Found this one in the search...

    RE: cookies without flour

    4 Ingredient PB Cookies
    1 Cup creamy peanut butter
    1 Cup white sugar
    1 large egg
    1 tsp baking soda

    Preheat oven to 350F.
Cream together the peanut butter and sugar. Beat in the egg and baking soda.

On a parchment lined baking sheet, drop small balls of dough and press with a fork (if the fork sticks, dip it in water).

Bake for 10 minutes and cool slightly before transfering to a wire rack. Keeps for up to 5 days in an air tight container.

I've only made these without the baking soda. Without they are awesome.

    How about this one:

    Super Easy Peanut Butter Cookies

    1 cup sugar
    1 egg
1 cup crunchy or creamy peanut butter
    1 teaspoon vanilla

Heat oven to 350°. In medium bowl, beat sugar and egg until well mixed. Add
peanut butter and vanilla; mix well.

Drop dough by teaspoons onto ungreased baking sheets. Press each with tines of
    fork.

    Bake 9-11  minutes or until cookies are light brown and set. Cool 3 minutes;
remove from baking sheets. Makes 2 dozen.
