    ISO Amish Friendship bread variations...

    I have the amish friendship bread starter, and have made the cinnamon bread recipe that goes with it, which is delicious, but does anyone have other recipes you can make with this starter? Thanks!

    I usually use lemon pudding and poppy seeds but have also used vanilla pudding with poppy seeds using almond extract - both are VERY good!  Kathy

    Chocolate pudding, chocolate chips.  Dust the baking pans with cocoa powder and sugar, mixed.

    On my sheet with the directions, it says only the amish know how to make the starters, I don't know if thats true or not!

    AMISH FRIENDSHIP BREAD STARTER

    Always use a wooden spoon for stirring the starter. Never use a metal spoon.

    1 (.25 ounce) package active dry yeast
    1/4 cup warm water (110 degrees F)
    3 cups all-purpose flour, divided
    3 cups granulated sugar, divided
    3 cups warm milk (110 degrees F), divided

    Day 1
    In a small bowl, dissolve yeast in water. Let stand 10 minutes.

    In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand at room temperature until bubbly.

    Days 2 through 4
    Stir starter with a wooden spoon.

    Day 5
    Stir in 1 cup flour, 1 cup sugar and 1 cup milk.

    Days 6 through 9
    Stir starter with a spoon.

    Day 10
    Stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 or 2 cups to make your first bread, give three cups to friends along with the recipe. Store the remaining starter in a container in the refrigerator and begin the 10 day process over again.

    You can also freeze this starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using.

    Amish Banana Bread

    1/3 c. oil

    1/3 c. sugar

    2 eggs

    1 c. flour

    3/4 tsp. baking powder

    1/4 tsp. salt

    1 tsp. vanilla

    1/4 tsp. baking soda

    1/2 c. Amish starter

    2 bananas

    1/2 c. chopped nuts

    Beat all ingredients until smooth. Pour into greased & sugared loaf pan. Bake about 45 min. at 350.

    Amish Lemon Poppy Seed Bread

    1/4 c. oil  

    1 tsp. vanilla 

    1/4 c. applesauce  

    1/4 c. milk 

    1/2 c. Amish starter   

    1 egg 

    1 pkg. instant lemon pudding 

    1 T. poppy seeds   

    1/4 tsp. cinnamon

     1/4 tsp. salt   

    1/4 tsp. baking soda 

    3/4 tsp. baking powder 

    1/2 c. sugar    

    1 c. flour  

    Beat all ingredients until smooth.  Pour into greased loaf pan lined with wax paper.  Bake about 45 min. at 350.

    I've made the first 2 recipes that I posted and they are both very good.  However,I have not tried the following recipes, but have a collection of recipes made with this starter.  Is there anything in particular you would like?

    AMISH FRIENDSHIP BREAD

    1 c. starter

    2/3 c. oil

    1 1/2 tsp. baking powder

    1/4 tsp. baking soda

    3 eggs

    1 c. sugar

    2 c. flour

    1/2 tsp. cinnamon

    Dash of nutmeg

    Raisins, nuts, dried fruit & grated carrots (opt.)

    Combine ingredients. Pour batter into 2 greased loaf pans, 8 x 3 x 2 inches

    each. Bake at 350 degrees for 1 hour or until dry.

    AMISH COFFEE CAKE

    2 c. light brown sugar

    2 c. flour

    3/4 c. shortening

    1 egg

    2 tsp. vanilla

    1 c. hot coffee

    1 tsp. soda

    Mix sugar, flour and shortening until lumpy. Do not mix until creamy. Take

    out 1 cup for topping. Dissolve soda in hot coffee and add to the flour

    mixture. Also add egg and vanilla. Spread on sheet pan 9x12x2 inch and

    sprinkle on topping.

    This is a thin batter. Bake at 325-350 degrees approximately 30 minutes.

    Sprinkle with powdered sugar after baked.

    AMISH PUMPKIN BREAD

    3 c. granulated sugar

    1 c. vegetable oil

    4 eggs, beaten

    1 lb. canned pumpkin

    3 1/2 c. flour

    2/3 c. water

    2 tsp. baking soda

    2 tsp. salt (scant)

    1/2 tsp. ground cloves

    1 tsp. EACH: cinnamon, allspice and nutmeg

    Mix sugar, oil and eggs together. Add pumpkin. Then add dry ingredient

    and finally water, stirring just until mixed. Pour batter into two (2) greased

    and floured 9x5 inch loaf pans. Bake at 350 degrees for one (1) hour.

    Especially good spread with cream cheese.

    Oops!  Just noticed that the last 2 don't use the starter!  Sorry about that. I only have one more using the starter, so here it is:

    Amish Friendship Waffles & Pancakes

    Pancakes

    Combine in large bowl:
    1 cup flour
    1/2 tsp salt
    1 tsp baking powder
    1 tsp baking soda

    Combine in smaller bowl:
    2 TBS oil
    2 cups Amish batter *
    1/2 cup milk (plus/minus 1/4 cup)
    1 egg

    Add ingredients of smaller bowl to ingredients of large bowl and mix on medium speed.
    Spoon batter onto greased griddle.

    Waffles

    Prepare batter for pancakes except increase oil to 1/4 cup.

    My recipe for the cinnamon bread is:

    1 C. oil (or 1/2 c. oil and 1/2 c. applesauce

    1/2 C. milk

    1 C. sugar

    1 T. cinnamon

    1/2 t. vanilla

    1-1/2 t. baking powder

    1/2 t. baking soda

    1/2 t.salt

    2 C. flour

    1 large box instant pudding

    1 C. starter

    Mix alltogether in a non metal bowl. Grease 2 large loaf pans, dust with sugar & cinnamon. Pour the batter evenly into pans and sprinkle with more cinnamon & sugar mixture. ( Variation: I wanted more of a coffee cake type so for the topping I mixed  about 1/2 C. flour, 1/3 C. brown sugar, 2 t. cinnamon, and 1/8 C. oil to make a crumb topping and devided it among the 2 loaves, it was delicious!) Bake at 325 for 1 hour. Cool until bread loosens from pan (about 10 min.) Turn unto serving plate.

    The lemon poppyseed bread uses the small size pudding.  It is very good.  Hope you enjoy it.
