    GRILLED CHICKEN W/BACON MUSHROOM SALAD
     
     
    This is a simple and fresh recipe using boneless, skinless chicken breasts with a savory, crisp salad.

      

    Prep Time: 10 minutes

    Cook Time: 15 minutes

     

    Ingredients:

    • 4 boneless, skinless chicken breasts
    • 1 cup Parmesan salad dressing
    • 4 slices bacon
    • 1 cup chopped mushrooms
    • 2 cups salad greens

     

    Preparation:

     

    Prepare and preheat grill. Brush chicken with half of the salad dressing and let marinate for 10 minutes.

    Cook bacon until crisp; remove from pan, drain, and crumble. Combine with mushrooms and greens in medium bowl; drizzle with remaining half of salad dressing; set aside.

     

    Grill chicken until thoroughly cooked, about 10-12 minutes, turning once during cooking time. Set on serving plate and top with salad; serve immediately. Serves 4

    Scalloped Pineapple

     

    3 T. flour

    1 1/3 c. sugar

    1/4 lb. longhorn cheese, shredded

    1 16oz. can crushed pineapple

     

    Combine all ingredients.  Bake at 350 degrees for 45 to 50 minutes.

    Serves 6 to 8.

    Two-Cheese Torte

    2 tablespoons olive oil

     

    1 medium onion, chopped

     

    ¼ pound mushrooms, sliced

     

    ½ cup dry white wine

     

    1 teaspoon dry basil

     

    ⅛ teaspoon pepper

     

    ½ cup blanched almonds

     

    3 eggs

     

    ⅓ cup Bisquick

     

    ¼ cup milk

     

    1 cup shredded Gruyere cheese

     

    ¼ cup grated Parmesan cheese

     


     

           Stir onion in oil until limp, then add mushrooms and stir for 3 minutes.  Stir in wine, basil and pepper; stir frequently until nearly all the liquid is evaporated and mushrooms are lightly browned.  Remove from heat and set aside.  In blender whirl almonds until finely chopped.  Add eggs, Bisquick, and milk; whirl until well blended, about 15 seconds.  Pour into greased 9-inch pie pan.  Spoon mushroom mixture evenly over, then sprinkle with cheeses.  Bake at 350º until top is golden brown and filling jiggles only slightly in center when pan is gently shaken, about 25 minutes.  Let cool 10 minutes, then cut into wedges.  Serves 4-6.

                A very tasty side dish or breakfast accompaniment  The almonds give the crust their flavor and the texture of a cornbread.  Other types of melting cheeses could be used.  I thought the proportion of mushrooms was right.  I didn’t have to bake mine as long. I would add a sprinkle of salt to the batter next time.  cj

    Since I have never heard of Lyle's Golden Syrup, I looked it up.  From what I can see, it is a brand name of pancake syrup in the UK.  If I am wrong, please forgive me.

    That being the case, I'll go ahead and give you a recipe we like for sweet potatoes that contain maple syrup.  You can use Lyle's Golden Syrup or any brand that you may have.

     

    Maple Glazed Sweet Potatoes

    1 1/2 pounds sweet potatoes or yams, cooked, peeled, and quartered

    1/2 cup maple syrup (any brand)

    1/2 cup orange juice

    3 T. oleo or butter

    1 T. cornstarch

    1 t. grated orange peel

    Preheat oven to 350.  Arrange sweet potatoes in 1 1/2 quart shallow baking dish.  Combine remaining ingredients-pour over potatoes.  Bake 40 mins. or until hot and sauce has thickened, basting often.  Refrigerate leftovers.

    Makes 6 to 8 servings.

    Again, if I am incorrect on Lyle's being pancake syrup, I am sorry and didn't mean to step on anyone's toes.

    A neighbor of ours brought us this tasty delight when we first moved in.  My DS will eat half the loaf in one sitting if I'd let him.  Can't wait for the cooler months to come!!

     

    Hawaiian Macadamia Nut Bread

     

    3/4 cup chopped macadamia nuts
    4 eggs
    1/2 cup vegetable oil
    3/4 cup pineapple juice
    1/2 cup crushed canned pineapple
    1 tablespoon baking powder
    3 cups all-purpose flour
    1 cup white sugar




    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan and line with wax paper.



    2. In a large bowl, combine sugar, eggs, vegetable oil, pineapple juice and pineapple; mix well. In a separate bowl, sift together baking powder and flour. Stir flour mixture into pineapple mixture. Fold in macadamia nuts. Pour batter into prepared pan.



    3.Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted into center of loaf comes out clean.

    Sorry about that, don't know what happened.....

     

    Orange Cream Pie

     

    4 cups (1 quart) vanilla ice cream, softened

    1 (11oz.) can of mandarin oranges, drained

    1 grahm cracker pie crust

    beat softened ice cream with mandarin oranges at med. speed with an electric mixer until blended. Spoon into piecrust. Coverand freeze 8 hours or until firm.  Serve with Orange Glaze.

     

    Orange Glaze

    2/3 cup sugar

    1/4 cup water

    3 T. orange liqueur

    1 T. grated orange rind

    2 1/2 T. light corn syrup

    bring all ingredients to a boil in a small saucepan, stirring constantly; boil 2 mins. 

    Cover glaze and chill 2 hours.

    When the monthly recipe swap started I got this recipe, it was laminated (good thing as it is a favorite) but they didn't have their name on it and I can't remember who sent it. This has become a family favorite.

     

     

    Crockpot Chicken W/ Blackbeans and Cream Cheese


    4-5 boneless chicken breasts
    1 can black beans, drained
    1 can corn, drained
    1 jar SALSA, any kind
    1 pkg. cream cheese


    1. Take 4-5 frozen, yes, FROZEN, boneless chicken breasts and put into crockpot.

    2. Add beans, salsa, and corn

    3. Keep in crockpot on high for about 4-5 hours or until chicken is cooked.

    4. Add 1 pkg. cream cheese (just throw it on top) and let sit for about the last 1/2 hour of cooking time.

    5. All done and enjoy!

    4 servings

    An Excellent Rain-or-Shine Moose

     

    Peg Bracken

     


     

    6 ounces chocolate chips

     

    2 tablespoons sherry

     

    ¼ teaspoon salt

     4 eggs, separated


     

     

          Find the double boiler, have water simmering in its bottom, and in the top part melt chips.  Take off the pan, turn off the burner, beat in sherry, salt and egg yolks.  Now beat egg whites until they’re stiff and fold them in.  Then, if you will pour it into 8 little pudding dishes or demitasse cups and refrigerate them at least 4 hours, the world will be a better place.

                    Rich, chocolatey and incredibly easy.

    The first thing that came to my mind was the cherry dipped ice cream cones that Dairy Queen use to serve (or may still serve?).

     

    Hard Cherry Dipping Sauce - Dairy Queen Style



    6 ounces cherry chips
    1/4 cup butter or hard margarine (stick) 
    1/4 cup oil (I use canola)


    Directions:


    1. Melt all ingredients together until it is smooth and blended. This can be done over low heat in a saucepan, in the microwave or double boiler.


    2. Spoon over ice cream.


    3. Leftovers may be refrigerated and re-warmed as needed.
