    Rec: Appetizer - Bacon Wrapped Almond Stuffed Dates

    Yesterday at a conference they served the most wonderful appetizer! My friends and I analyzed it and after several samples we think it included dates and almonds, with a piece of bacon wrapped around it. I found this recipe, which seems exactly like what we had. Any other recipes along this line? It looks so easy to prepare too.

    Bacon Wrapped Almond Stuffed Dates

     Ingredients:
    1 (4 oz) pkg. blanched whole almonds
    1 package pitted dates
    1 1/2 pound thin-sliced bacon -- cut in thirds

    Directions:

    Put an almond in each date. Wrap a piece of bacon around each stuffed date and secure with a toothpick. Line cookie sheet with aluminum foil. Place dates on foil and bake in preheated 400 degree oven for 12-15 minutes or until bacon is crisp. Remove to rack or paper towel; drain. Serve warm.

    I love stuffed dates.  Of course, anything wrapped in bacon is good! LOL  I use pecan halves instead of almonds.  Sometimes I dust them with Cajun seasoning for a nice little kick.
     
    Sometimes I mix just a little powdered sugar with cream cheese, stuff the dates with it, then add a pecan half.  No bacon, no baking.  Great appetizer, too.
