4 cup sour cream
    4 tablespoons thinly sliced green onion, divided
    1 tablespoon butter, melted

    Preheat oven to 425 degrees F.

    In a large bowl (or use a mixer), whisk the flour, sugar, baking powder, salt and 1/2 teaspoon of the cayenne pepper. Blend in the heavy cream and sour cream until a dough forms and it is evenly moistened. Stir in 2 tablespoons of the green onion.

    Gather the dough together in a ball and knead gently 4-5 times. On a lightly floured work surface, roll the dough into a round 3/4-inch thick. Using a 2 1/2-inch cookie cutter, cut into 8 rounds.

    Transfer the scones to a baking sheet and brush with the melted butter. Sprinkle the scones with the remaining 1/4 teaspoon of cayenne pepper and 2 tablespoons of green onions.

    Bake for 20 minutes or until lightly browned. Remove from the oven and serve.

    Makes 8 scones.

    Fresh out of college, I got this recipe at my first teaching job down in Fort Myers, Florida back in 1978.

    Brandied Orange Sweet Potatoes

     

    6 medium sweet potatoes

    1/3 cup butter

    1 cup packed brown sugar

    1/2 cup orange juice concentrate

    1/2 t. salt

    1/2 cup slivered almonds, toasted

    1/3 cup brandy

     

    Scrub potatoes.  Place in large saucepan; cover with boiling water; bring back to a boil.  Reduce heat and simmer until potatoes are tender.  Drain and let cool.  Peel and half lengthwise.

     

    Melt butter in a large skillet.  Add brown sugar, orange juice, and salt; bring to a boil until sugar is dissolved.  Boil syrup gently for 5 mins.  Add potatoes, turning carefully to coat with syrup; heat 5 mins.  Put in casserole and sprinkle with almonds.  Heat brandy gently in a small pan.  Light with match; pour flaming over potatoes. 

    Serves 6.

    SPINACH SALAD WITH MANGO VINAIGRETTE

    Mango Vinaigrette (recipe follows)
    1 (10-ounce) bag baby spinach
    1 1/2 ripe mangos, peeled, pitted and cubed* (reserve remaining 1/2 for dressing)
    1 medium tomato, cored, seeded and finely chopped
    1/3 cup toasted, chopped walnuts
    1/3 cup sliced green onions
    1/3 cup crumbled blue cheese
    Freshly ground pepper to taste

    Prepare the Mango Vinaigrette.

    Place spinach, mango, tomato, walnuts and green onion in large bowl.

    Drizzle with mango vinaigrette and toss well to coat. Add blue cheese and toss again very lightly. Serve immediately with freshly ground black pepper.

    *To cube mango, place mango on one of its narrower sides, facing up.Starting 1/4 inch from the stem, slide knife along each side of the pit to cut off the "cheeks." Peel skin from cheeks and slice or dice as needed. Another option is to buy a jar of peeled mango slices.

    MANGO VINAIGRETTE

    1/2 mango, peeled and pitted
    3 tablespoons extra virgin olive oil
    3 tablespoons white balsamic vinegar
    1/4 teaspoon salt

    Add all ingredients in blender or small food processor; blend until smooth. May be made several days ahead and refrigerated until ready to serve.

    I like Lemon Pepper on fish, chicken, veggies and...I just like it!!!

     

    Angel Hair Lemon Pepper Shrimp

    8-10 large shrimp
    1 lb angel hair fresh pasta
    1/2 cup red and green bell pepper (julienne)
    1 cup sliced mushrooms
    2 oz olive oil
    2 tsp butter
    1 tsp chopped fresh garlic
    1/2 tsp lemon-pepper seasoning
    2 tsp white wine
    1 fresh lemon
    salt and pepper to taste

    1. Cook pasta according to package directions and set aside.

    2. Use large frying pan to heat olive oil. Add garlic, mushrooms, and bell peppers and cook until tender.

    3. Then stir in white wine, butter and lemon-pepper seasoning and fresh lemon juice.

    4. Add shrimp and cook until sauce is thickened.

    5. Add in angel hair pasta, salt, and pepper to taste. Toss and serve with lemon wedge.
