** I used shredded cheese, no problem. Used my K/A mixer w/dough hook, but added 2 T water to the dough. Perfect! And used the cookie press. Baked the Cheese straws @ 350 for 13 min, took them right off the pan and onto wax paper! I think I may need Weight Watchers now! LOL! Those are so yummy and perfect with bean soup!

If you're a Southern girl, then Cheese Straws are an institution. They serve
them at all the wedding showers, all the "teas" or socials, and all the
receptions. We always have them at Christmas. Most people around here have a
similiar recipe, but I wanted to share these if you've never made them. They
are just delicious!
Cheese Straws
2 cups plain, all purpose flour
1/2 lb butter, soft enough to blend well with the cheese
16 oz shredded sharp cheddar cheese(shred your own, it makes a difference)
1 tsp dry mustard
1/2 tsp red pepper
1/2 tsp paprika
Cream butter and shredded cheese together. If you have a food processor, you
can use that. I usually do it by hand. If the butter is soft enough, it's
not difficult to get them mixed up good. . Add dry spices. Mix well. Add
flour. This is the hard part, it doesn't mix well and makes a very crumbly
dough. When your dough is ready, pick it up and "pack" it into little balls
or shape into straws. If you have a pastry tube you can pipe it out that
way. Since I don't, I generally shape them into little oval "biscuits"
I'm also going to edit this recipe to say to bake them on parchment paper.
I don't ever add any "added" grease to the cookie sheet, but I don't want
them to stick either.
Bake at 350 for about 18 minutes for little biscuits. Dorothy tried them as
straws and said that they didn't need to cook that long, so I'd go for 14 or
15 probably.
Do not brown them.
