    Help with a garnish, please!

    One of my classes that I teach runs a restaurant at the high school. The dessert for this coming Friday is chocolate mousse. I thought it would be cute to make a moose out of each dessert dish that it is served in. I have a little booklet that shows antlers made with the chenille pipe cleaners that are stuck into to mousse.. But, that is unsanitary. I thought maybe using the twist pretzels and cutting them to look like antlers. My students are thinking of what we could do to make it work. Any of you have ideas on how we can do this with something else? I need to have a solution by tomorrow (Tuesday). Thanks! :)

    How about piping chocolate antlers onto wax paper and freezing until set and carefully with food safe gloves (to avoid finger prints) place them into the mousse

    Chocolate iceing makes great glue how about using a cookie with a gum drop for the nose and stick the pretzel into a glop of iceing! Play around with that idea.

    I would get a pattern that you like and trace it onto parchment or waxed paper. Melt chocolate and add a little paraffin wax to it, like you would for dipped chocolates. Pour the melted chocolate into a parchment decorating bag and pipe onto the parchment paper over the design. Chill thoroughly and remove from paper and place on top of the mousse.

    I've seen a lot of designs, like butterflies, flowers, etc. made this way and it really dresses up the dessert.

    You could use the chocolate dipped pretzels too.
