    Lebanese Lentils n Red Peppers


    Ingredients
    1 cup dry lentils

    3/4 cup chopped red peppers

    1/3 cup chopped red onions

    2 Tbsp. chopped fresh mint

    6 Tbsp. olive oil

    6 Tbsp. balsamic vinegar

    2 cloves garlic, minced

    1 pkg. (4 oz.) Crumbled Feta Cheese


    PLACE lentils in medium saucepan. Add enough water to pan to cover lentils by 2 inches. Cook on medium heat 30 min. or until lentils are tender; drain. Add peppers, onions and mint; mix lightly. Cover. Refrigerate several hours or until chilled.

    COMBINE oil, vinegar and garlic. Pour over lentil mixture; mix lightly.

    ADD cheese; toss lightly.

    Next ingredient is: White corn syrup

    Very good, great to make in the summer as use microwave and bet you can't eat just one. Jill

    O Henry Bars –
    4 cups quick (3 ½ rolled) oats
    ½ cup brown sugar
    ½ cup White CORN SYRUP
    2/3 cup marg/butter
    1 tbsp vanilla
    1 cup crunchy p butter
    1 cup chocolate chips
    2 cups rice krispies

    In lg bowl, melt butter in microwave. Mix in oats, b sugar, corn syrup and vanilla. Microwave on hi for 3 minutes. Spread mixture in greased 9x13 pan and press down firmly. (I use wax paper on top as is very hot) Melt chocolate chips and p butter for 1 ½ min on hi. Mix well and stir in rice krispies. Spread evely over oat mixture. Cool (refrigerate) and cut.

    Pina Colada

    2 oz Coco Lopez (coconut milk)
    4 oz Pineapple juice
    3 oz Rum or vodka
    1 c Large ice cubes


    Crush ice cubes in a blender first; add other ingredients. Blend. Pour over ice and add a cherry. Serves 3. A very delicious drink.

    8 to 10 dried tomatoes
    1 rabbit, cut up
    4 Tbs. olive oil
    2 large onions, coarsely chopped
    1/2 lb. mushrooms, sliced
    fresh or dried rosemary to your taste
    fresh or dried basil to taste
    3 cloves garlic
    1c. dry white wine
    1/4 c. dijon or creole mustard
    salt and pepper to taste
    1 c. cream (optional)
    freshly cooked pasta to serve four

    One day or more ahead, boil tomatoes in water to cover for exactly one minute. Cool and refrigerate. Drain, reserving liquid. Remove the peels and any coarse stem ends. Drizzle a little olive oil over tomatoes, add minced garlic an several fresh leaves of basil, chopped, or a pinch of dried. This will keep, covered, in refrigerator for days.

    Rinse pieces of rabbit and dry. Heat oil in a heavy pot and brown rabbit pieces on all sides, seasoning them with a little salt and pepper (the mustard will add a lot of salt later). Remove rabbit pieces and brown the onions and mushrooms.

    Return rabbit to pot along with the tomatoes and their seasoning of garlic and basil with a sprig or a pinch of rosemary. Stir the mustard into the reserved tomato liquid and use to moisten the pot; add a little white wine. Cover tightly and simmer for about an hour; add more wine if pot seems dry, but the sauce should be short.

    Cream is optional, but makes a nice sauce. If it is used, stir it in just before serving and let it boil up. Taste and correct seasoning as needed. Mound the pasta in a shallow serving bowl, arrange pieces of rabbit over it and pour the sauce over all. Serves four.


    I'm sorry, can't imagine eating rabbit, but wanted the recipes to move on!

    Hi back, Janie! LOL I, too, have made the recipe numerous times! I love it! I tried it one time using taco seasoning and it was ok. But not great. So I stick to the orginal. I truly can make those poppers my entire meal! :O)

    Some people call these Hash Browns instead of Home Fried. Hope you'll think it qualifies. But just in case not, see my ingredient at the bottom! :O)

    Home Fries with Red, White & Green Onions
    (pg. 93, Wms.-Sonoma Potato; copyright 2002)
    Kosher salt & freshly ground pepper
    3 large Yukon gold potatoes, about 1 1/2 lb. total weight, scrubbed
    3 Tb. unsalted butter
    1 Tb. olive oil
    1 c (4 1/2 oz.) diced red onion
    1 c.(4 1/2 oz.) diced white onion
    4 green (spring) onions, including pale & dark green parts, chopped ( about 1 c.)
    In a large pot of salted boiling water, cook the unpeeled whole potatoes until tender when pierced with a small knife, about 35 minutes. Drain the potatoes, let them cool & refrigerate them until cold, at least 2 hours or up to 1 day. Peel the potatoes & cut into 1/2" cubes.
    In a large, heavy nonsitck frying pan, melt 2 Tb. of the butter with the oil over med.-high heat. Add the potatoes, red onion & white onion & toss to coat. Sauté, tossing every 3 or 4 minutes, until the potatoes are light brown & the onions are just beginning to brown, about 15 mintues total. Sprinkle with 1 tsp. kosher salt & 1/2 tsp. pepper. Toss to blend. Cook until the potatoes & onions are golden brown, about 5 minutes longer. Add the green onions & remaining 1 Tb. butter. Toss until the butter melts & the green onions just wilt, about 1 minute. Transfer the home fries to a bowl & serve.
    Yield: 4 servings

    About Kosher Salt, Wm.-Sonoma Glossary says: "These pure coarse rock salt granules are a bit larger than poppy seeds & contain no additives. Kosher salt has a clean taste & is not as strong as regular table salt. If using regualr table salt, use only half the amount called for in the recipe."

    We use it almost exclusively now!

    Breakfast Hashbrown Casserole
    -1/2 pound frozen country style hash browns
    -1 pound bacon or sausage
    -3 eggs
    -2 ounces velveeta cheese
    -2 ounces shredded cheddar cheese
    -1 can cream of potato soup
    -salt and pepper

    -Cook the hash browns with the onion till crisp.
    -Fry the meat.
    -Mix in a 13 X 9 pan.
    -Add the cheeses, soup, beaten eggs, salt and pepper.
    -Bake at 350ºF for 30 to 50 minutes.

    I read this in my budget saving cookbook. Grind up left over pizza in a food processor/blender and add it to ground beef to make meatloaf.

    I tried this yesterday and it was very good. Great way to use up the leftover pizza and very economical. Gave extra flavor to my meatloaf and I got extra meatloaf to freeze for later from one recipe.

    Macaroni with Tomatoes
    2 pounds elbow macaroni
    8 ounces Colby-Jack cheese, cubed
    8 ounces Cheddar cheese, cubed
    8 ounces white Cheddar cheese, cubed
    2 cans stewed tomatoes, undrained, crushed
    1 cup dry bread crumbs

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
    Bring a large pot of lightly salted water to a boil. Place macaroni in the pot, cook for 8 to 10 minutes, until al dente, and drain.
    In the baking dish, mix the cooked macaroni, Colby-Jack cheese, Cheddar cheese, white Cheddar cheese, and tomatoes with juice. Sprinkle bread crumbs evenly over top.
    Bake 30 minutes in the preheated oven, until bubbly and lightly brown.

    Wash Day Special

    1-lb. ground beef
    1-sm. onion chopped
    1/2-cup uncooked rice
    1-15oz.can kidney beans,drained
    2-cups CRUSHED TOMATOES w/juice
    1-tsp. chili powder
    Lawry's seasoned salt to tast
    2- tsp. Worcestershire sauce (or to taste)

    Brown ground beef and onion. Drain if needed.Add rice,beans,tomatoes,chili powder,seasoned salt & Worcestershire sauce. Bring to a boil and cover tightly. Simmer 45 minutes or until rice is cooked;stirring occasionally.
