    ISO: recipe using creamed corn, broccoli and cheese

    I used to make a delicious casserole using these ingred. but cannot find my recipe, anyone know of a veggie casserole using these ingredients??? TIA

     This doesn't have the cheese, but thought I'd share it with you.

     

    CORN & BROCCOLI BAKE:

     

    Serves:  6-8

    Effort:  easy

    Comments:  nice change of pace from the usual broccoli, rice and cheese casserole

     

    INGREDIENTS: 

    1 pkg. (8 oz.) chicken in a bisket crackers, crushed

    1 pkg. (10 oz.) chopped broccoli, thawed

    1 can (15 ¼ oz.) whole kernel corn, drained

    1 can (14 ¾ oz.) cream-style corn

    Butter flavored cooking spray

     

    INSTRUCTIONS: 

    Combine crumbs (reserving ½ c. for topping) broccoli, both cans of corn.  Mix well.  Salt & pepper to taste.   Spray lightly with butter flavored cooking spray.  Stir well.

     

    Transfer to a 2 qt. Baking dish that has been sprayed with a non-stick cooking spray.  Sprinkle with remained crumbs.  Spray lightly with butter flavored cooking spray.

    Bake uncovered at 375 for 25-30 minutes or until lightly browned

    Corn Pudding with Broccoli Recipe

    Ingredients

    • 1 15 oz. can creamed corn
    • 1 cup frozen sweet corn
    • 1/2 cup liquid egg substitute (such as Egg Beaters)
    • 1 tsp. granulated white sugar
    • 2 Tbsp. unbleached all-purpose flour
    • 1 cup frozen chopped broccoli florets
    • 3/4 cup shredded low-fat Monterey Jack cheese (divided)

    Directions

    1. Preheat the oven to 350 degrees F. Spray a 9 x 9 baking dish with nonstick cooking spray.
    2. In a large mixing bowl, combine the creamed corn, frozen corn, liquid egg substitute, flour, sugar and broccoli florets. Mix well. Stir in 1/2 cup of the shredded Monterey Jack cheese.
    3. Pour into prepared baking dish. Top with remaining Monterey Jack cheese. Bake 50 to 60 minutes or until golden brown on top.
    4. Let cool 10 minutes before serving.

    Makes 6 servings

     

    Scalloped Corn and Broccoli

    Yields: 5 servings

    "It's a wonderful combination of creamed corn, broccoli and cheese all baked together for a delicious side dish."
    INGREDIENTS:

    1 (15 ounce) can creamed corn
    2 eggs, beaten
    2 tablespoons white sugar
    2 tablespoons all-purpose flour
    1 teaspoon salt
    1/2 cup shredded mild Cheddar cheese
    1/2 (10 ounce) package frozen chopped
    broccoli

    DIRECTIONS:

    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Mix together the corn, eggs, sugar, flour and salt. Add the cheese and broccoli, mix well and pour into a 2 quart casserole dish.
    3. Bake for 1 hour.
