    Orange Marmalade Chicken

    6 chicken breasts

    1 large orange, peeled and sectioned

    ½ cup pineapple chunks, drained

    ¼ cup orange marmalade

    ¼ cup honey

    1 tsp. ginger

    Place chicken breasts in 13x9x2 baking dish and cover with mixture of marmalade, honey and ginger. Bake 40 minutes uncovered at 350 degrees.  Add the orange and pineapple. Bake 20 minutes longer.

    Serve with rice and green salad.

    Orzo-stuffed Avocado

     

    Gourmet

     


     

    1 cup firmly packed parsley

     

    ¼ cup Parmesan cheese

     

    ¼ cup fresh basil

     

    ¼ cup walnuts

     

    2 garlic cloves

     

    ½ teaspoon salt

     

    Pepper

     

     1/3 cup olive oil

     

    ¾ cup orzo

     

    ½ cup chopped red pepper

     

    ½ cup sliced black olives

     

    2 tablespoons red-wine vinegar

     

    1 tablespoon minced scallions

     

    2 avocados


     

     

          Puree in blender first 7 ingredients.  With motor running, add olive oil in a stream.  Cook orzo in boiling salted water; drain.  Toss with parsley mixture, red pepper, olives, vinegar, scallions and salt and pepper to taste.  Halve avocados lengthwise and pit.  Rub cut surface with lemon.  Divide salad mixture among shells.  Chill, lightly covered, for 30 minutes.  Serves 4.

                I made the mistake of cooking the whole small package of dry orzo so we had orzo as the pasta with chicken and in minestrone and still there was some left.   We had this with crab sandwiches for a meal.  I have some untired recipes using orzo, but I can't find it at either of our chain stores lately. cj

    Coconut Ice Cream

    seeds scrapped from 1" piece of vanilla bean, split lengthwise
    14 oz can unsweetened coconut milk
    2 c milk
    2/3 c sugar
    1 t vanilla
    1/4 c rum (optional)
    1/2 c sweetened shredded coconut
    pinch salt

    Whisk together all ingredients.  Freeze according to manufacturer's instructions.

    This is my favorite dish to use up left over turkey and dressing (stuffing). 1 cup dressing patted into a greased 9 x13 inch pan. Mix together: 2 1/2 cups cooked , diced TURKEY 1/3 cup chopped onion 1/2 cup chopped celery 1/2 cup mayonaise (sometimes I use miracle whip) Put on dressing mixture. Then put another 1 cup dressing (stuffing ) on top. Beat together 2 eggs and 1/2 cup milk and pour on top. Cover and refridgerate for 4 hours or over night. Take out 1 hour before baking Spread 1 can cream of mushroom soup ( I have used other cream soups) Bake at 325º for 40 mins. Sprinkle grated cheese on top and bake another 10 mins.     Raisin Pie

     

    1 Cup Raisins

    2 Cups water

     2 Tablespoons tapioca

    1 /4 teaspoon salt

    1 Egg, slightly beaten

     1/2 Cup sugar

    3 Tablespoons lemon juice

    Grated rind of one lemon

    1 Tablespoon butter

    1 Baked pie shell

     

    Soak raisins in water overnight or for several hours. Add tapioca & salt. Cook in a double boiler for 25 minutes, or until the tapioca is clear, stirring frequently. Pour a small amount of tapioca mixture over egg stirring vigorously. Return to double boiler, add sugar & cook until thickened. Remove from heat, add lemon juice, rind & butter. Cool & pour into shell. Serve with whipped cream.

    This was in our local newspaper this week.  I haven't tried it. cj

     

    Buttermilk Pie

     

    4 eggs

    1/4 cup melted butter, partially cooled

    1 teaspoon vanilla extract

    2/3 cup sugar

    Pinch salt

    1 tablespoon flour

    2 cups buttermilk, more or less

     

    Break eggs into a blender.  Turn on and blend for a few seconds, drizzle in the butter while the b lender is runninga, add the vanilla, half the buttermilk, sugar, salt and flour.  Add enough of the remainder  of the buttermilk to end up with 3 cups in the blender.  That's all that fits in a 9" pie.

    Have oven preheated to 375.  Pour filling into pie shell, sprinkle with freshly grated nutmeg and put in oven.   Bake for 35-40 minutes at 375 degrees. Cool on a rack and put in the refrigerator to chill before serving.

    Baked Fish Fillets

    Kellogg's® Rice Krispies® turn baked fish into a crunchy, kid-pleasing entrée.


    Baked Fish Fillets
    Preparation Time: 10 minutes
    Total Time: 35 minutes
    Servings: 6

    Ingredients

    2pounds fish fillets fresh or frozen, thawed
    3cups Rice Krispies® (crushed to 1 1/2 cups)
    1/2teaspoon salt
    1/8teaspoon pepper
    1tablespoon dried parsley flakes
    1/2cup margarine or butter, melted
    Directions
    1. If frozen fish is used, thaw, rinse, and pat dry. Set aside.

    2. Place KELLOGG'S RICE KRISPIES cereal in shallow dish or pan.Stir in salt, pepper and parsley flakes. Set aside.

    3. Pour margarine into second shallow dish or pan. Dip fish fillets in margarine. Coat with cereal mixture. Place in single layer in shallow baking pan coated with cooking spray or foil lined.

    4. Bake at 375° F about 25 minutes or until fish flakes easily when tested with fork. Do not cover pan or turn fish while baking.
