    Easy Chicken Casserole

    Here is an old family favorite. It is so easy and so good!

    3 lb chicken pieces (uncooked)
    1 cup rice (uncooked)
    1 can cream of chicken soup
    1 cup water
    6 slices bacon (uncooked)
    3 T parsley flakes
    1 t garlic salt
    1 T oregano
    salt, pepper, paprika

    Preheat oven to 300. place bacon in bottom of pyrex. Pour rice over bacon. Salt, pepper and paprika chicken to taste. Mix cream of chicken soup with water and spices and pour over chicken. Put heavy duty foil wrap over the dish and bake for 2 hours. Do not peek!

    Sounds great!! I have some chicken pieces in the freezer. Think I may give your recipe a try. This is what I like..One meal in one pot!! thanks for sharing!! hugz..Colleen

    Yes Lilredhen I agree! Since I don't have a dishwasher (except for myself!!!) I like to get as few bowls dirty as possible. Clean up with this is a snap!! Also This is a good dish for a church supper.

    Thank you for posting this, LisaQ, it sounds wonderful. I am putting it on next weeks menu. Every week I make menus before I do my shopping so I know what I'm cooking every night and also, so I'll have all the ingredients in the house. Can't wait to try it.

    LisaQ: I have a question. I just noticed that this recipe calls for 1 Tablespoon of oregano. Is that correct? A whole tablespoon? My husband is a little "spice phobic" and does not like strong herbs in his food. Do you think it would still be good if I reduced it to 1/2?

    I have made the chicken dish without oregano or the parsley flakes and it is still really good. As long as you salt, pepper the chicken pieces it seems like that really is enough spices. I was just giving the recipe as it was given to me. But I like it without the spices too.
